1/4 cup sugar or sugar substitute equivalent to 1/4 cup sugar; follow package directions to use product amount equivalent to 1/4 cup sugar)
1/4 cup cornstarch
1 1/2 cups fat-free milk
1 can (12 oz) evaporated fat-free milk
1/4 cup refrigerated or frozen egg product, thawed
3 tablespoons flaked coconut, toasted
1/2 teaspoon vanilla
1/4 teaspoon rum extract or vanilla
2 medium bananas, sliced
1/2 container (8 oz) frozen fat-free whipped dessert topping, thawed
Flaked coconut, toasted (optional)
1 1/3 cups Gold Medal™ all-purpose flour
1/4 teaspoon salt
1/4 cup cooking oil
3 tablespoons fat-free milk

Steps:

  • For filling: In a heavy medium saucepan, stir together sugar and cornstarch. Gradually stir in milk and evaporated milk. Cook and stir over medium heat until thickened and bubbly. Cook and stir for 2 minutes more. Remove from heat.
  • In a medium bowl, gradually stir about 1 cup of the hot mixture into egg. Return all of the egg mixture to saucepan. Cook and stir over medium-low heat for 2 minutes more. Remove from heat. Stir in the 3 tablespoons coconut, the vanilla, and rum extract. Set aside to cool for 30 minutes, stirring occasionally.
  • Arrange bananas in the bottom of the Gold Medal™ Flour Baked Oil Pastry. Pour in cooled filling. Cover surface with plastic wrap. Chill for 4 hours.
  • To serve, spoon whipped topping onto pie and, if desired, top with additional toasted coconut.
  • Gold Medal™ Flour Baked Oil Pastry: Preheat oven to 450°F. In a medium bowl, combine 1 1/3 cups Gold Medal™ all-purpose flour and 1/4 teaspoon salt. Using a fork, stir 1/4 cup cooking oil and 3 tablespoons fat-free milk into flour mixture. If necessary, stir in an additional 1 tablespoon milk to moisten (dough will appear crumbly). Form dough into a ball. On a lightly floured surface, slightly flatten dough ball. Roll dough from center to edge into a 12-inch circle. Carefully roll pastry circle around rolling pin. Carefully transfer pastry to a 9-inch pie plate (pastry will be very tender). Ease into pie plate, being careful not to stretch pastry. Trim pastry to 1/2 inch beyond edge of pie plate. Fold under pastry edge and crimp as desired. Prick pastry all over with a fork. Line with a double thickness of foil. Bake for 8 minutes. Remove foil. Bake for 5 to 6 minutes more or until golden.

3 ounces cream cheese, softened
2 tablespoons sugar, divided
1 (3 1/2 ounce) box banana cream instant pudding
1 1/2 cups milk
3 firm bananas
1 prebaked pie crust
1 1/2 cups whipping cream
1/2 teaspoon vanilla

Steps:

  • In a medium-sized bowl, combine cream cheese with 1/2 tablespoon sugar and stir until smooth; add pudding mix and milk; beat for 1-2 minutes until well blended and thick; set aside for a couple minutes.
  • Slice 2 bananas into bottom of pie crust; whip cream with vanilla and remaining 1 1/2 tablespoons sugar until thick; gently fold 1 cup of the whipped cream into pudding mix; spread filling evenly over sliced bananas in crust; cover pie with plastic wrap placed directly against filling; refrigerate for one hour or until pie filling is firmly set.
  • To serve, slice reserved banana then garnish each slice of pie with it and remaining whipped cream.

Got this from Rumela's website but reworded the recipe to make it a bit clearer. A family member loves Banana Cream Pie for Thanksgiving but has Type 2 Diabetes. I found this as an alternative to the real thing!

