SLOW-COOKER GRANOLA

Slow-Cooker Granola image

I found this recipe in Parents Magazine [November 2006]. I like that its "healthier," in that they use AJ concentrate and not oil. When I made it, I substituted Splenda Brown Sugar, for fewer calories.

Provided by New Mommy and Lovin

Categories     Breakfast

Time 5h5m

Yield 10 serving(s)

Number Of Ingredients 10

2 1/2 cups old fashioned oats
1 cup slivered almonds
3/4 cup coconut flakes
1/3 cup wheat germ
1/2 cup honey
1/4 cup frozen apple juice concentrate (thawed)
1 tablespoon Splenda brown sugar blend or 2 tablespoons regular brown sugar
1 teaspoon vanilla
1/2 teaspoon cinnamon
6 ounces dried cranberries

Steps:

  • In your slow-cooker [crockpot], stir together the oats, almonds, coconut, and wheat germ.
  • In a seperate microwaveable bowl, mix honey, apple juice concentrate, br. sugar, vanilla, and cinnamon. Microwave for one minute.
  • Pour the liquid into the slow cooker and stir until evenly coated.
  • Cook for one hour on high, UNCOVERED.
  • Then cook four hours on low, COVERED.
  • Periodically, stir the granola. It will be a nice toasted-brown color.
  • When done, stir in the cranberries. PLEASE, DO NOT ADD THE CRANBERRIES EARLIER! if they cook in the crockpot with everything else, it will burn and became a huge mess. [I'm speaking from experience here.]
  • Store in an airtight container.
  • It should yield approximately ten 1/2C servings.

  • Lightly grease the crock-pot with a teaspoon or so of oil. Add the oats, almonds and salt. In a large measuring cup or small glass bowl, combine the honey, oil, peanut butter, cinnamon and vanilla. Microwave for a minute, stir and microwave an additional 30 seconds as needed, to melt everything and allow it to combine smoothly. (In lieu of a microwave, this can easily be done in a small saucepan over medium heat, stirring frequently.)
  • Pour the liquids over the oats in the crockpot and stir well to thoroughly coat. Place the lid on the crockpot, leaving it slightly vented. Cook on HIGH for about 2 hours, stirring every 30 minutes. Stir in the dried fruit right at the end. Spread the granola across a large baking sheet and let it cool before transferring to an airtight container. Enjoy!

  • Set a crock-pot to HIGH and lightly grease it with about a teaspoon of coconut oil. Combine the oats, almonds, and pecans in the crock-pot. Stir together the warm coconut oil, honey, salt and ginger. Pour over the oats and nuts in the crockpot and stir to coat thoroughly. Cover with the lid, leave it slightly vented. (I place a chopstick across the top of the crock-pot and set the lid over that.)
  • Cook on high for 60-90 minutes, stirring and scraping the sides and bottom of the crock-pot every 20-25 minutes. Stir in the coconut and dried fruit and then spread the granola across a large baking sheet. (I like to line the sheet with a silpat mat or parchment, just to make it easier to pick up and pour into a container when it cools.) When the granola has cooled, transfer it to an airtight container. It should keep nicely for at least 2 weeks. Enjoy!

  • Spray the bottom and sides of a 5-quart or larger slow cooker with cooking spray. Place the old fashioned oats, nuts and/or seeds, flaxseed, cinnamon, and salt in the slow cooker and stir to combine.
  • In a small bowl or large measuring cup, whisk the egg whites until frothy. Add the maple syrup (or honey), coconut oil, and vanilla extract. Stir to combine, then pour over the dry ingredients in the slow cooker and stir with a wooden spoon until the ingredients are evenly moistened.
  • Cover the slow cooker, leaving the lid slightly askew so that steam can escape. Cook on high (leaving the lid askew) for 2 to 2 1/2 hours, until the nuts are toasted and the granola feels dry to the touch, stirring the granola every 30 minutes. Ensure that you leave the lid askew after each stirring.
  • Turn off the slow cooker, then stir in the dried fruit. For maximum crispiness, spread the granola out onto a baking sheet to cool completely. The granola will continue to crisp as it cools. You can also let it cool in the slow cooker, but it will not be as crisp. Enjoy!

