2 pounds small new potatoes
2 cups baby-cut carrots, cut lengthwise in half
1 large sweet onion (such as Bermuda, Maui, Spanish or Walla Walla), cut in half and thinly sliced
1 teaspoon salt
1 pound asparagus spears, cut into 2-inch pieces
1/4 cup olive or vegetable oil
6 tablespoons chopped fresh dill weed
1 to 2 teaspoons grated lemon peel
2 tablespoons Dijon mustard
1 teaspoon salt

Steps:

  • Cut large potatoes in half as needed to make similar-size pieces. Place carrots in 5- to 6-quart slow cooker. Top with onion and potatoes; sprinkle with 1 teaspoon salt.
  • Cover and cook on Low heat setting 5 to 6 hours.
  • Add asparagus to cooker. Increase heat setting to High. Cover and cook 15 to 20 minutes or until asparagus is crisp-tender.
  • Mix oil, dill weed, lemon peel, mustard and 1 teaspoon salt in small bowl. Pour over vegetables in cooker; stir to coat. Vegetables will hold on Low heat setting up to 2 hours; stir occasionally.

2-3 bay leaves
25g butter
bunch of spring onions , chopped
4 slices smoked streaky bacon
1 tbsp olive oil
sea salt and freshly ground black pepper

Steps:

  • Scrub new potatoes well and rinse in cold water. Cook in boiling salted water for 15-20 minutes with bay leaves until tender.
  • Meanwhile, preheat the grill to high. Melt butter in a small pan, add a bunch of spring onions, chopped and cook gently for 1-2 minutes to soften.
  • Grill the smoked streaky bacon until crisp and golden, drain on kitchen paper, then break into small pieces.
  • Drain the potatoes and toss with the spring onions, olive oil, some sea salt and freshly ground black pepper. Put the potatoes in a warmed serving dish and top with the bacon pieces. Drizzle with more olive oil if needed.

  • You’ll need to brine the lamb on Friday night: bring 2 litres of water to boil in a large pan then take off the heat and add the salt, 3 sprigs of rosemary, the black peppercorns and half the head of garlic. Leave to cool, add the lamb shoulder, cover and chill overnight.
  • On Saturday afternoon, preheat the oven to 170°C, fan 150°C, gas 31⁄2. Remove the lamb from the brine, rinse and dry well, putting the garlic and rosemary from the brine into a medium roasting tin. With a small knife, carefully pierce the lamb shoulder all over and tuck in slices of garlic, small sprigs of rosemary and mint. Place the lamb in the roasting tin, add the other half head of garlic (keep back 1 small clove for the pistou) and pour in two-thirds of the stock. Cover the roasting tin tightly with foil and place in the oven for 3-31⁄2 hours until tender. Check after 2 hours, and add the rest of the stock to the tin.
  • Turn the oven up to 200°C, fan 180°C, gas 6, remove the foil and return the lamb to the oven for 20 minutes to get a beautiful roasted colour and flavour.
  • Cut all the potatoes the same size, cover with cold water in a saucepan and add the salt. Cook on a medium heat for 20-25 minutes, or until soft.
