4-6 Yellow Potatoes
3-4 Tablespoons butter, sliced (I used 3 once and 4 once - both worked fine!)
Seasonings (I used salt, pepper and garlic powder)
1-2 cups Cheddar Jack shredded cheese

Steps:

  • Line your slow cooker with foil.
  • Scrub and cut 4 to 6 yellow potatoes into chunks.
  • Grease the foil.
  • Add about half of the potatoes, a couple slices of butter, seasonings and cheese.
  • Add the rest of the potatoes, butter, seasonings and cheese.
  • Cook on low 4-6 hours.

1 28-32 ounce bag hashbrowns
1 10.75 ounce can cream of chicken soup
1 cup sour cream
1 ½ cups sharp cheddar cheese
2 Tablespoons butter (melted)
2 Tablespoons diced onion
½ cup sharp cheddar cheese (optional topping)
green onions (diced, optional topping)

Steps:

  • Spray slow cooker with non-stick cooking spray. Place all ingredients, except for 1/2 cup sharp cheddar cheese if you are using it as a topping, in a 4-5 quart slow cooker and mix until completely incorporated. Place lid on top of slow cooker and cook on low for 4-5 hours.
  • Remove lid and top potatoes with additional 1/2 cup cheddar cheese. Let cook for 10-15 more minutes or until cheese starts to melt.

1/4 cup water
1/2 teaspoon pepper

Steps:

  • Spray 5-quart slow cooker with cooking spray.
  • In 8-inch skillet, melt butter over medium heat. Cook onion and garlic in butter, stirring frequently, 2 to 3 minutes or until translucent and soft.

1 pound potatoes (raw)
6 green onions
1 teaspoon coarse salt
1/2 teaspoon pepper
1 cup sour cream
1 cup cheddar cheese (shredded )
2-3 strips cooked bacon (optional)

Steps:

  • Start by peeling and cubing about 1 pound of potatoes. Two large russets or three medium would be just right. Make 1-inch cubes
  • Spread evenly in the bottom of a large crock pot sparyed with PAM.
  • Cook on high for two hours. You want an internal temperature of 190° or more for the potatoes. It may take longer than 2 hours if you need more than one layer or have bigger pieces of potato. Also, there is some variation in crock pots.
  • Mash the potatoes in the crock pot.
  • Clean and slice six green onions.
  • Sprinkle with one teaspoon coarse salt, 1/2 teaspoon pepper. Add the sliced green onion, 1 cup sour cream and one cup shredded cheddar cheese. Add cooked bacon or other things at this point. Mix until combined and then smooth over the bottom of the crock pot.
  • Cook 30 minutes more on high.

  • Spray the inside of your Slow Cooker with non-stick cooking spray.
  • In a skillet, on medium heat, melt the butter and add the onions. Sautee the onions, on medium heat, until they are soft, tender and caramelized.

1 (15 ounce) can reduced-sodium condensed cream of chicken soup (such as Healthy Choice)
1 cup reduced-fat sour cream
1 cup thinly sliced scallions, plus more for garnish
1 teaspoon garlic powder
1 ½ cups shredded part-skim mozzarella cheese, divided
1 ½ cups shredded sharp Cheddar cheese, divided

Steps:

  • Coat a 4-quart slow cooker with cooking spray. Combine hash browns (or other potatoes), condensed soup, sour cream, scallions, garlic powder, 1 cup mozzarella and 1 cup Cheddar in the slow cooker; stir well. Sprinkle with the remaining 1/2 cup each mozzarella and Cheddar.
  • Cover and cook on Low until the potatoes are tender and the cheese is bubbly, 3 1/2 to 4 hours. Garnish with additional scallions, if desired.

1 pinch seasoned salt, or to taste
1 teaspoon minced garlic
1 cup crushed cheese-flavored crackers (such as Cheez-It®), divided

10.75 oz Can Cream of Mushroom Soup ((plus half can of water))
2 cups Shredded Cheddar Cheese

Steps:

  • Place your potatoes in the bottom of a 4 quart slow cooker.
  • Add your cubed ham on top of the potatoes.
  • In a medium bowl, mix together your cream of mushroom soup and half a can of water until well blended.
  • Pour mixture over everything in crock pot.