  • Spray inside of a large (6-quart) slow cooker with cooking spray. Add oats and almonds to the slow cooker; toss to combine.
  • In a small bowl, combine oil, almond butter, honey, vanilla extract, caramel extract, and salt. Warm in the microwave for about 20-30 seconds, or just until soft. Whisk together until smooth.
  • Cover, and cook in a vented slow cooker (I just left my lid about half-way ajar to let the steam escape) on LOW for approximately 2 hours, stirring every 30 minutes. Different slow cookers cook at different temperatures, so just watch your granola to determine when it’s ready. At the two-hour mark, check to see if it’s toasted and golden brown. If so, you can take it out of the slow cooker. If not, continue to stir and cook in 30-minute increments until it’s done.

  • Add oats, pecans, sunflower seeds, chia seeds, cinnamon, nutmeg, ginger, and salt to the slow cooker and stir to combine.
  • In a medium-sized bowl whisk together maple syrup, melted coconut oil, and vanilla. Add to the slow cooker and stir until evenly combined.
  • Place the lid on the slow cooker with it slightly ajar to allow steam to escape, about a ¼-inch opening, the entire duration of cooking. If you do not do this, the steam will not escape and make the granola soggy.

  • Generously grease a 5- to 8-quart slow cooker with the oil. Add the oats, pistachios, and coconut flakes and toss to evenly combine.
  • In a small saucepan over medium heat, melt the ½ cup oil. Stir in the maple syrup, cardamom, cinnamon, nutmeg, and salt. Add the spiced coconut oil to the slow cooker and toss to evenly coat the oat mixture. Set the slow cooker lid ajar, leaving a gap of about 2 inches. (The vent prevents the granola from getting soggy.) Cook the granola on HIGH until well toasted, about 2 hours, stirring every 30 minutes so that it doesn’t burn around the edges.
  • Pour the granola out onto a baking sheet. Toss in the apricots and spread out the mixture evenly. Cool the granola completely to room temperature, then store it in an airtight container at room temperature for up to 2 weeks.

  • Use the butter or extra virgin olive oil to generously grease the entire inside of a crock for a slow-cooker. Add the old-fashioned rolled oats to the crock. Combine the coconut oil, maple syrup, ground cinnamon, vanilla extract and (if using) the ground vanilla or vanilla paste. Microwave for 60 seconds, or until the oil has melted. Briefly stir together with a fork or whisk then pour over the oats in the slow-cooker crock. Stir well to evenly coat the oats. Lay a chopstick over one end of the slow cooker and lay the lid on top. The chopstick should prop the lid open just slightly to allow moisture to escape. Turn the slow-cooker onto HIGH.
  • Remove the lid and stir, taking care to scrape the sides, seams, and bottom- every 30 minutes until the oats have absorbed most of the liquid and the oats are toasted and smell slightly nutty. Divide the mixture between two rimmed half sheet pans and divide the blueberries and coconut between the trays. Mix gently to combine and allow to cool fully to room temperature before storing in airtight jars or containers. The granola should last for up to 2 weeks. If it begins to soften, you can briefly toast on a cookie sheet in a 350°F oven and cool to room temperature again.

  • Generously coat a large slow cooker with nonstick cooking spray (I prefer coconut oil spray). Place the oats, nuts, coconut, and salt in the slow cooker; stir to combine. Melt the coconut oil in a measuring cup then measure the honey on top. Pour into the slow cooker and stir until all of the ingredients are evenly coated.
  • Cover the slow cooker so that the lid is askew, leaving a 1- to 2-inch gap. Cook on HIGH for 30 minutes; stir well, making sure that all of the granola is scraped from the sides, bottom, and corners of the slow cooker. Continue cooking, stirring well every 20 to 30 minutes, until the granola is golden brown, for a total of 2 to 2 1/2 hours. (If the granola is getting too dark too fast, you may need to turn your slow cooker down to LOW and/or stir more frequently.)
  • Once the granola is done, transfer it to a large, rimmed baking sheet and spread into an even layer. Allow to cool, stirring occasionally, until crunchy and completely cool. If desired, mix in dried fruit. Store in an airtight container.
