While the cooking time may seem extremely long, this is an old-fashioned Southern means of cooking vegetables. When cooked this way, the beans are served with their "pot liquor" and cornbread to sop it up.

1 tablespoon vegetable oil
1 cup chopped yellow onions
3/4 teaspoon salt
1/4 teaspoon freshly ground black pepper
1/4 teaspoon cayenne pepper
1 (8-ounce) ham hock, scored
1 tablespoon minced garlic
1 1/2 pounds green beans, trimmed and halved

Steps:

  • Add the oil in a medium, heavy saucepan. Add the onion and saute until tender, about 3 minutes. Season with salt, pepper, and cayenne. Add the ham hocks, garlic, and beans. Add enough water to almost completely cover the beans. Bring to a boil, reduce the heat and simmer for 2 hours. Remove from the heat and serve with the cooking liquid.

2 lbs dried great northern beans
1 lb ham hock (neck bones)
1 lb carrot
5 celery ribs
1 large onion
6 garlic cloves
6 cups chicken broth (or, 6 cups water with chicken boullion cubes dissolved)
4 bay leaves
2 teaspoons salt
1 teaspoon black pepper
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
1/4 teaspoon smoked paprika
1/4 teaspoon dried thyme
1/4 teaspoon celery seed
1/4 teaspoon parsley
1/8 teaspoon cayenne pepper

Steps:

  • Soak beans overnight in water, 12 - 24 hrs, drain and rinse.
  • Cook ham hocks in 6 cups chicken broth in slow cooker on high for 60 minutes. Remove bones from slow cooker, once cooled strip meat off the bones and set aside to add at the very end. (alternatives - skip this step and add cooked ham or bacon at the very end).
  • While ham hocks cook, chop carrots, celery, onion, and mince the garlic.
  • Add rinsed beans, carrots, celery, onion, garlic, and all spices/seasonings to the liquid in the slow cooker.
  • Cook for 5 hrs on high heat (longer if on low heat).
  • Serve with rice.

I like making baked beans from dried beans because they are not as mushy as canned baked beans. I found this recipe on a package of Publix dried navy beans. I make it as written on the package, but I add a few extra slices of bacon, 3 ounces of tomato paste, and 1 teaspoon vinegar. The "cooking" time does not include the time for soaking the beans.

16 ounces dried navy beans
1 1/2 cups ketchup
1 1/2 cups water
1/4 cup molasses
1 cup firmly packed brown sugar
1 cup diced onion
1 tablespoon dry mustard
1 tablespoon salt

  • QUICK SOAK: Place 16 ounces of dried beans in a large saucepan with 6-8 cups of water. Cover and let stand overnight or at least 6-8 hours. Drain and rinse beans (discard soak water).
  • OVERNIGHT SOAK: Place 16 ounces of dried beans in a large saucepan with 6-8 cups water. Cover and let stand overnight or at least 6-8 hours. Drain and rinse beans (discard soak water).

1/4 cup sliced onions
8 cups water
1 garlic clove, minced
1 tablespoon chicken bouillon granules
1 tablespoon kosher salt

1/4 teaspoon dried marjoram
1/4 teaspoon ground coriander
Fresh thyme sprigs , optional

Because it is done in a crock pot, it is a painless recipe that minds itself. Dried beans are really a bargain too! I discovered this at Cooks.com. Cooking time does not include soaking time.

1 1/2 lbs dried navy beans (3 cups beans)
1 tablespoon instant minced onion
1 cup ketchup
1 cup packed brown sugar
1 tablespoon dry mustard
1/4 cup dark molasses
1 tablespoon liquid smoke (caution, strengths vary! Adjust accordingly.)
3 1/2 cups water
1/4 lb lean diced salt pork (substitute bacon or ham if that is your preference)
1 tablespoon salt

Steps:

  • Thoroughly rinse and clean beans; place beans in a bowl and cover with cold water.
  • Soak 4 to 5 hours or overnight and drain. (Rumor is that soaking them overnight negates the reputation beans have earned. Let me know if you find otherwise and I'll suggest a book of matches!)
  • Place the beans in a crock pot (I use a 5 quart) and add all the other ingredients. Mix well. Cook on low setting for 13 to 15 hours, high setting for 7 to 8 hours. Test for doneness one to two hours before end of cooking time.
  • I cannot use all that this recipe produces at one time but I have had good luck in freezing the leftovers in smaller serving size containers if they are not overcooked. When thawed, the results are still more firm than commercially prepared baked beans and certainly more tasty!

1 tbsp olive oil
1 onion , thinly sliced
2 garlic cloves , chopped
1 tbsp white or red wine vinegar
1 heaped tbsp soft brown sugar
400g can pinto beans , drained and rinsed
200ml passata
small bunch coriander , chopped

Steps:

  • Heat the slow cooker if necessary. Heat the oil in a large frying pan and fry the onion until it starts to brown, then add the garlic and cook for 1 min. Add the vinegar and sugar and bubble for a minute. Stir in the beans and passata and season with black pepper. Tip everything into the slow cooker.
  • Cook on Low for 5 hours. If the sauce seems a little thin turn the heat to High and cook for a few more minutes. Stir through the coriander.
