This is an awesome recipe that I got from my coworker. It can be modified in many ways, including for the slow cooker. It's a simple meal of things you often already have on hand that really sticks to the bones, and it can also be a fun way to use up some leftovers.

1 pound ground beef
salt and ground black pepper to taste
1 pinch garlic powder, or to taste
1 pinch onion powder, or to taste
1 (10.75 ounce) can cream of mushroom soup
2 (15 ounce) cans green beans, drained
5 cups mashed potatoes
2 cups shredded Cheddar cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Cook and stir ground beef in a large skillet over medium heat until browned and crumbly, about 10 minutes; season with salt, black pepper, garlic powder, and onion powder. Drain excess grease. Stir cream of mushroom soup and green beans into ground beef and bring to a simmer.
  • Spread ground beef mixture into a 9x13-inch casserole dish. Spread mashed potatoes evenly over ground beef mixture. Sprinkle Cheddar cheese over the top.
  • Bake in the preheated oven until heated through, about 20 minutes.

3 large russet potatoes (about 2 pounds), peeled and coarsely diced
Kosher salt
3/4 cup sour cream
1 large egg
Freshly ground black pepper
1/2 bunch scallions, green parts only, sliced
4 tablespoons unsalted butter
2 carrots, finely diced
2 ribs celery, finely diced
1 onion, finely diced
1 pound ground beef substitute (such as soy crumbles)
2 tablespoons all-purpose flour
1 cup porter beer, at room temperature
1 cup vegetable stock, warmed
1/2 cup frozen corn
1/2 cup frozen shelled edamame
2 tablespoons vegetarian steak sauce
1 to 2 teaspoons garlic powder
1/4 to 1/2 teaspoon red pepper flakes
Kosher salt and freshly ground black pepper

Steps:

  • Preheat the oven to 400 degrees F. Make the potatoes: Put the potatoes in a large saucepan and cover with cold salted water. Bring to a boil. Cook until the potatoes are tender, 12 to 14 minutes. Reserve 1 cup of the cooking water, then drain and place the potatoes in a stand mixer fitted with the whisk attachment.
  • Combine the sour cream and egg, then add to the potatoes; season with a pinch of salt and 1/2 teaspoon pepper. Whip, adding 1/4 cup of the reserved cooking water at a time, until smooth and fluffy, 2 to 3 minutes. Taste and adjust the seasoning as needed. Fold in all but 1 tablespoon of the scallions and set aside.
  • Make the filling: Melt the butter in a large cast-iron skillet over medium heat. Add the carrots, celery, onion and beef substitute and saute until tender, 4 to 6 minutes. Sprinkle the flour over the top and saute to cook off the flour flavor, about 1 minute. Whisk in the beer and stock until combined. Stir in the corn, edamame, steak sauce, garlic powder and red pepper flakes until combined. Bring the mixture to a simmer and cook to reduce the liquid by one-third, 2 to 4 minutes. Remove from the heat and season with salt and pepper.
  • Fill six 4-inch cast-iron skillets (or ramekins) halfway with the filling. Divide the mashed potatoes among the pans. Place the skillets on a baking sheet and bake until the mashed potatoes start to brown and the sauce is bubbly, 20 to 25 minutes. Top with the remaining scallions.

4 tablespoons unsalted butter
2 carrots, finely diced (3/4 cup)
2 stalks celery, finely diced (3/4 cup)
1 medium onion, finely diced (1 1/2 cups)
1 pound ground beef substitute or lean ground beef (90/10 ratio)
2 tablespoons all-purpose flour
1 cup porter beer, at room temperature
1 cup vegetable stock, warmed
1/2 cup frozen corn
1/2 cup frozen peas
1 tablespoon Worcestershire sauce (see Cook's Note)
2 teaspoons garlic powder
1/2 teaspoon crushed red pepper flakes
Kosher salt and freshly ground black pepper
Pepper Jack Mashed Potatoes, recipe follows
3 large russet potatoes, peeled and coarsely diced (about 2 pounds or 5 cups total)

4 ounces cream cheese
4 ounces pepper Jack cheese, shredded

1/2 bunch scallions, greens only, sliced

Steps:

