SEA BASS VERACRUZ
A delicious, light dish with yummy Mexican flavors. A great change to grilled or roasted fish. Mexican rice is a great side for this.

Steps:
- Preheat the oven to 375 degrees F (190 degrees C).
- Combine tomatoes, olives, cilantro, jalapeno, lime juice, and capers together in a bowl. Place flour in a shallow bowl.
- Place fish on a flat work surface and season with salt and pepper. Dredge one side of each fillet in flour.
- Heat oil in a large, ovenproof skillet over medium-high heat. Add fish, flour-side down, and saute for 3 minutes. Transfer to a plate. Stir broth into skillet and scrape the bottom to deglaze. Add 1/2 the tomato mixture. Add onion, garlic, bay leaves, and thyme. Saute 3 minutes more. Nestle fillets into the skillet.
- Place skillet in the preheated oven and roast until fish flakes easily with a fork, 5 to 7 minutes.
- Remove and discard bay leaves. Add remaining tomato mixture to the skillet. Season with salt and pepper. Serve fillets topped with tomato mixture.

WHOLE ROASTED SEA BASS - HOW TO MAKE OVEN BAKED WHOLE FISH
Steps:
- Preheat oven to gas mark 5/190°C (170°C in a fan oven). Wash sea bass inside and out and pat dry with kitchen paper. Make about 3-4 slashes across the flesh of the fish, line a roasting tin with foil and sit fish on it.
- Mix together the olive oil, lemon juice and thyme and season the sea bass with sea salt and freshly ground black pepper. Drizzle all over the fish, tucking into the slashes.
- Put into oven and roast uncovered for about 20-30 mins - the flesh should feel firm to the touch and should be flaky and white. Remove from the oven and leave to rest for 5 mins before serving. To serve, flake the sea bass with a fork and serve with fresh lemon slices and a crisp green salad.

THAI-STYLE CRISPY SEA BASS

- Trim and halve the spring onions, finely shred lengthways and place in a bowl of ice-cold water to crisp up. Pick in the coriander leaves, reserving the stalks.
- Place a large non-stick frying pan on a medium-high heat.
- With a sharp knife, score the sea bass skin at 2cm intervals, then rub all over with the curry paste, inside and out, getting into all the cracks and crannies.
- Pack the coriander stalks into the cavities, season with sea salt and black pepper, then place in the hot pan with 1 tablespoon of olive oil.
- Cook for 3 to 4 minutes per side, or until dark golden and cooked through (depending on the thickness of your fish).
- Drain and shake off the spring onions and coriander and pile on to your plates.
- Sit the sea bass on top, spooning over any spicy oil from the pan. Finely grate over the lime zest, and serve with lime halves, for squeezing over.

SEA BASS WITH SIZZLED GINGER, CHILLI & SPRING ONIONS

- Season 6 sea bass fillets with salt and pepper, then slash the skin 3 times.
- Heat a heavy-based frying pan and add 1 tbsp sunflower oil.
- Once hot, fry the sea bass fillets, skin-side down, for 5 mins or until the skin is very crisp and golden. The fish will be almost cooked through.
- Turn over, cook for another 30 seconds - 1 minute, then transfer to a serving plate and keep warm. You'll need to fry the sea bass fillets in 2 batches.
- Heat 2 tbsp sunflower oil, then fry the large knob of peeled ginger, cut into matchsticks, 3 thinly sliced garlic cloves and 3 thinly shredded red chillies for about 2 mins until golden.
- Take off the heat and toss in the bunch of shredded spring onions. Splash the fish with 1 tbsp soy sauce and spoon over the contents of the pan.

SIMPLE OVEN-BAKED SEA BASS
If you're looking for a simple recipe that really preserves the delicate flavor of sea bass, then I highly recommend you try this one. - Preheat oven to 450F°.
- In a cup, mix garlic, olive oil, salt, and black pepper.
- Place fish in a shallow glass or ceramic baking dish.
- Rub fish with oil mixture.
- (Optional) Pour wine over fish.
- Bake fish, uncovered, for 15 minutes; then sprinkle with parsley or Italian seasoning and continue to bake for 5 more minutes (or until the thickest part of the fish flakes easily).

- Heat oil in a large skillet over medium heat. Saute onions until soft. Stir in garlic, and saute about 1 minute. Add tomatoes, and cook until they begin to soften. Stir in wine, olives, capers, and red pepper flakes. Heat to a simmer.
- Place sea bass into sauce. Cover, and gently simmer for 10 to 12 minutes, or until fish flakes easily with a fork. Transfer fish to a serving plate, and keep warm.

