1 1/2 lbs boneless beef chuck steaks, 1 1/2-inch thick
1 garlic clove, minced
1/4 cup wine vinegar
1 tablespoon brown sugar
1 teaspoon paprika
2 tablespoons Worcestershire sauce
1/2 cup ketchup
1 teaspoon salt
1 teaspoon prepared mustard
1/4 teaspoon black pepper

Steps:

  • Cut the beef on a diagonal, across the grain into slices 1" wide and place in the crock pot.
  • In a small bowl, combine the remaining ingredients.
  • Pour over the meat, and mix.
  • Cover and cook on Low for 3 to 5 hours.

1 each medium green, sweet red and yellow peppers, cut into 1/2-inch strips
1 sweet onion, cut into 1/2-inch strips
2 pounds beef top sirloin steaks, cut into thin strips
3/4 cup water
2 tablespoons red wine vinegar
1 tablespoon lime juice
1 teaspoon ground cumin
1 teaspoon chili powder
1/2 teaspoon salt
1/2 teaspoon garlic powder
1/2 teaspoon pepper
1/2 teaspoon cayenne pepper
8 flour tortillas (8 inches), warmed
1/2 cup salsa
1/2 cup shredded reduced-fat cheddar cheese
8 teaspoons minced fresh cilantro

Steps:

  • Place peppers and onion in a 5-qt. slow cooker. Top with beef. Combine water, vinegar, lime juice and seasonings; pour over meat. Cover and cook on low until meat is tender, 8-10 hours., Using a slotted spoon, place about 3/4 cup meat mixture down the center of each tortilla. Top with salsa, cheese and cilantro; roll up.

2 lbs london broil beef or 2 lbs flank steaks, cut into 1/4 to 1/2 inch slices
salt and pepper
1/2 bell pepper, sliced
1 small onion, sliced
1/4 cup beef broth
1 tablespoon Tabasco sauce (we use Chipotle Tabasco)
2 tablespoons A.1. Original Sauce
3 tablespoons Worcestershire sauce
1 teaspoon McCormick's Montreal Brand steak seasoning
1/4 teaspoon garlic powder
1/2 teaspoon onion salt
1/4 teaspoon red pepper flakes
4 steak rolls
4 slices provolone cheese

Steps:

  • Season meat with salt and pepper. Place sliced pepper and onion in the bottom of a slow cooker. Layer meat on top. Whisk beef broth through pepper flakes in a bowl. Pour over the meat and vegetables.
  • Cook on low for 4 hours. Serve on toasted rolls with provolone or cheese of your choice.
