SLOW COOKER THAI BEEF CURRY

Slow Cooker Thai Beef Curry image

The challenge: The flavors are always too bland. Our solution: It's true that the long, slow cooking period mellows flavors. But bold spices, in bold amounts, will hold their own over time. Here, we start with big flavor from a good amount of curry paste and fish sauce, and we finish with fresh touches of cilantro and lime juice that amplify the taste of everything. Serve over a bed of brown rice or brown rice noodles to catch all the sauce.

Provided by Ann Taylor Pittman

Time 8h45m

Yield Serves 8 (serving size: about 1 1/2 cups)

Number Of Ingredients 13

1 tablespoon canola oil
2 pounds beef stew meat
1/2 cup unsalted beef stock
1/4 cup Thai red curry paste
2 tablespoons fish sauce
1 tablespoon light brown sugar
1 (10-oz.) yellow onion, sliced (about 2 1/2 cups)
3/4 cup well-shaken canned full-fat coconut milk
8 ounces haricots verts (French green beans), halved crosswise
1/2 cup loosely packed fresh cilantro leaves
9 ounces fresh spinach (about 9 cups)
3 tablespoons fresh lime juice
Cilantro sprigs (optional)

Steps:

  • Heat a large skillet over medium-high. Add oil; swirl to coat. Add beef, and cook in 2 batches, turning occasionally, until browned on all sides, about 6 minutes. Place browned beef in a 5- to 6-quart slow cooker. Add stock to skillet, stirring and scraping to loosen browned bits from bottom of skillet; transfer mixture to slow cooker. Add curry paste, fish sauce, sugar, and onion; stir to loosely combine. Cover, and cook on low until beef is very tender, about 8 hours.
  • Add coconut milk and haricots verts to slow cooker. Increase heat to high; cook until haricots verts are tender, about 12 minutes. Turn off heat; add cilantro leaves, spinach, and lime juice. Stir gently until spinach starts to wilt. Garnish with cilantro sprigs, if desired.

  • Using a sharp chef's knife and sturdy cutting board, trim excess fat and cut the beef into large bite-size cubes (about 2 inches). Set aside.Pro tip - don't cut the meat into small pieces as the slow cooking will eventually shred it.
  • In a pan or Dutch oven pot over medium heat saute onions in oil for about 5 to 7 minutes until lightly golden.Pro tip - the caramelized onions give this curry that depth of flavor so cook low and slow so it does not burn.
  • Add the ginger and garlic - saute another minute. Then add the bay leaves,, spices (curry powder, cayenne, paprika, garam masala), and 2 tbsp of water. Pr tip -the water prevents the spices from burning. But, do not add too much we still need them to cook and become aromatic
  • Once you can smell the wonderful spices - add the yogurt and meat. Season with salt and pepper. then add the lemon juice and make sure everything is well combined Pro tip - combine the yogurt well with the meat and cook on medium-low so it does not curdle.

  • Place the beef and marinade ingredients into a medium sized bowl and mix together until everything is combined. I like to use my hands to massage the yogurt into the beef. Cover with plastic wrap and place in the fridge to marinade for 1-2 hours (or overnight).
  • Place a large frying pan (or the inside of your slow-cooker if it can be used on the hob) over a high heat and spray with the frylight. Add in the beef and cook for 5-6 minutes until sealed. You'll probably notice watery liquid coming off the beef and marinade as you cook. Drain off most of it (otherwise you'll just be boiling the beef). It's fine to leave a little in there though.
