Steps:
- Put a large sauté pan over a medium heat and crumble in the beef or turkey. Fry until the meat starts to brown then add the bell pepper and onion. Continue cooking, stirring occasionally, until the veggies start to soften - this should take around 5 to 10 minutes.
- When the veggies are tender, add the tomato purée and stir into the meat, then add the vinegar, brown sugar, honey, mustard and chile powder to the pan and give everything a really good stir. Add the beans, season with salt and pepper, then bring to a boil and cook until the sauce is nice and thick.
- To serve: pile the Sloppy Joe mix onto the bottom of a bun or middle of a wrap, top it with lettuce and close up the sandwich or roll up the wrap.
- Serving suggestions: Delicious served with an Everyday chopped green salad or some Brilliant broccoli.
- Jamie's top tips • Look out for ground beef with around 10% fat - if buying turkey, try to buy the best quality you can afford. Don't buy poor-quality turkey mince. If your grocery store has a meat counter you can ask them to grind the meat for you. • This can be made completely ahead of time and reheated just before serving. If you're reheating Sloppy Joes, add water a little bit at a time to loosen. • If you want to give it a bit of a kick add some more chile powder or even a chopped fresh chile.
- Tips from the dietitian: • Sloppy Joe is a real favorite, but for a healthier version, use lean ground turkey instead of beef - the leaner meat is better for the heart. • Rinsing beans removes some of the salt but you can also look for low-sodium or no-salt-added beans.

- Heat the oil in a deep frying pan, then fry the onion, pepper and garlic for 8-10 mins until softened. Add the mince, breaking it up with a wooden spoon as you go, and stir until it browns all over. Tip in the tomatoes and chipotle, or barbecue sauce, and add a little seasoning. Simmer for 10-15 mins until the sauce has thickened.
- Put the cheese slices on top of the mince and cover with a lid for 2 mins to let it melt into the sauce. Pile into the buns with the crispy onions, and lettuce on the side for scooping up the extra sauce.

- In a large skillet, heat oil over medium-high heat. Add onion, bell pepper, celery, and garlic; season with salt and pepper. Cook, stirring frequently, until vegetables are softened, 5 to 7 minutes.
- Add ground beef to skillet. Cook, breaking up meat with a wooden spoon, until it is no longer pink, 6 to 8 minutes.
- Stir tomato sauce, ketchup, and Worcestershire sauce into beef mixture in skillet. Simmer until thickened, stirring occasionally, 6 to 8 minutes.
- Season the mixture with more salt and pepper, as desired. Spoon onto buns, and serve immediately.

- Add in the green peppers and onions. Stir, and then add 1 cup water, the ketchup and garlic. Stir it around to combine, and then add the brown sugar, chili powder, dry mustard, red pepper flakes, and hot sauce, Worcestershire, salt and pepper to taste. SLOPPY OTTOS (GERMAN VERSION OF SLOPPY JOES)
Because of my German heritage, I try to use the month of October to cook more German-inspired foods. When my sons were younger, they loved sauerkraut and any dish that contained it. This was a favorite of theirs and I liked that it was a one skillet, easy and tasty sandwich. I served it with German potato salad. Yum!!

Steps:
- preheat the oven to 350˚
- fry off the sausage over medium high heat, drain
- reduce the heat to medium and add the chopped pepper, onion and the drained sauerkraut
- cook for 5-10 minutes or until the peppers are no longer crunchy, stirring occasionally
- meanwhile split the rolls and place the bottoms on a baking sheet
- once the peppers are cooked to your liking lay the cheese over the top of the mixture and let it melt slightly, stir to mix it in and then remove from the heat
- divide the mixture between the pretzel rolls, add a top bun
- then bake 4-5 minutes until the rolls are warmed and the cheese finishes melting
- serve while hot

- Pierce the potatoes in a few places with a fork; place on a microwave-safe plate and microwave until tender, turning once, about 15 minutes. Set aside.
- Meanwhile, melt 1 tablespoon butter in a large skillet over medium heat. Add the onion, carrot and celery and cook, stirring occasionally, until the vegetables are tender, about 7 minutes. Add the turkey and 1/4 teaspoon each salt and pepper; cook, breaking up the meat with a wooden spoon, until no longer pink on the surface, about 5 minutes. This is the original sloppy joe recipe that I found on http://theculinarycellar.com/memorial-day-and-a-1940s-recipe/. What is listed below is my updated recipe that tweaks it a bit for my family's tastes. It's now perfect and sooooooooooooooo easy to make. Recipe can be doubled (or more) easily with no worries that the taste will get messed up.

- Brown ground beef in skillet. Drain grease.
- Add salt, onion & green pepper to beef in skillet. Simmer for 10 minutes until sweating and starting to get translucent.
