FOUR SEASONS SKILLET PIZZA

- Preheat the oven to 450 degrees F.
- For the pizza sauce: Add the tomato puree, olive oil, dried oregano, salt, pepper and 1 tablespoon water to a bowl and mix together.
- For the pizza: Heat the olive oil in a large cast-iron skillet over high heat. Season the mushrooms with salt and pepper. Saute on high, tossing and moving them so they cook quickly, until the mushrooms have released their water and have started to brown, 3 to 5 minutes. Remove them to a plate and wipe the skillet carefully with a paper towel.
- To assemble the pizza: Place the pizza crust in the skillet. Spread the pizza sauce over the crust leaving a 1/2-inch border around the edge. Sprinkle with the mozzarella. Imagine the pizza divided into four quadrants representing the seasons.
- For spring: Arrange the artichoke hearts over one quadrant and sprinkle with the fontina.
- For summer: Arrange the tomatoes on a second quadrant cut-side up, placing the mozzarella pearls around them.
- For fall: Arrange the sauteed mushrooms on a third quadrant.
- For winter: Arrange the pepperoni and olives on the last quadrant.
- Transfer the skillet to the oven and bake until the pizza is hot and the cheese is melted, about 10 minutes. Garnish with the Parmesan and basil.
SKILLET FRIED PIZZA WITH ROASTED MUSHROOMS AND CHARRED BROCCOLI RABE PESTO

- For the dough: In a bowl, combine the yeast and warm water. Stir to dissolve the yeast and allow the mixture to rest for 5 minutes. Using a sieve or strainer, "sift" about half of the flour over the yeast mixture and blend until smooth with your hands. Add the salt, pepper and honey and mix to blend. Sift in the remaining flour and mix to blend. Lightly flour a cutting board or flat surface. Turn the pizza dough onto the floured area and knead for 3 to 5 minutes. The flour should feel smooth and the ingredients fully integrated. Add the dough to a lightly oiled bowl. Cover with plastic wrap and let it "rest" in a warm place until it has doubled in volume, about 1 1/2 hours. Press gently on the dough and turn it onto a floured surface. Divide the dough into 4 equal parts, rolling each quarter into a loose ball. Cover with a clean kitchen towel and allow the dough to "rest" for an additional 15 minutes. Flatten each ball, 1 at a time, and roll into a 6-inch round. Make the pesto: In a medium bowl, add the broccoli rabe, 2 tablespoons of the olive oil and salt and the paprika to taste; stir to combine. Heat a large saute pan over high heat and add the broccoli. Keep the heat high, allowing it to brown and char on the edges. When the broccoli rabe is tender when pierced with the tip of a knife, remove from the heat and allow it to cool. Put the broccoli rabe on a cutting board and finely chop. Transfer to a bowl. Put the garlic through a garlic press and add to the bowl. Stir in the Parmesan, 2 more tablespoons of the olive oil and the basil leaves. Taste for seasoning. Cook the mushrooms: In another saute pan, over medium heat, add the mushrooms and a tablespoon of the olive oil. Season with salt and garlic powder, to taste. Cook until they release their water, 8 to 10 minutes.
- Preheat the oven to 400 degrees F. In a cast iron skillet, large enough to hold a pizza round, heat 2 tablespoons of the olive oil over medium heat. When the oil begins to smoke lightly, shut the heat off under the skillet and add 1 of the pizza rounds. Use a spatula to press gently on the top of the round to keep it relatively flat as it cooks. When you see it is slightly brown on the underside, season the top lightly with salt and pepper and flip the round to its second side. Season with salt and pepper. Repeat with remaining dough. Finish the pizzas: Arrange all of the browned rounds on baking sheets and layer with the mozzarella slices, broccoli rabe pesto and a sprinkling of mushrooms. Bake in the oven for a few minutes until the cheese melts. Season with salt and serve.
CHEESESTEAK SKILLET PIZZA

