1/4 cup grape jelly
24 small frozen fully cooked meatballs (about 1 lb.)
24 drained canned pineapple chunks in juice (about 1/2 of 20-oz. can)
1 large red pepper, cut into 24 pieces

Steps:

  • Cook barbecue sauce and jelly in large skillet on medium heat 2 min. or until jelly is melted and mixture is well blended, stirring frequently.
  • Add meatballs; cook 10 min. or until heated through, stirring occasionally.
  • Thread 1 meatball onto each of 24 wooden skewers or toothpicks alternately with 1 each pineapple chunk and red pepper piece.

5 slices shredded cheddar cheese, quartered
½ head Simple Truth Organic™ Butter Lettuce, cut into 1" squares
9 cherry tomatoes, halved
6 red onions
18 slices dill pickle
Simple Truth™ No Sugar Added Ketchup
2 Simple Truth™ Avocados, pitted
¼ cup Simple Truth™ Organic Whole Milk Greek yogurt
2 tablespoons mayonnaise
1 clove garlic
2 tablespoons lime juice
½ teaspoon kosher salt, or to taste

Steps:

  • In a large bowl, mix the Simple Truth™ ⁹⁰⁄₁₀ Ground Beef with the Worcestershire sauce, salt, pepper, garlic powder, and shallot until just combined.
  • Divide the beef mixture into 18 balls (about 1-1½ tablespoons each) and flatten into ½"-thick patties.
  • Using a 2-2½" ring cookie cutter, cut each side of the slider buns into small rounds.
  • Heat a large frying pan over medium-high heat. Toast the buns, cut sides down, for 20 seconds, or until golden brown. Set aside.
  • Heat the olive oil in the same skillet. Working in batches, add the beef patties and cook for 90 seconds. Flip and reduce the heat to medium. Place a quarter slice of cheddar on top of each patty and cook for 90 seconds more, or until the cheese is melted and the patties are cooked through. Remove from the pan and repeat with the remaining patties and cheese.
  • Make the avocado dip: In a blender, combine the avocado flesh, Greek yogurt, mayonnaise, garlic, lime juice, and salt. Blend on high speed for 1-2 minutes, until smooth. Season with more salt to taste.
  • Assemble the skewers: Thread a toasted bottom bun onto a skewer, followed by a beef patty, a piece of lettuce, a tomato half, a piece of red onion, and a pickle slice. Repeat stacking the ingredients from the beef patty to the pickle 2 more times, then finish with a top bun. Repeat to make 5 more skewers.
  • Serve the skewers immediately with the avocado dip and Simple Truth™ No Sugar Added Ketchup for dipping.

1 large egg yolk, beaten
1/2 pound lean ground beef
2 tablespoons grated onion
1/2 teaspoon salt
Dash pepper
6 slices bread
24 cubes cheddar cheese (1/2-inch cubes)

Steps:

  • In a bowl, combine egg yolk, ground beef, onion, salt and pepper. Shape mixture by teaspoonfuls into 24 balls. Remove crusts from bread; roll flat and cut into 1-1/2-in. rounds. Place meatballs on bread rounds; make a depression in each ball and fill with a cube of cheese, making sure bread is covered with meat mixture. , Place on a baking sheet. Broil in preheated oven about 6 in. from heat for 3-5 minutes or until no pink remains. Garnish with ketchup, mustard, sliced green onions or sliced dill pickles if desired.

