1 medium onion, chopped
1 each medium sweet yellow, red and green pepper, chopped
2 tablespoons olive oil
3 garlic cloves, minced
1 pound ground chicken
2 cans (14-1/2 ounces each) diced tomatoes, undrained
1 can (15 ounces) cannellini beans, rinsed and drained
1/4 cup lime juice
1 tablespoon all-purpose flour
1 tablespoon baking cocoa
1 tablespoon ground cumin
1 tablespoon chili powder
2 teaspoons ground coriander
1 teaspoon grated lime zest
1/2 teaspoon salt
1/2 teaspoon garlic pepper blend
1/4 teaspoon pepper
2 flour tortillas (8 inches), cut into 1/4-inch strips
6 tablespoons reduced-fat sour cream

Steps:

  • In a large skillet, saute onion and peppers in oil until crisp-tender, 7-8 minutes. Add garlic; cook 1 minute longer. Add chicken; cook and stir over medium heat until meat is no longer pink, 8-9 minutes., Transfer to a 3-qt. slow cooker. Stir in the tomatoes, beans, lime juice, flour, cocoa, cumin, chili powder, coriander, lime zest, salt, garlic pepper and pepper., Cover and cook on low until heated through, 4-5 hours. , Place tortilla strips on a baking sheet coated with cooking spray. Bake at 400° until crisp, 8-10 minutes. Serve chili with sour cream and tortilla strips.

3 1/2 - 4 lbs Chicken Breasts or thighs
2 Tbsp Chili lime seasoning (see above or notes on where to buy)
1 tsp salt
5 garlic cloves roughly chopped
1 tsp cumin (optional)
1 onion quarted and placed on top (I remove before shredding because my children don't like chunks of onion)
1 bottle of beer

Steps:

  • Place your chicken in the Slow Cooker
  • Sprinkle the garlic, salt, chili lime and cumin (optional) over the chicken
  • Pour the beer over the chicken
  • Place onion pieces on top and cook on low for 6-8 hours
  • Shred your chicken about 1/2 - 1 hour before serving
  • Serve as tacos, burrito bowls or taco salads

1 (1.25 ounce) package dry taco seasoning mix
1 lime, juiced
3 tablespoons chopped fresh cilantro
3 pounds skinless, boneless chicken breast halves

Steps:

  • Place the salsa, taco seasoning, lime juice, and cilantro into a slow cooker, and stir to combine. Add the chicken breasts, and stir to coat with the salsa mixture. Cover the cooker, set to High, and cook until the chicken is very tender, about 4 hours. If desired, set cooker to Low and cook 6 to 8 hours. Shred chicken with 2 forks to serve.

2 cups chicken broth
3 tablespoons lime juice

1 tablespoon vegetable oil
2 pounds lean ground chicken
Kosher salt
4 cloves garlic, minced
1 medium onion, finely diced
1/4 cup chili powder
2 teaspoons ground cumin
1/4 teaspoon ground cinnamon
Pinch ground clove
1 cup low-sodium chicken broth
One 15-ounce can no-salt-added pinto beans
One 15-ounce can no-salt-added cannellini beans
One 28-ounce can no-salt-added diced tomato
6 sun-dried tomatoes, finely chopped
1 tablespoon minced chipotle in adobo
2 teaspoons molasses
2 teaspoons Worcestershire sauce
Freshly ground black pepper
4 sliced scallions, for garnish
Lime wedges, for garnish
Reduced fat sour cream, for garnish, optional

Steps:

  • Heat 1 teaspoon of the oil in a large nonstick skillet over high heat. Add half of the ground chicken and 1/2 teaspoon salt, cook, breaking the meat apart with a wooden spoon, until browned, about 4 minutes. Transfer the chicken to a 4- to 6-quart slow cooker insert. Repeat with the remaining chicken using another 1 teaspoon of oil and another 1/2 teaspoon of salt.
  • Turn the heat down to medium and add the remaining 1 teaspoon of oil to the skillet. Add the garlic and onions, stirring and scraping up any browned bits in the pan, until the onions soften, about 5 minutes. Add the chili powder, cumin, cinnamon and clove, and stir constantly for 1 minute to cook the spices. Pour in the chicken broth and scrape the bottom of the pan. Transfer to the slow cooker, along with the pinto and cannellini beans and their bean liquid, the diced tomatoes, sun-dried tomatoes, chipotle, molasses, Worcestershire sauce, 2 teaspoons salt and some black pepper. Cover and cook on the low setting for 6 hours.
  • Serve with scallions, lime wedges and sour cream, if using.

3-4 lb chicken thighs, skinless and boneless (chicken breasts don't work well)
1 large onion, cut in wedges
1/4 c fresh lime juice
1/4 c fresh lemon juice
4 clove garlic, minced
1 can(s) diced green chiles (4 oz)
lime zest from 1/2 of a lime

Steps:

  • 1. Rub the chicken down with the salt and spices and arrange in the Crock Pot.
  • 2. Add the garlic, onion, lime zest, and chilies.
  • 3. Pour juice over all the chicken.
  • 4. Cook on low for 5 hours in your Crock Pot.
  • 5. Top it off with fresh green onion or cilantro. I like to have a spread of sides from tortillas, cilantro-lime rice, sour cream, sauteed zucchini, tomatoes & jalapenos... the flavor possibilities are endless!

2 skinless, boneless chicken breast halves

½ yellow onion, chopped
1 ½ tablespoons chili powder, or more to taste
1 clove garlic, minced

Steps:

  • Lightly grease the crock of your slow cooker with vegetable oil.
  • Put chicken breasts into the bottom of the slow cooker crock; add chicken broth, black beans, cannellini beans, diced tomatoes, yellow onion, chili powder, garlic, cumin, paprika, garlic powder, hot sauce, salt, and black pepper.
  • Cook on Low for 6 hours (or on High for 3 hours).
  • Remove chicken breasts from the crock to a cutting board. Shred chicken into strands with a pair of forks and return it to the mixture in the crock; add sour cream and stir.