- Preheat the oven to 450 degrees F.
- Heat a 12-inch cast-iron skillet over medium-high heat; add 2 tablespoons of the oil. Add the onions, green peppers and some salt and pepper and cook until the onions are browned and the peppers are tender, about 5 minutes. Add the garlic and cook 1 minute more. Remove to a bowl and set aside.
- Return the skillet to medium-high heat; add 2 tablespoons of oil and the steak. Cook until browned on both sides, about 3 minutes. Remove to a bowl and set aside.
- Wipe out the skillet and add the remaining 2 tablespoons oil. Place the pizza dough in the skillet and carefully stretch it out until it fills the entire skillet (the skillet will be hot). Add the steak, onion mixture, mozzarella and provolone over the top. Bake until the crust is cooked and the cheese is melted and browned, 15 to 20 minutes. Top with the chopped cherry or banana peppers if using.
SKILLET PIZZA DOUGH
You can prepare this skillet pizza dough up to 1 day in advance. Refrigerate the covered bowl of dough and let rise overnight for up to 24 hours. When ready to use, punch down the dough and allow an extra 30 minutes to 1 hour for the second rise in the skillet. For whole wheat dough, use 3/4 cup whole wheat flour and 1 1/2 cups all-purpose flour. You will need a cast iron skillet to bake this dough. Recipe is from Rachael Ray. Rising time is not included in the prep and cooking time.

- In small bowl, stir together the lukewarm water, yeast and sugar.
- Let stand until foamy, 3-5 minutes.
- Using a standing mixer, mix the flour and salt at a low speed.
- Mix in the yeast mixture and olive oil until a shaggy dough forms.
- Change to the dough hook attachment and mix at medium speed until smooth, about 6 minutes.
- Transfer the dough to a greased, large mixing bowl, turning to coat; cover with plastic wrap and let rise until doubled in size, 45 minutes to 1 hour.
- Punch down the dough before using.
- Press the pizza dough into a greased 9-inch to 10-inch cast-iron skillet and let rise until double in size, 20-30 minutes.
- Preheat the oven to 400 degrees.
- Top about 1 T additional olive oil over the dough.
- Top pizza dough with your favorite pizza toppings, leaving a 1/2-inch border (do not add the cheese yet).
- Bake until golden and bubbly, about 25 minutes.
- Sprinkle the cheese and any seasonings you might like on top and bake until the cheese is melted, about 5 minutes.
- Let cool in pan for about 20 minutes before serving.
- This will make one 9 to 10-inch skillet pizza dough.

HOT SKILLET PIZZA
I stumbled upon this recipe in this months issue of Everday with Rachel Ray. You have to use a cast iron skillet with this recipe to get the full results of a light golden and crispy crust. The dough is a snap to put together, and you can vary your toppings. If you would like you can use 3/4 cup whole wheat flour and 1 1/2 cups all purpose flour (intead of 2 1/4 cups all purpose flour) this will give the crust a healthier twist. I usually use white whole wheat flour. This recipe will make you think outside of the box when it comes to pizza making....and a reason to buy a cast iron skillet if you do not have one already.

- For the dough:.
- In a small bowl, stir together the luke warm water, yeast and sugar. Let stand until foamy about 3 to 5 minutes.
- Using a standing mixer with the dough hook attachment, mix the flour and salt at low speed. Mix the yeast mixture along with the olive oil. And let the mixer run at medium speed for about 6 minutes or until dough is smooth.
- Transfer the dough to a greased large mixing bowl, turning to coat; cover with plastic wrap and let rise for until doubled about 45 to 60 minutes. Punch down dough before using.
- Putting the pizza together:.
- Press the dough into a greased 9 to 10 inch cast iron skillet, and let rise until doubled in size about 20-30 minutes.
- Preheat the oven for 400 degrees F. In a medium skillet heat 1 tbls olive oil over medium heat. Add the garlic and cook, stirring for 1 minute. Add the tomatoes season with salt and balck pepper and cook for 1 more minute. Remove from heat and cool a few minutes. Discard the garlic.
- Drizzle the remaining olive oil over the dough; spoon the tomato mixture on top, leaving a 1 inch border. Bake until golden and bubbly about 25 minutes. Sprinkle the cheese, crushed red pepper and oregano on top and bake until the cheese melts, about 5 minutes. Let cool in pan for 20 minutes before serving.

