CHICKEN BROCCOLI ZITI
This creamy Chicken Broccoli Ziti cooks in one pan for easy clean up. Ready in 30 minutes! This healthy pasta recipe is lighter but doesn't skimp on flavor.

- Heat 1 tablespoon butter and 1 tablespoon oil in a large, deep skillet or Dutch oven over medium high. Once the butter is melted, add the chicken and sprinkle with ¼ teaspoon salt and black pepper. Saute until the chicken is golden on the outside and completely cooked through, about 5 minutes. With a large spoon, remove the chicken to a plate and cover to keep warm. Set aside.
- Reduce the heat to medium. Add the remaining 2 tablespoons butter and the onion. Cook until the onion begins to soften, about 3 minutes. Do not let the onion brown (adjust the heat as needed if it starts to brown). Add the garlic, Italian seasoning, red pepper flakes, and remaining ¼ teaspoon salt. Stir and cook just until fragrant, about 30 seconds.
- Slowly stir in the broth and milk. Bring to a boil, then add the ziti. Let the ziti boil for 5 minutes, then stir in the broccoli florets. Continue boiling until the ziti is al dente, about 5 to 7 minutes more. Stir often to make sure the ziti cooks evenly. If at any point the pasta looks too dry, splash in additional milk as needed.
- Stir in the artichoke hearts, lemon juice, Parmesan, parsley, and reserved chicken. Taste and adjust seasoning as you like. Enjoy hot, with a sprinkle of extra Parmesan and parsley as desired.

- 1. Season chicken with salt and pepper. Heat 1 tbs. oil in skillet. Add chicken and cook until most pink has disappeared, stirring a few times. Remove chicken and put in a bowl, set aside. Do not drain.
- 2. Add other tbs of oil to pan and onion and 1/2 tsp salt. Stir often until onion is translucent and softened. Stir in garlic oregano and pepper flakes. Cook 30 seconds until fragrant.
- 3. Add pasta (I like ziti, penne or rigatoni) and 2 cups of water and the can of broth. Bring to a boil and continue to cook over high heat until liquid becomes thick and syrupy. It will almost be absorbed in 12-15 minutes.
- 4. Add broccoli, sundried tomatoes and final 3/4 cup of water. Cover and reduce heat to medium. Cook until broccoli is bright green and almost tender. 3-5 minutes.
- 5. Uncover and return to high heat. Stir in cream and 1/2 Asiago cheese and reserved chicken and juices. Simmer uncovered to cook chicken all the way through and thicken sauce. Roughly 2 minutes. Stir in fresh lemon juice and season with salt and pepper to taste.

- Season chicken with salt and pepper.
- Melt 1 tbs butter in 12-inch skillet over medium heat. Add chicken and cook until it is lightly browned but not fully cooked, about 4 minutes. Transfer chicken to a bowl.

- Reduce heat to medium low and stir in the broccoli and roasted red peppers. Cover and continue to simmer, stirring occasionally, until the past begins to soften and the broccoli turns bright green, about 8 minutes. (If the sauce reduces too much you could add more milk and broth).
- Stir in the chicken and any accumulated juice. Cover and continue to simmer until the chicken is cooked through, about 3 minutes longer.
- Stir in the remaining 1 tbs butter, Parmesan, and lemon juice. Season with salt and pepper to taste.

- In a medium saucepan, melt the butter over medium heat. Add the flour and stir just until mixed.
- Add the evaporated milk, regular milk and chicken broth and cook, stirring often, until the sauce thickens and begins to simmer.
- Remove from heat and add the Asiago cheese, stirring just until the cheese melts smoothly into the sauce. Set aside.
- Heat the olive oil in a large, preferably non-stick, skillet. Add the cubed chicken, parsley and garlic, and continue to cook, stirring frequently, until the chicken is opaque and cooked through - 8 to 10 minutes. Add the Asiago sauce and season with salt and pepper. Stir to combine.
- Meanwhile, cook the bow tie pasta in a large pot of boiling salted water until tender but not mushy.
- Drain well in a colander, then return pasta to the pot and add the chicken and Asiago sauce. Toss to combine and serve immediately, with additional grated Asiago cheese sprinkled on top, if desired.
- If making ahead, transfer the sauce to a covered container and refrigerate. When you are ready to serve dinner, place sauce in a large saucepan and heat very gently over low heat, stirring often. Don't let it boil.

- Season chicken thighs on both sides with 1 teaspoon salt and 1/2 teaspoon pepper. In a large, heavy skillet (preferably cast-iron or stainless steel), heat olive oil over medium-high. Cook the chicken, skin-side down, until golden brown, about 7 minutes. Flip and cook until golden on the other side, about 5 minutes more. Transfer chicken to a plate and set aside.
- Decrease heat to medium, add butter and lemon slices, and cook until the lemons release their juices and start to brown, 1 to 2 minutes. Transfer to the plate with the chicken.