2 cups skim milk
4 egg yolks
4 (1/16 ounce) packets Splenda sugar substitute
1 teaspoon banana extract
1 banana, sliced into thin rounds
2 (1/4 ounce) packets unflavored gelatin
1 teaspoon vanilla extract
4 egg whites
1/2 teaspoon cream of tartar
4 (1/16 ounce) packets Splenda sugar substitute
1 teaspoon vanilla extract
1/4 teaspoon nutmeg

Steps:

  • Sprinkle gelatin packets into 1/4 cup of the cold skim milk.
  • Heat remaining skim milk and add the gelatin mixture to it, stirring, over low heat, until dissolved.
  • Beat the egg yolks and add to the warm mixture, stirring constantly.
  • When mixture thickens, add Splenda and remove from heat.
  • Add vanilla and banana extracts and mix.
  • Pour half of this mixture into an 8 inch pie plate.
  • Arrange sliced bananas on top of that and then cover that layer with the rest of the pie mixture.
  • Set aside and prepare meringue topping.
  • In a bowl, beat the egg whites until frothy.
  • Add the rest of the meringue ingredients and beat until stiff.
  • Pile this topping on top of the pie and put under broiler until golden brown, watching carefully not to burn.
  • Remove from oven and chill at least 4 hours before serving.

1 cup flour
1/2 cup butter, softened
1 cup pecans, finely chopped
8 ounces cream cheese, softened
1 cup powdered sugar
12 ounces Cool Whip, divided
3 large bananas
1 (6 ounce) package instant vanilla or 1 (6 ounce) package banana instant pudding
1/2 cup cold milk

Steps:

  • Combine flour, butter and pecans. Press into the bottom and up the sides of a greased 9 inch pie plate.
  • Bake at 350 degrees Fahrenheit for 25 minutes. Cool.
  • Beat cream cheese and sugar together. Fold in 1 cup Cool Whip. Spread over crust.
  • Slice bananas and arrange on top of cream cheese.
  • Whisk pudding mix and milk.
  • Mix in remaining Cool Whip.
  • Spread on top of bananas.

1 (16 ounce) carton nonfat yogurt, no gelatin added
1 (20 ounce) can crushed pineapple, packed in own juice
1 tablespoon unflavored gelatin
1 medium banana, diced
1 tablespoon lemon juice
2 tablespoons powdered sugar
2 tablespoons flaked coconut, toasted
1 (9 inch) prepared graham cracker crusts (I use Graham-Cracker Crust (Microwave).)

Steps:

  • The day before, place in yogurt in a strainer lined with cheesecloth or a yogurt strainer and place in the refrigerator; allowing to drain for 24 hours.
  • Making sure to reserve the liquid, drain the pineapple in a stainer, pressing against sides to remove liquid.
  • Soften the gelatin in 1/4 cup of the pineapple juice for 5 minutes; heat 1/2 cup of the remaining juice; add softened gelatin and stir to dissolve, cool slightly.
  • Sprinkle the banana with lemon juice and toss to coat; place the coconut in a dry skillet and over medium heat toast lightly.
  • Place the yogurt cheese in a medium-sized bowl, gently stir in sugar with a fork or wire whisk; gradually add the gelatin mixture and continue stirring until well blended.
  • Fold in the drained pineapple, bananas and toasted coconut.
  • Pour the mixture into a 9-inch prepared graham cracker crust, chill several hours or until set.

2 cups reduced-fat whipped topping, divided
1 reduced-fat graham cracker crust (9 inches)
4 maraschino cherries, halved
2 tablespoons chopped walnuts, toasted

Steps:

  • Drain pineapple, reserving juice; set pineapple aside. In a small bowl, beat the cream cheese, sugar substitute and 1 tablespoon reserved juice until smooth. Add bananas to remaining reserved juice. Fold 1/4 cup whipped topping into cream cheese mixture. , Drain bananas; arrange half of the slices in the crust. Carefully spread with cream cheese mixture.   • Whisk sugar and cornstarch together in a large bowl. Add egg yolks and vanilla bean seeds. Whisk until mixture is smooth and lightens in color.
  • Heat the milk and cream mixture till it almost boils (you will see small bubbles around the pan's edge). Remove from heat and discard the vanilla pods. While whisking, slowly drizzle a scant cup of the hot liquid into the egg yolk mixture to temper the eggs. Then slowly add the rest of the hot liquid continuing to whisk until smooth.
  • Return the mixture to the stovetop and cook at a medium temperature, whisking constantly, until very thick like pudding. Adjust heat to prevent scorching if needed. Remove from heat and stir a few times till mixture cools to about 140º.