SKILLET PIZZA CRUST
An easy way to prepare pizza crusts and freeze for later. Of course, you could use them immediately! I like this recipe b/c as a "single babe"... I'm mostly cooking for one these days and like being able to pull an individual-size pizza crust out of the freezer for a quick dinner... or when I have unexpected company!

- In a 2 c measuring cup or sm bowl, combine yeast, sugar and 3/4 c warm water; let stand 5 minutes.
- Combine yeast mixture, flour, salt, water, and oil in lg bowl, stirring til well blended.
- Turn out dough onto floured surface; knead 5 minutes.
- Place in bowl coated w/ cooking spray, turning to grease top. Cover and let rise in a warm place (85 degrees), free from drafts, 30 mins or til dough is doubled in bulk.
- Punch dough down; knead 4 - 5 times.
- Divide dough into 6 equal portions; roll each into 8" circle.
- Cook each round on each side in a non-stick 8" skillet coated w/ cooking spray over med heat about 2 mins per side or til dough rounds are lightly browned.
- Cool crusts and freeze in an air-tight container up to 6 months.
- TO MAKE PIZZA: Place frozen crusts on baking sheets; spread w/ 1/4 c pasta sauce and sprinkle w/ favorite toppings.
- Bake at 425 for 12 - 15 minutes or til edges are lightly browned and cheese melts.
- FOR EXTRA FLAVOR: I like to add Italian seasoning/spices to the crust for extra flavor.
EASY CAST-IRON SKILLET PIZZA
This came out well and was so easy to make. Kids loved it! I used a 10" Skillet in this recipe. The pre-made pizza dough I like best is from the Chef Boyardee Pepperoni Pizza Maker kit because it can sit in my cupboards a long time. It comes with enough to make 2 pizza doughs. All you have to do is add water, let it sit a bit and it's ready to go! However, I've seen pizza dough ready to go made at your local grocery stores and other various ways. This is just a super easy method to get some really good pizza for the family. The skillet cooking method gives it a professional taste like you would get in a restaurant. I really enjoy it.

- Put cold skillet on cold burner. Add the olive oil, italian seasoning, salt and pepper coating the bottom of the skillet.
- Spread the ready dough to the edges of the skillet filling it around with the dough. Some of the oil might come up around the top, thats cool. Let the dough rise for about 5 minutes.
- Add your sugar to the tomato sauce or spaghetti sauce. If you are using only plain tomato sauce, add some of that italian seasoning in there and a little bit of oil and salt.
- After the 5 minutes, coat the top of the dough with the sauce. I like a lot of sauce, so I make sure the top layer is coated well. You probably won't use the entire 12oz. I'm not sure cause I don't know the size of your skillet. Mine is a 10" wide skillet.
- Turn on your oven broiler. When the broiler is hot and ready. Turn on the burner under the skillet to medium high heat and set a timer for 5 minutes. You'll notice the dough start to bubble a little bit, but we won't be cooking it here for long. It's just to get it started and to get that bottom nice and brown. Start adding your cheese and toppings. NOTE: It might be easier to use chunks of mozzarella vs shredded because it will take longer to melt and allow the dough to cook properly without over burning the cheese. So keep the cheese cold in the fridge until you're ready to use it.
- After the 5 minutes on the burner we are going to transfer the skillet to the oven under the broiler. My pizza was in there approximately 5 minutes. You'll want to watch your pizza and use a knife to see how well your dough is cooked on the bottom and sides. When it's nice and brown and the top is nice and golden, take it out. Let the pan cool for a bit and then transfer your pizza to another cooler surface so it stops cooking.
- Salt and sugar can be adjusted to your needs and preference. It's not a big deal. Its' pizza. It's hard to screw up. Just keep an eye not to burn it!