SEA BASS VERACRUZANA
Steps:
- Season the fish fillets with salt and pepper. Heat one very large or two medium sized saute pans over medium high heat for a minute, then add the butter. When the butter is sizzling, add the fillets flesh side down and turn the heat to very high. Sear the fillets until golden brown and flip to sear the other side. Remove fillets from pan and reserve on a rack over a plate to catch juices.
- Return the pan (or pans) to the heat, add the onions and cook, stirring often, over high heat for 2 to 3 minutes. Add the garlic, jalapeno slices, lime wedges, tomatoes, oregano and olives and saute briskly for 1 minute more. Add the white wine and reduce to half. Add the fish stock and bring to a boil, reduce to a simmer and return fish fillets, along with their juices, to the pan. Finish cooking, covered, about 1 to 3 minutes depending upon the thickness of fillets.
- Taste broth and adjust seasoning, then serve immediately in soup plates with a generous puddle of broth and garnish of vegetables on top.
BARBECUED CHILEAN SEA BASS WITH ORANGE

- Rinse the Chilean sea bass with cold water and pat dry with paper towels.
- Set the fish in a shallow dish.
- Stir together the remaining ingredients in a small bowl until well combined, then pour over the fish, turning the fish so that it is evenly coated.
- Cover and marinate in the refrigerator for 1 to 3 hours.
- Preheat a charcoal grill or the broiler.
- Grill or broil the fish about 4 inches from the heat until well browned on one side, 3 to 5 minutes; brush with more marinade and cook on the other side until the fish is no longer opaque in the center, about 5 minutes longer.
- Note: If cooking the Chilean sea bass on a charcoal grill, be sure that the fillet pieces are at least 1 1/2 inches thick to ensure that the fish won't fall apart when it is cooked.
SEA BASS WITH LEMON AND CAPER SAUCE
Steps:
- Preheat oven to 350 degrees F.
- Season sea bass fillets with salt and pepper. In a saute pan, over high heat, add the olive oil and sear fish fillets skin side down first, for 3 minutes or until golden brown. Turn fish over and cook another 4 minutes or until cooked through.
- Meanwhile, prepare the croutons. Melt 2 tablespoons of butter. Toss with bread cubes and transfer to a baking sheet. Bake in oven for 4 minutes or until crisp and golden in color. Transfer to a small bowl and set aside.
- In another saute pan, heat 2 tablespoons of butter. Over high heat, saute the baby vegetables until glazed. Divide into 2 and mound in center of plate. Keep warm.
- Add the remaining 2 ounces of butter to the fillets and baste them with the butter. Place a fillet and the red peppers on top of the vegetables. Sprinkle half of the croutons on top and around each fillet. To butter, add shallots and continue to cook until butter turns brown. Deglaze with lemon juice, and add the lemon pieces, parsley, chives, tarragon, capers, and caper berries. When heated, pour half over and around each fillet. Serve immediately.
- Note: if sea bass is not available, any firm white fish can be substituted.
SEA BASS VERACRUZ (SALLYE)
Even though this dish is healthy, it is also very tasty and can be elegantly plated for those special dinners. This is my tweaked version of a recipe found in Steven Raichlen's Big Flavor Cookbook.

- 1. Season the fish filets with salt, pepper and garlic powder. Place fish in a single layer in shallow dish. Pour the lime juice over the fish and marinate for 15 minutes Preheat oven to 400ºF
- 2. SAUCE: Finely chop onions, garlic and jalapenos in food processor Heat olive oil medium high in heavy skillet (I use my cast iron) Add onion mixture to oil and cook just until onions and garlic begin to brown (do not overbrown) Turn heat to high and add tomatoes. Cook until most of the tomato juices are gone, then stir in capers,jalapeno juice, oregano, bay leaf, cinnamon, cloves and fish stock. Turn heat down and simmer the sauce for 5-8 minutes until it begins to thicken, stirring frequently with wooden spoon. Remove from heat
- 3. Spread one third of the sauce over the bottom of a baking dish. Place the marinated fish filets on top of sauce and spread the balance of sauce over them. Bake the fish for 10 to 15 minutes until it breaks into clean flakes when pressed with your finger. Remove from oven, and discard the cinnamon stick and bay leaf. Optional: Garnish with parsley or cilantro sprigs.
- 4. Can be served directly from baking dish or transferred to serving platter. Serve at once while still hot.
- 5. Good served over a bed of rice.
