- Soak beans overnight in water, 12 - 24 hrs, drain and rinse.
- Cook ham hocks in 6 cups chicken broth in slow cooker on high for 60 minutes. Remove bones from slow cooker, once cooled strip meat off the bones and set aside to add at the very end. (alternatives - skip this step and add cooked ham or bacon at the very end).
- While ham hocks cook, chop carrots, celery, onion, and mince the garlic.
- Add rinsed beans, carrots, celery, onion, garlic, and all spices/seasonings to the liquid in the slow cooker.
- Cook for 5 hrs on high heat (longer if on low heat).
- Serve with rice.

I like making baked beans from dried beans because they are not as mushy as canned baked beans. I found this recipe on a package of Publix dried navy beans. I make it as written on the package, but I add a few extra slices of bacon, 3 ounces of tomato paste, and 1 teaspoon vinegar. The "cooking" time does not include the time for soaking the beans.

- QUICK SOAK: Place 16 ounces of dried beans in a large saucepan with 6-8 cups of water. Cover and let stand overnight or at least 6-8 hours. Drain and rinse beans (discard soak water).

- Thoroughly rinse and clean beans; place beans in a bowl and cover with cold water.
- Soak 4 to 5 hours or overnight and drain. (Rumor is that soaking them overnight negates the reputation beans have earned. Let me know if you find otherwise and I'll suggest a book of matches!)
- Place the beans in a crock pot (I use a 5 quart) and add all the other ingredients. Mix well. Cook on low setting for 13 to 15 hours, high setting for 7 to 8 hours. Test for doneness one to two hours before end of cooking time.
- I cannot use all that this recipe produces at one time but I have had good luck in freezing the leftovers in smaller serving size containers if they are not overcooked. When thawed, the results are still more firm than commercially prepared baked beans and certainly more tasty!
