SLOW COOKED CORNED BEEF IN RED WINE
Cooked in your crockpot/slow cooker, this delicious meal is cooked in a Cabernet Sauvignon Red Wine, combined with other ingredients, topped off with a honey mustard sauce to compliment the meat.

- Wash your corned beef under cold water, and pat dry. Then season with salt and pepper.
- Cut onion into large chunks, and squash garlic cloves. Place them all on the bottom of your slow cooker.
- Place your corned beef on top of the onion and garlic. Add wine, beef broth, water, bay leaves, oregano, and rosemary.
- Put on the lid and cook on low for six hours or until corned beef is tender
- When the corned beef is cooked, remove from the slow cooker, cover with tin foil and let it rest for 10 to 15 minutes.
- While your corned beef is resting, take 1 cup or 250ml of the liquid it was cooking in (cooking liquid).
- Combine cornstarch and water in a separate bowl and put aside.
- Add butter, cooking liquid, and dijon mustard to a small saucepan. Over medium heat slowly whisk until the butter is fully melted.
- In a separate bowl, take some of the liquid and add it to your sour cream and mix it through. Add the sour cream to the saucepan and whisk through.
- Slowly add the cornstarch mixture to the saucepan while whisking.
- Add honey and continue to whisk until the sauce is thick.
- Pour sauce into a gravy boat.

SLOW COOKER ROAST BEEF WITH RED WINE
This is a stick to your ribs recipe. Serve it with mashed potatoes or over egg noodles. Each serving is 1 1/3 cup. I found this recipe in Cooking Club magazine. I have not tried this recipe, but I'm posting it for safe keeping.

- Marinate beef in wine in resealable plastic bag in refrigerator up to 24 hours, turning bag occasionally.
- Drain beef; reserve marinade. Pat beef dry. Heat slow cooker to high. Add consomme, onions and mushrooms.
- Cook bacon in large skillet over medium heat 3-5 minutes or until browned. Drain on paper towels, reserving drippings in skillet. Add bacon to slow cooker.
- Combine flour, pepper, onion powder and garlic powder in large bag. Add beef; shake to coat. Remove beef; reserve flour mixture.
- Cook beef in bacon drippings in batches over medium-high heat 3-5 minutes until browned on all sides. Place in slow cooker.
- Add reserved flour mixture to drippings in skillet; cook and stir over medium heat 1 minute. Add 1 cup of the reserved marinade; bring to a boil, stirring to scrape up any browned bits from bottom of skillet. Pour into slow cooker.
- Add remaining marinade and thyme to slow cooker. Cook over low heat 7-9 hours or until beef is tender. Remove beef and vegetables. Pour liquid into large skillet; boil over high heat 3 minutes or until slightly thickened. Pour over beef and vegetables.

SLOW COOKED BEEF AND RED WINE RAGOUT
From a free cook book issued by Philadelphia (upon the purchase of 3 of their items). I'm hoping to make this in our winter (though a half recipe for 3 when the DH is on night shift due to his allergy issues with onions). Recommend you serve with cooked pasta.

- Heat half the oil in a heavy based saucean and cook the onions until browned and set aside.
- Heat remaining oil and brown beef in batches and set aside.
- Add garlic and tomato paste and gently cook for 1 minute.
- Return beef to saucepan and add stock and wine and bring to the boil, reduce heat and cover and simmer for 1 1/2 hours stirring occassionally and then add the onion and cook for a further 20 minutes.
- Whisk together the cream cheese with some of the cooking liquid until smooth and add to the saucepan and simmer a further 10 minutes.
- Spoon onto serving plates over the pasta and serve immediately.

This slow cooker corned beef recipe is so easy, with basic ingredients, and it cooks on low for 7 hours. It is basic, but it is so very delicious. Hubby gave it 5 stars out of 5 and even my fussy 2-year-old ate it all. Hope you enjoy it! We ate this with roasted vegetables, and I topped mine with pickled mustard; my husband used gravy.

- Crush the peppercorns with the mustard, rosemary, celery seeds and a little salt using a pestle and mortar. Blitz the mushrooms to a fine powder in a food processor, then stir them in with 2 tbsp oil and rub all over the beef. Cover and chill for at least 1 hr, but overnight is best.
- Heat the slow cooker to high and pour in the stock. Heat 2 tbsp oil in a large pan and brown the beef, then put in the slow cooker skin-side up. Fry the carrot, onion and celery in the same pan over a medium-high heat for about 10 mins. Stir in the tomato purée and wine, scraping the bits off the bottom of the pan, then add this to the slow cooker.
- Cook on low for 6 hrs, then strain the liquid into a pan. Keep the meat and veg covered with foil so they stay warm. Bring the liquid to the boil, then simmer until reduced by a third and season. For thicker gravy, mix the cornflour with 2 tbsp water and whisk into the boiling liquid. Serve the beef with the gravy, along with some mash and greens.

- Put the corned beef in a large slow cooker. Add the garlic and 6 cups of the water, cover and cook on high for 5 hours and 30 minutes.
- Add the remaining 4 cups of water and cook on low until the corned beef is tender, about 1 hour and 30 minutes longer. Transfer the corned beef to a large pan and cover with foil. Discard the garlic.
- Add the carrots and potatoes to the cooker, cover and cook on high until almost tender, about 2 hours. Add the cabbage wedges and cook until tender, about 45 minutes.
- On a carving board, carve the corned beef across the grain into 1/3-inch-thick slices. Keeping the slices together, return the meat to the slow cooker and cook on low until heated through, about 15 minutes. Serve the corned beef and vegetables in the cooking liquid, passing mustard and horseradish at the table.
