SLOPPY LASAGNA

- Bring a large pot of water to a boil over medium heat. Break all of the pasta sheets into irregular, larger than single bite-sized pieces. Salt the water, then add the pasta and cook to a little shy of al dente. Drain and set aside in a large bowl.
- Heat the extra-virgin olive oil in a heavy bottomed pot or large skillet over medium heat. Add the meat, press it into an even layer and brown it for 3 to 4 minutes before moving. Turn the meat and add the onions and grated carrot. Stir and cook a few minutes to soften, then add the garlic, bay leaves, salt and pepper, to taste, and the cinnamon. Cook for a couple of minutes, then stir in the tomato paste, wait for 1 minute then add the wine. Reduce for a minute more, then add the tomatoes, breaking them up as you stir. Reduce the heat to a simmer and add the basil.
- While the sauce simmers, in a medium sauce pot, melt the butter over medium heat and whisk in the flour. Cook for 1 minute, then whisk in the milk and nutmeg, and season with salt, pepper, to taste. Let cook for a couple of minutes to thicken, then stir in 1/2 cup of the grated cheese and turn off the heat.
- Heat a broiler.
- Add the meat sauce to the bowl with the pasta and toss. Layer half of the pasta into a lasagna pan and scatter with dollops of fresh ricotta cheese. Top with remaining pasta. Pour the white sauce over the pasta and scatter the remaining 1 cup of the grated cheese over the top. Put under the broiler to brown and bubble. Remove from the broiler and serve.
SLOPPY JANES
Steps:
- Spray a large skillet with nonstick spray and bring it to medium-high heat on the stove. Add turkey and sprinkle with steak seasoning and salt. Cook and crumble until it's mostly cooked, about 8 minutes.
- Reduce the heat to medium. Add onion, bell pepper, Worcestershire sauce, and vinegar. Mix it well and continue to cook and crumble until the meat is fully cooked, about 5 minutes.
- Reduce the heat to low. Add tomato sauces, tomato paste, and sugar. Stir well. Stirring occasionally, cook until it's hot, about 5 minutes.
- Toast the buns, if desired. Evenly distribute the mixture among the bottom buns and then finish off with the tops of the buns. Enjoy!

- Heat a large skillet over medium heat and add 1 tablespoon of the vegetable oil. Add the turkey to the pan and brown until it is no longer pink and the meat crumbles, 8 minutes. Remove the turkey from the pan and set it aside in a bowl or plate. Add the other tablespoon of oil to the pan, followed by the carrot, onion and 2 tablespoons of the pineapple juice, and cook until the onion becomes translucent, 8 to 10 minutes. Add the tomato paste and cook for 2 minutes. Next, add the chicken stock, ketchup, mustard, Worcestershire sauce, tomato sauce and the remaining pineapple juice. Bring to a boil, reduce to a simmer and cook uncovered until thickened and reduced by one third, 15 to 20 minutes. Add the cooked turkey to the sauce and stir to combine. Cook for 6 to 8 minutes, to warm through. Season with salt and pepper.
- Scoop the sloppy lo mixture evenly onto the buns and top with the pickles. Serve with 14 napkins, preferably near a bathtub.
SLOPPY BUFFALO JOES

- Heat a large skillet with extra-virgin olive oil over medium-high heat. Add meat and break it up with wooden spoon, cook 5 to 6 minutes. Add in carrots, celery, onions and garlic, season with salt and freshly ground black pepper, cook 7 to 8 minutes more. In a bowl combine the vinegar, sugar, Worcestershire, hot sauce, tomato sauce and stock. Pour into the pan and stir to combine. Simmer a few minutes more. Pile sloppy Buffalo filling onto buns and top with blue cheese and chopped pickles.

- In a small bowl, combine the cornstarch, water, barbecue sauce, hoisin sauce, soy sauce, ginger, garlic and salt until blended; set aside., In a large skillet, saute onion and red pepper in oil until crisp-tender; remove and set aside. In the same skillet, cook beef over medium heat until meat is no longer pink; drain., Stir cornstarch mixture and add to the skillet. Bring to a boil; cook and stir for 1-2 minutes or until thickened. Add coleslaw mix; stir to coat. Spoon meat mixture into the center of each tortilla; top with onion mixture. Roll up tightly.

SLOPPY MIKES
Steps:
- Heat vegetable oil in a large skillet. Add onion and saute for 5 minutes or until somewhat tender. Add beef and garlic continue to saute 10 minutes until beef is cooked. Stir in ground chili and cumin, tomato and chili sauces, corn, water and simmer uncovered for 10 minutes. Season with salt and pepper. Spoon over bread of choice.
- VARIATION FOR ADULTS: Toast bread, top with thin slices of Swiss, Monterey Jack or Cheddar cheese and melt slightly in toaster oven. After hamburger mix is done, separate mixture between two skillets. To adults portion add chopped green chilis or minced fresh jalapeno peppers. Can top with sour cream and slivers of red bell pepper.
SLOPPY SHMOES
Steps:
- Toast coriander seeds in saute pan. Coarsely chop in coffee mill, pepper mill, or with knife. Saute onions in oil until golden. Add garlic for 1 minute. Saute ground meat until browned. Add cumin and seasoning. Add carrots, for 1 minute. Add zucchini and chicken stock. Cook covered for 2 minutes. Add corn and cook for 1 more minute. Top with kashkaval and cook covered, until melted (or put under broiler). Serve open faced on onion roll, Kaiser roll or burger bun, with plenty of ketchup and maybe a pickle.

- In a very large skillet set over medium-high heat, heat the oil. Add the ground turkey, garlic powder, onion powder and paprika, and sprinkle with salt and pepper. Cook, breaking up the turkey with a wooden spoon, until browned through, about 5 minutes. Add the garlic, bell peppers and onions, and season with salt and pepper. Cook until the vegetables soften, about 5 minutes.
- Add the tomatoes, tomato puree, ketchup, brown sugar, mustard, vinegar and Worcestershire sauce. Bring to a boil, reduce the heat to medium low and cook, stirring occasionally, until the sauce thickens, 10 to 15 minutes.
- To serve, divide the meat mixture among the toasted potato rolls.
