- Bake potatoes at 425 degrees for about 50 minutes.
- Remove from oven. Sprinkle with cheeses.
- Bake potatoes for another 10-15 minutes until lightly browned, cheeses are melted, and potatoes are soft inside. Check for doneness with a fork.
- To microwave: Prepare potatoes as above, and place in a microwave safe dish or pan.
- Sprinkle with melted butter and herbs.
- Microwave on High power for 10 minutes, rearranging the potatoes after 5 minutes if your microwave does not have an automatic turn table.
- Let rest for 5 minutes.
- Sprinkle with grated cheese and Parmesan cheese.
- Microwave for another 4-6 minutes on High power until cheeses are melted, and potatoes are soft.

- In a sauce pan; melt the butter at low heat.
- When the butter is melted; chop the herbs and garlic and add it to the butter. Let it cook/sit for about 5-10 minutes on very little heat.
- Clean and peel the potatoes.
- At the bottom side of the potatoes make a small horizontal cut. This will make sure the potatoes sits stable on the oven plate.
- On the opposite side; make deep cuts side-by-side into the potatoes. The cuts should be about 2/3 into the potatoes and about 2 mm apart.
- On a parchment paper covered oven plate; place the potatoes side-by-side with the grooves upwards.
- Brush the potatoes with the butter and herb mixture.
- Bake the potatoes for about 60 minutes at 200 C (400 F). The cooking time is depended on the size of the potatoes. The potatoes are done when you can easily stick a fork into them. During the cooking brush the potatoes 2-3 times extra with the herb mixture.

Steps:
- Preheat oven to 425°F Using a sharp kitchen knife, carefully start making a series of vertical cuts width-wise through the potato, making sure not to cut all the way through - cuts should only be 3/4 of the way through the potato. (Considering placing the potato on a wooden spoon, or putting one chopstick on each side of the potato. This way, when you slice, the spoon/chopstick stops the knife from going all the way through.) Rinse the potatoes after slicing them to get ride of excess starch. Place sliced potatoes on a baking sheet slices up, then drizzle top with oil, sea salt and pepper. perhaps small slices of garlic as well. [Optional: Bake for 35 to 40 minutes. Remove from the oven, sprinkle Romano cheese and bread crumbs and season with a little more salt and pepper to taste. Return to the oven, and bake for an additional 20 minutes, or until nicely browned.] Bake for 50 minutes. (Time may vary depending on size of potato and oven.) When they're done you can add some shredded cheese, green onion or any other topping you might like!

- Remove the rosemary leaves from the stem and (optional) using a pestle and mortar, grind the rosemary (which will release flavour and aroma). Add the olive oil to the rosemary and allow to infuse.
- Cut a thin layer off of the bottom of each potato, just enough so they don’t roll. Then cut slits across the potato, around 3-5mm (1/4-1/8th inch) apart, stopping just before you cut through so that the slices stay connected at the bottom of the potato. To make cutting easier, take two wooden spoons, or two chopsticks, and place them either side of the potato. This should prevent you from cutting all the way through.

- Peel potatoes. Place in a bowl of cold water to prevent browning. One at a time, remove potato and place lengthwise on a cutting board. Place a wooden mixing spoon lengthwise along the potato. Using a knife, cut slices across the short side of the potato, about 1/8 inch apart. The wooden spoon will prevent your knife from cutting completely through the potato...potato should remain connected at the bottom. Repeat with the remaining potatoes.
- Place the potatoes cut side up in a baking dish. Drizzle with half the butter, opening slices to ensure that the butter gets into the openings. Season with salt and pepper. Bake for 35-40 minutes.
- Remove from oven and drizzle with the remaining butter. Sprinkle with Parmesan, bread crumbs and thyme, again opening slices to get the ingredients deep into the potatoes. Bake an additional 20 minutes or more, till potatoes are nicely browned and tender.

- Preheat oven to 450° degrees F. Oil a large shallow glass baking dish. Place oven rack in middle of the oven.
- Place the peeled potatoes on a cutting board and cut a narrow 1/4-inch slice from the bottom of each potato; discard the slice (this helps the potato lie flat and not roll).
- Place two long handled wooden chopsticks on each side of the potato lengthwise. Use a sharp knife and slice each potato crosswise, making 1/4-inch apart slices, cutting down vertically. The chopsticks will prevent the knife from cutting entirely through the potato. You need to leave 1/4-inch of the bottom of the potato intact.

- Use a sharp knife to cut slits into the baking potatoes. These should be about half a centimeter apart and go about two-thirds of the way through the potato - it's important that the slits do not go all the way through otherwise the potato will fall apart (although don't panic if you do accidentally, the recipe will still work).