  • Preheat the oven to 400 degrees F.
  • Melt the butter in a large cast-iron skillet set over medium heat. Add the carrots, celery and onions, and cook, stirring occasionally, until tender, 3 to 5 minutes. Add the ground beef and cook, stirring occasionally, until no longer pink, 5 to 7 minutes. If using ground beef substitute, cook until warmed through, about 2 minutes. Sprinkle the flour over the top and cook, stirring, until the flour flavor cooks off, about 1 minute. Whisk in the porter and stock, scraping up the browned bits from the bottom of the skillet, until combined. Stir in the corn, peas, Worcestershire, garlic powder and red pepper flakes until combined. Bring the mixture to a simmer and cook to reduce the liquid by one-third, 3 to 5 minutes. Remove from the heat and season with salt and pepper.
  • Fill five 5-inch cast-iron skillets halfway with the filling. Top with the mashed potatoes and spread evenly. Alternatively, use a 10-inch cast-iron skillet and fill halfway with the filling and top with the mashed potatoes. Place the skillets on a rimmed baking sheet and bake until the mashed potatoes start to brown and the sauce is bubbly, 20 to 30 minutes.
  • Place the potatoes in a large saucepan set over medium-high heat, then cover with cold water and season with salt. Bring to a boil and cook until the potatoes are tender, 10 minutes. Drain and transfer the potatoes to the bowl of a stand mixer fitted with the paddle attachment. Add the sour cream, cream cheese, pepper Jack and some salt and pepper, and mix until fluffy. Taste and adjust the seasoning as needed. Fold in the sliced scallions and enjoy!

I got this recipe from a friend of mine years and years ago. It's one of my DH's favorites. It's been a while since I made it though, so I'm guessing at the time to bake.

10 potatoes (for mashing)
1 lb ground beef
1 (10 ounce) can creamed corn

Steps:

  • Make mashed potatoes using the 10 potatoes. I boiled my potatoes, drain and then mash wtih butter and milk to a smooth consistency.
  • While the potatoes are cooking, brown the ground beef until thoroughly cooked. Drain and rinse off grease.
  • Grease a casserole or baking dish with butter or spray with Pam.
  • Once potatoes are mashed, line the bottom and sides of the casserole dish with a little under 2/3 of the potatoes. Make it look like a crust.
  • Mix together the ground beef and creamed corn. Pour into the casserole as the filling.
  • Top the filling with the remaining mashed potatoes, spreading to the sides and having it meet the "crust".
  • Bake in a 400 degree oven until the top is lightly browned - about 30 to 45 minutes.

1 ⅜ cups water
1 pound ground beef
1 (10.75 ounce) can condensed cream of mushroom soup
½ cup chopped green onion
1 tablespoon Worcestershire sauce
1 teaspoon soy sauce
¼ teaspoon ground black pepper

Steps:

  • In a medium saucepan, bring water and brown rice to a boil. Reduce heat, cover and simmer for 45 to 50 minutes.
  • Meanwhile, in a medium skillet over high heat, brown the ground beef and drain fat.
  • Stir the mushroom soup, green onion, Worcestershire sauce, soy sauce and pepper into the skillet with the beef. Simmer on medium low heat for 10 minutes. Serve over the rice.

2 medium onions, chopped
2 lbs lean ground beef
2 large carrots, thinly sliced
1 cup fresh mushrooms, thinly sliced
1 teaspoon Worcestershire sauce
1 (14 1/2 ounce) can beef broth
1 tablespoon cornstarch
1/8 teaspoon nutmeg
paprika (optional)

Steps:

  • Preheat oven to 400 degrees F.
  • Cook potatoes in boiling salted water until tender, about 20 minutes.
  • Drain potatoes and mash
  • add 2 tbsp. of the butter and enough milk to have a firm but not runny consistency.
  • Season potatoes with salt and pepper to taste.
  • Heat 1 tbsp. butter in saute pan; add onion, and saute for 5 minutes.
  • Add ground beef, and cook until beef is lightly browned; drain off any excess fat.
  • Add carrots and mushrooms to beef and cook until tender, about 10 minutes, adding 1-2 tbsp. water to keep beef from drying out, as needed.
  • Add Worcestershire sauce.
  • Stir together and add beef broth and cornstarch; bring all to a boil, stirring constantly.
  • Add nutmeg.
  • Remove from heat.
  • Place meat mixture into ovenproof casserole dish; cover with mashed potatoes.
  • Sprinkle with paprika if you like.
  • Bake at 400 degrees for 25-30 minutes, or until potatoes are light golden.
  • Serve.

This is an even simpler recipe that I grew up with (I've looked at the other recipes for Poor Man's Pie and Sugar Cream Pie - the other name for this type pie.) My grandmother's recipe was a 2-2/3-3 formula. It was called Poor Man's Pie because farmers always had the ingredients handy.

2/3 cup sugar (you can use white or brown, but Grandma always used white.)

  • Mix the cream, sugar, and flour.
  • Pour into an unbaked 8" pie shell.
  • Float several thin pats of butter on top.
  • Sprinkle with ground nutmeg.