2 slices thick-cut bacon
9 ounces ground beef
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
2 to 3 splashes Worcestershire sauce
1 clove garlic, pressed
3 slices Cheddar, quartered
1/4 cup baby spinach leaves
12 dill pickle chips
2 tablespoons your favorite burger condiment
3 cherry tomatoes, halved

Steps:

  • Heat a skillet with a lid over medium heat. Add the bacon and cook, turning occasionally, until crisp, about 12 minutes.
  • Meanwhile, mix together the ground beef, salt and pepper, Worcestershire sauce and garlic in a small bowl until well combined. Divide the mixture into 6 equal mini patties. Set aside.
  • Remove the bacon from the skillet and set aside. Add the burger bites and cook until well browned all over and cooked through, 4 to 5 minutes per side. Add 2 of the quartered pieces of cheese to the top of each bite and cover the skillet with the lid. Allow the cheese to melt, 1 minute. Remove the bites to a plate.
  • Tear each bacon piece into bite-size pieces. Start building up the bites by placing a piece of bacon on top of each patty, then a couple of folded leaves of spinach, a couple of pickles, a dollop of your favorite burger condiment, and a half a tomato, securing it all with a toothpick or small skewer. Repeat with the remaining ingredients until all the bites are built, and serve.

2 Tbsp. plus 1 tsp. light corn syrup, divided
6 drops yellow food coloring
12 drops red food coloring, divided
4 oz. (1/2 of 8-oz. pkg.) PHILADELPHIA Cream Cheese, softened
18 vanilla creme-filled chocolate sandwich cookies, finely crushed (about 1-1/2 cups)
2 pkg. (4 oz. each) BAKER'S Semi-Sweet Chocolate, broken into pieces
1 tsp. water
48 vanilla wafers
2 tsp. sesame seed
1/2 cup BAKER'S ANGEL FLAKE Coconut
2 drops green food coloring

Steps:

  • Melt white chocolate as directed on package; let stand 30 min., stirring occasionally. Stir in 2 Tbsp. corn syrup until blended. (Mixture will resemble consistency of dry mashed potatoes.) Cover; let stand at least 4 hours or overnight. (It is normal for some cocoa butter to separate out upon standing.)
  • Knead white chocolate mixture 3 min. or until smooth and pliable (Mixture will be stiff.) Divide chocolate mixture in half. Knead yellow food coloring and 1 drop red food coloring into one half. Roll out to 9x6-inch rectangle; cut into 24 (1-1/2-inch) squares for the cheese slices, re-rolling scraps as needed.
  • Knead remaining red food coloring into remaining white chocolate mixture. Roll out to 7-1/2x5-inch rectangle; cut into 24 (1-1/4-inch) rounds for the tomato slices, re-rolling scraps as needed. Cover "cheese" and "tomato slices" with plastic wrap; let stand at room temperature until ready to assemble "sandwiches."
  • Mix cream cheese and cookie crumbs until blended; shape into 24 (1-inch) balls. Flatten to 1-1/2-inch rounds for the burgers. Freeze 10 min. Meanwhile, melt semi-sweet chocolate as directed on package.
  • Dip "burgers" in chocolate; place in single layer in shallow waxed paper-lined pan. Refrigerate 1 hour or until firm. Meanwhile, mix water and remaining corn syrup; brush onto tops of 24 wafers for the tops of "buns." Sprinkle with sesame seed. Place coconut in large resealable plastic bag. Add green food coloring; seal bag. Shake to evenly tint coconut to resemble shredded lettuce.
  • Place plain wafers, flat-sides up, on serving plate. Cover with remaining ingredients to resemble burgers as shown in photo.

1 pound ground beef
1 (1 ounce) package dry onion soup mix
½ cup dried minced onion
¾ cup mayonnaise
1 cup shredded Cheddar cheese
2 (8 ounce) packages dinner rolls
1 (16 ounce) jar dill pickle slices, drained

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Line a medium baking sheet with aluminum foil.
  • In a medium skillet over medium high heat, stir together ground beef, dry onion soup mix and dry minced onion. Cook until beef is evenly brown. Remove from heat, drain and stir in mayonnaise and Cheddar cheese.
  • Slice tops off the dinner rolls. Arrange the rolls on the baking sheet. Spoon some of the ground beef mixture onto each roll. Garnish with pickle slices. Place tops back on rolls.
  • Tightly wrap the baking sheet with aluminum foil. Bake in the preheated oven 20 minutes.
