1/4 cup plus 2 tablespoons extra-virgin olive oil, divided
1 1/2 teaspoons coarse salt, divided
1/4 cup finely sliced scallions (from 4 scallions)
1 1/2 teaspoons minced garlic (from 3 small garlic cloves)

Provided by Michael Chiarello : Food Network

Categories     side-dish

Time 25m

Yield 4 servings

Number Of Ingredients 12

2 tablespoons olive oil
1 tablespoon minced garlic
4 cups corn kernels, from about 5 ears corn
2 cups Damn Hot Peppers alla padella, recipe follows
2 tablespoons unsalted butter
1/4 cup thinly sliced fresh chives
Sea salt, preferably gray salt, and freshly ground black pepper
2 tablespoons extra-virgin olive oil
1 pound green bell peppers, halved, seeded and cut into pieces that are 1-inch
2 jalapenos, cut into 1/8-inch slices
2 teaspoons gray salt, and more if needed
1 cup fresh tomato puree (peel, seed and puree one pound ripe tomatoes in a food processor)

Steps:

  • Heat a large skillet over high heat. Add the olive oil, then the garlic. Saute until the garlic is lightly browned. Add the chiles and saute briefly to release their character. Add the corn and cook briskly, stirring often, until partially cooked, about 3 minutes. Add the damn hot peppers then simmer, stirring, until the corn is just tender, about 2 minutes.
  • Remove from the heat, whisk in the butter, and stir in the chives. Season with salt and pepper. Transfer to a serving bowl and serve immediately.
  • In a non-reactive saucepan, heat the oil. When the oil is hot add the bell peppers, jalapenos, and gray salt. Cook over medium-high heat for about 15 minutes or until the peppers are partially tender. Stir from the bottom from time to time, adjusting the heat as necessary so that they don't brown. There will still be some liquid left in the pot.
  • Add the tomatoes, lower the heat to simmer and continue to cook for about 30 minutes to reduce the tomato juice and finish cooking the peppers. Add additional salt if needed. Serve warm or room temperature.

CHARRED CORN SALAD WITH BASIL AND TOMATOES

Charred Corn Salad With Basil and Tomatoes image

This is best made with corn charred on the grill.....but if you don't have one or the weather isn't cooperating, you can use a cast-iron skillet. Simply cut the kernels from the cob and char with 1 tbsp olive oil in the skillet on the stove top. From Bon Appetit.

Provided by breezermom

Categories     Corn

Time 27m

Yield 8 serving(s)

Number Of Ingredients 9

12 ears corn, husked
6 tablespoons olive oil, divided
1 cup red onion, thinly sliced
2 large tomatoes, chopped
1 cup fresh basil leaf, large leaves torn, loosely packed
1/3 cup fresh lime juice (add more if you love it!)
2 tablespoons fresh thyme, chopped
kosher salt
black pepper, freshly ground

Steps:

  • Build a medium-hot fire in a charcoal grill, or heat a gas grill to high.
  • Rub the corn with 1 tbsp oil. Grill, turning frequently, until the corn is charred and heated through, 10-12 minutes. Remove from the grill; when cool enough to handle, cut the kernels from the cob and transfer to a large bowl.
  • Place the sliced onion in a strainer and rinse with cold water to mellow its flavor. Drain well.
  • Mix the onion, remaining 5 tbsp olive oil, tomatoes, basil, lime juice, and thyme into the corn. Season with salt and pepper. Add more lime juice if desired.
  • Can be made 1 hour ahead, but serve at room temperature.
