SLOW-COOKER HONEY NUT GRANOLA
I lightened up a friend's recipe and changed the add-ins to our tastes. This honey nut granola is now a family favorite! You can vary the recipe as you like, changing the nuts, seeds or dried fruits. -Tari Ambler, Shorewood, Illinois

- In a 3- or 4-qt. slow cooker, combine the first 8 ingredients. In a small bowl, whisk honey, water, oil, cinnamon, vanilla, nutmeg and salt until blended; stir into oat mixture. Cook, covered, on high 1-1/2 to 2 hours or until crisp, stirring well every 20 minutes., Stir in cranberries and raisins. Spread evenly onto waxed paper or baking sheets; cool completely. Store in airtight containers. If desired, serve with yogurt.

SLOW-COOKER GRANOLA
I found this recipe in Parents Magazine [November 2006]. I like that its "healthier," in that they use AJ concentrate and not oil. When I made it, I substituted Splenda Brown Sugar, for fewer calories.

- In your slow-cooker [crockpot], stir together the oats, almonds, coconut, and wheat germ.
- In a seperate microwaveable bowl, mix honey, apple juice concentrate, br. sugar, vanilla, and cinnamon. Microwave for one minute.
- Pour the liquid into the slow cooker and stir until evenly coated.
- Cook for one hour on high, UNCOVERED.
- Then cook four hours on low, COVERED.
- Periodically, stir the granola. It will be a nice toasted-brown color.
- When done, stir in the cranberries. PLEASE, DO NOT ADD THE CRANBERRIES EARLIER! if they cook in the crockpot with everything else, it will burn and became a huge mess. [I'm speaking from experience here.]
- Store in an airtight container.
- It should yield approximately ten 1/2C servings.

- Lightly grease the crock-pot with a teaspoon or so of oil. Add the oats, almonds and salt. In a large measuring cup or small glass bowl, combine the honey, oil, peanut butter, cinnamon and vanilla. Microwave for a minute, stir and microwave an additional 30 seconds as needed, to melt everything and allow it to combine smoothly. (In lieu of a microwave, this can easily be done in a small saucepan over medium heat, stirring frequently.)
- Pour the liquids over the oats in the crockpot and stir well to thoroughly coat. Place the lid on the crockpot, leaving it slightly vented. Cook on HIGH for about 2 hours, stirring every 30 minutes. Stir in the dried fruit right at the end. - Set a crock-pot to HIGH and lightly grease it with about a teaspoon of coconut oil. Combine the oats, almonds, and pecans in the crock-pot. Stir together the warm coconut oil, honey, salt and ginger. Pour over the oats and nuts in the crockpot and stir to coat thoroughly. Cover with the lid, leave it slightly vented. (I place a chopstick across the top of the crock-pot and set the lid over that.)
- Cook on high for 60-90 minutes, stirring and scraping the sides and bottom of the crock-pot every 20-25 minutes. Stir in the coconut and dried fruit and then spread the granola across a large baking sheet. (I like to line the sheet with a silpat mat or parchment, just to make it easier to pick up and pour into a container when it cools.) When the granola has cooled, transfer it to an airtight container. It should keep nicely for at least 2 weeks. Enjoy!
