1 beef sirloin tip roast (3 pounds), cut into large chunks
3 celery ribs, chopped
1 large onion, chopped
1 medium green pepper, chopped
1 cup ketchup
1 can (6 ounces) tomato paste
1/2 cup packed brown sugar
1/4 cup cider vinegar
3 tablespoon chili powder
2 tablespoons lemon juice
2 tablespoons molasses
2 teaspoons salt
2 teaspoons Worcestershire sauce
1 teaspoon ground mustard
8 to 10 sandwich rolls, split

Steps:

  • Place beef in a 5-qt. slow cooker. Add the celery, onion and green pepper. In a bowl, combine the ketchup, tomato paste, brown sugar, vinegar, chili powder, lemon juice, molasses, salt, Worcestershire sauce and mustard. Pour over beef mixture. Cover and cook on low for 8-9 hours or until meat is tender., Skim fat from cooking juices if necessary. Shred beef. Toast rolls if desired. Use a slotted spoon to serve beef on rolls.

Pork and beans are cooked together in a slow cooker for mutually beneficial results (If you don't have a slow cooker, you can do it in a pot in the oven.) As the pork shoulder and barbecue sauce braise in the oven, the sauce soaks up the pork juices while the pork tenderizes. Then, beans are added to soak up the deeply concentrated sauce. The recipe uses store-bought barbecue sauce enhanced with the smoky heat of canned chipotles in adobo and brown sugar, which helps glaze the pork. Because every barbecue sauce is different, taste and adjust yours as needed. (For a more acidic sauce, add apple cider vinegar with the beans, or you can increase the sweetness with added sugar.) To serve, slice the pork or shred it into pulled pork.

1 tablespoon extra-virgin olive oil
1 cup store-bought or homemade barbecue sauce
1 chipotle in adobo, finely chopped, plus more to taste
3 tablespoons light brown sugar, plus more to taste

6 garlic cloves, peeled and thinly sliced

Steps:

  • Season the pork all over with 1 tablespoon salt and and 3/4 teaspoon pepper. In a large Dutch oven or skillet, heat the olive oil over medium-high. Add the pork shoulder and sear until browned on all sides, 8 to 10 minutes.
  • Meanwhile, in your slow cooker, stir together the barbecue sauce, chipotle and brown sugar. Taste the mixture and adjust sweetness with brown sugar and spice with chipotle.

  • Transfer the pork to a cutting board. Skim excess fat from the top if desired, then season the beans to taste with salt and pepper. Slice the pork against the grain into 1/2-inch thick slices, or shred the pork with two forks. Serve the pork with the beans.

Steps:

  • Place dry beans in a large pot. Pour water over top and stir in salt. Cover the pot and allow the beans to soak overnight.
  • The next day, drain beans reserving 4 cups water. Rinse beans and set aside.
  • Meanwhile, heat oil in a large saucepan over medium-high heat until shimmery. Add diced bacon, garlic, and onion to pan and stir frequently until bacon begins to crisp, about 8-10 minutes.

The meat does not need to be seared in skillet first to make this fall-apart tender, pulled BBQ beef for sandwiches. This recipe has so much flavor no one will notice the Worcestshire sauce & the salt were deleted to reduce sodium (you may also use low-sodium catsup and BBQ to reduce sodium further). Using molasses instead of brown sugar and Worcestshire gives a depth of flavor and authenticity, while reducing sugar & sodium. It is great to take to picnics, buffets, or tailgating. Freezes well.

  • Trim and completely remove ALL visible fat. Place beef in crock pot. Add onion, celery, and garlic. In medium bowl mix the remaining ingredients well with a whisk, then pour over beef and vegetables.

Steps:

  • Cook ground beef and onion in a skillet and drain. Place in slow cooker.

15.5 oz. package Hurst's BBQ Style Cowboy Beans ((save the seasoning packet for later in the recipe))
16 oz. hickory smoked bacon, (sliced, cooked and drained)
2 jalapenos (sliced)
1 yellow onion (diced)
2 garlic cloves (minced)
6 cups chicken broth
2 cups barbecue sauce
the included seasoning packet

Steps:

  • Place the beans in the colander. Sort through the beans with your hands, discard any debris. Rinse the beans.
  • Add the beans to the slow cooker.
  • Add the bacon, jalapeno, onion, garlic and chicken broth. Wait to add the barbecue sauce and seasoning mix.

4 -5 lbs beef chuck roast
1 tablespoon garlic salt
1 tablespoon black pepper
2 cups chicken broth
1 onion, sliced
1 (15 ounce) can tomato sauce
1/4 cup brown sugar
1/4 cup ketchup
3 tablespoons Dijon mustard
1 dash Worcestershire sauce
1 (18 ounce) bottle barbecue sauce (I like KC Masterpiece or Cattlemans for this)

Steps:

  • Season roast with garlic salt and pepper and place in slow cooker. Add all remaining ingredients but the BBQ sauce.
  • Cover and cook on LOW for 9 to 11 hours, until beef is very tender.
  • Shred meat with a fork after cooking and retain 1 cup of the juice from cooking.

1 tbsp brown sugar
1 tsp onion powder
1 tsp kosher salt
1/2 tsp ground black pepper
2 tsp paprika
1/2 tsp cumin
1 1/2 cups ketchup
1/2 cup brown sugar
4 garlic cloves, minced
1/2 cup apple cider vinegar
1 tbsp worcestershire sauce
2 tsp onion powder
2 tsp ground black pepper
1 tsp salt

Steps:

  • Mix together all of the rub spices and rub all over the beef.
  • Heat olive oil in a pan on medium high heat and brown meat, approx 1-2 minutes on each side.
  • Mix all bbq sauce ingredients in the slow cooker until combined.
  • Move beef into slow cooker and cover with sauce.
  • Cover and cook on low for 8 hours or on high for 4 hours.
  • Using two forks, shred the beef in the slow cooker and make sure the sauce is covering each piece.
  • Cover and heat on low for an additional 15-20 minutes.
  • Switch to warm and uncover. The sauce will thicken as it sits. Serve sauce on the side or put it in a jar and refrigerate for later.
