SKOR BITS PECAN COOKIES

Pre-freezing the Skor bits will prevent them from disappearing while the cookies bake. Recipe is easily doubled. Invest in a small spring loaded ice cream scoop for perfectly shaped cookies. Dough can be frozen in dollops and baked as needed. They also freeze well baked. Avoid using dark non stick cookie sheets. The shiny insulated kind work the best.

1/2 cup margarine, softened
1/2 cup brown sugar
1/2 cup white sugar
1 teaspoon vanilla extract
1 large egg, at room temperature
1 cup all-purpose flour
1 pinch salt
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1 cup rolled quick oats (not instant)
1/2 cup medium unsweetened coconut
1 cup pecan pieces
1 cup pre-frozen Skor English toffee bit

Steps:

  • Preheat oven to 350 degrees F.
  • Cream together margarine, brown and white sugars and vanilla extract until light and fluffy.
  • Add egg and beat well.
  • Sift in flour, salt, baking powder and soda.
  • Stir in oats and coconut.
  • Lastly, stir in pecans and Skor bits.
  • Form into tablespoon sized balls (or use a 1 ounce ice cream scoop) and place a dozen at a time on a shiny baking sheet sprayed with Pam.
  • Do not flatten.
  • Bake for 12 to 14 minutes.
  • Remove immediately to a cooking rack.

1 3/4 cups skor toffee pieces (10 oz)

Steps:

  • Heat oven to 350°F.
  • Lightly grease baking sheet.
  • Stir together flour, baking soda, and salt.
  • In a large bowl, beat together margarine, both sugars, and vanilla until well blended.
  • Add eggs; beat well.
  • Gradually add flour mixture, beating until well blended.
  • Stir in Skor bits.
  • Drop by rounded teaspoons onto cookie sheet.
  • Bake for 9-11 minutes or until lightly browned.
  • Cool slightly, then remove cookies to wire rack.
  • Cool completely.

1/2 cup butter, softened
3/4 cup granulated sugar
3/4 cup packed light brown sugar
1 teaspoon vanilla extract
2 eggs
1 (10 ounce) package Skor English toffee bits (English toffee bits)

Steps:

  • Heat oven to 350 degrees F.
  • Stir together flour, baking soda and salt.
  • In a large mixer bowl, beat butter, granulated sugar, brown sugar and vanilla until well blended.
  • Add eggs and blend thoroughly.
  • Gradually add flour mixture, beating well.
  • Stir in toffee bits.
  • Drop by rounded teaspoonfuls onto a lightly greased cookie sheet (I used ungreased parchment paper).
  • Bake 10 minutes or until lightly browned.
  • Cool slightly, remove from the cookie sheet to a wire rack.
  • Cool completely.

The last time I had these was about two years ago. I was going through my recipe box and found the card. Figured that maybe someone would like to try them. The recipe is from my sister-in-laws daughter.

1 tsp baking soda
1/2 tsp salt
1/2 c butter or margarine soft
3/4 c granulated sugar
3/4 c packed light brown sugar
1 tsp vanilla extract
2 eggs
1 3/4 c skor english toffee bits (10 oz pkg)

Steps:

  • 1. Heat oven to 350 degrees. Lightly grease cookie sheet(s).
  • 2. In a medium bowl stir together flour, baking soda and salt.
  • 3. In a large bowl beat butter, granulated sugar, brown sugar and vanilla until well blended. Stir in toffee bits.
  • 4. Drop by rounded tsp onto prepared cookie sheet.
  • 5. Bake 9 to 11 minutes or until lightly brown.
  • 6. Cool slightly. Remove from cookie sheet to wire rack.
  • 7. Cool completely.
