For beans:
1 cup dried navy beans
6 cups water
1 medium carrot, cut into 1-inch pieces
1 medium white onion, coarsely chopped
4 (3-inch) thyme sprigs
1 (3-inch) rosemary sprig
1 (3-inch) sage sprig
1 teaspoon kosher salt
For tomato sauce:
3 bacon slices, chopped
1/4 cup extra-virgin olive oil
1 medium white onion, chopped
1/4 cup minced garlic (from 1 to 2 heads)
3/4 teaspoon kosher salt
1 pound tomatoes, chopped (3 cups)
1/2 cup canned tomato purée
1 1/2 tablespoons chopped thyme

Steps:

  • Soak beans:
  • Soak beans overnight (8 to 12 hours) in water to cover by 2 inches or quick-soak (see cooks' note, below), then drain.
  • Cook beans:
  • Bring beans, water (6 cups), carrot, onion, and herb sprigs to a simmer in a 4-quart heavy pot, then simmer, partially covered, until beans are al dente, about 45 minutes. Add kosher salt, then continue to simmer until beans are tender, 45 minutes to 1 hour more.
  • Make tomato sauce while beans simmer:
  • Cook bacon in a 12-inch heavy skillet over medium heat, stirring occasionally, until crisp, 6 to 8 minutes. Add oil and onion and cook, stirring occasionally, until onion is golden, about 12 minutes. Add garlic, kosher salt, and 1/4 teaspoon pepper and cook, stirring occasionally, until garlic is softened, about 2 minutes. Add tomatoes, tomato purée, and thyme and simmer, uncovered, stirring occasionally, until sauce is slightly thickened, about 30 minutes.
  • Finish beans:
  • Discard carrot and herb sprigs. Drain beans in a sieve set over a bowl, reserving cooking liquid, and return beans to pot. Add tomato sauce and 1 1/2 cups bean-cooking liquid and simmer, uncovered, stirring occasionally, until thickened, about 45 minutes.

10 roma (plum) tomatoes - peeled, seeded and crushed
½ small onion, chopped
1 teaspoon minced garlic
¼ cup olive oil
1 teaspoon dried oregano
1 teaspoon dried basil
1 teaspoon ground cayenne pepper
1 teaspoon salt
1 teaspoon ground black pepper
1 pinch cinnamon

Steps:

  • Place tomatoes, onion, garlic, and olive oil in a slow cooker. Season with oregano, basil, cayenne pepper, salt, black pepper, and cinnamon.
  • Cover, and cook 10 to 15 hours on Low. The longer you simmer it the more flavorful it becomes. At 10 hours it's really good, but at 15 its even better.

2 cups dried small white beans or 2 cups navy beans
1 (680 ml) can tomato sauce
1 cup vegetable stock
1/2 cup water or 1/2 cup beer
1/2 cup barbecue sauce
1/3 cup cooking molasses
1/3 cup maple syrup
1 medium onion, finely diced
2 tablespoons dried mustard
1 teaspoon chili powder
1/2 teaspoon ground cumin
salt and freshly ground pepper

Steps:

  • Place the beans in a large pot and cover with 10 cups of cold water. Soak the beans in the water at room temperature overnight.
  • Bring the beans to a boil, and then reduce the heat until the water is gently simmering. Cook the beans until just tender, about 45-60 minutes, and then drain well. Place all the remaining ingredients, except the salt and pepper, in your slow cooker and mix well.
  • Mix in the beans. Cover and cook on the low setting for 8 hours or until the beans are tender, bubbly and delicious. Taste the beans, add salt and pepper if needed, and serve.

Very easy, I think it tastes best when cooked slow and I found with my slow cooker I had to cook for an hour or two longer than the recipe says. My hubby loves this recipe! If you have used up all the reserved fluid and need extra fluid while cooking, in particular when on high, use up to 1/2 cup of tomato juice. Prep time does not include the bean soak.

5 -6 pieces bacon
1 cup tomato juice
1/2 cup onion, chopped
1/4 cup ketchup
1/4 cup molasses
1/4 cup brown sugar
1/2 teaspoon dry mustard
1/4 teaspoon seasoning salt
1 1/2 teaspoons pepper, ground mixture
1 teaspoon chili powder

Steps:

  • Soak beans overnight in large bowl.
  • Drain, put in large pot and cover with 5 cups of water. Simmer over medium low heat until tender, about 1 hour.
  • Drain beans reserving 2 cups of liquid.
  • Add beans to slow cooker.
  • In a skillet over medium high heat fry bacon until browned, chop and stir into beans.
  • Combine juice, chopped onion, ketchup, molasses, brown sugar, dry mustard, salt, pepper and chili, add to beans and stir well.
  • Cover and cook on low for 7 to 9 hours. Until beans are tender and flavourful.
  • Check and add a little of the reserved liquid as necessary.
  • *or high 4-5 hours.

1 teaspoon olive oil
2 onions, chopped
5 garlic cloves, minced
2 carrots, finely chopped
3 celery ribs, chopped
1 green pepper, chopped
1 red pepper, chopped
3 (28 ounce) cans tomatoes, crushed
1 (15 ounce) can tomato sauce
4 tablespoons tomato paste
1 (10 ounce) can tomato soup
1/4 cup chopped fresh basil leaf
2 tablespoons chopped fresh parsley
1/2 teaspoon dried oregano leaves
1/2 teaspoon thyme
1/2 teaspoon salt
1/2 teaspoon pepper
1/4 teaspoon cayenne
1 dash red pepper flakes

Steps:

  • Heat oil in skillet; add onions,garlic, celery peppers and carrots.
  • Saute on high until transparent.
  • Transfer to slow cooker.
  • Add remaining ingredients.
  • Stir to blend together.
  • Cook on low for 9 hours or on high for 6 hours.
  • About an hour before serving time, check and thin with water if necessary.
  • I love a thick sauce.
  • Set the Slow cooker on Low and let is cook overnight.
  • Tip: Use your processor on the pulse mode to chop your vegetables.
  • I always try to make it in the summer and add my fresh herbs by the handfull.

2 (19 ounce) cans fava beans (use fresh if you have them, take off the pods and boil them until tender, cool and then slip off the)
3 tablespoons olive oil
3 large onions, chopped
5 cloves garlic, minced
2 tablespoons hot red pepper flakes
1/4 cup tomato sauce
3/4 cup hot water
3 tablespoons fresh parsley, chopped
salt & pepper
2 teaspoons Hungarian paprika

Steps:

  • Heat oil in a large saucepan& over medium heat saute the onions& garlic until golden.
  • Stir in remaining ingredients except the beans.
  • Bring to a boil, reduce heat and simmer 30 minutes (add a bit more water if it reduces too much- the sauce should have some liquid to it).
  • Gently stir in the fava beans and let stand for a few minutes so the beans absorb some of the flavor from the sauce.

1 ¼ cups dry cannellini beans
1 teaspoon baking soda
2 tablespoons extra-virgin olive oil
2 cloves garlic, peeled and crushed
1 sprig fresh sage
1 ½ cups tomato sauce

Steps:

  • Place beans in a large pot. Cover with water and stir in baking soda. Soak for 8 to 12 hours.
