SIX-LAYER DINNER
I originally came across a five-layer version of this dish at a Home Extension program. I increased the ground beef and added the celery myself, and my family prefers this version.-Charlotte McDaniel, Williamsville, Illinois

Steps:
- In a Dutch oven, cook beef over medium heat until no longer pink; drain. Layer beef with onions, potatoes and green pepper, seasoning each layer lightly with salt and pepper. Top with celery, tomatoes and basil. , Bring to a boil. Reduce heat; cover and simmer for 1 hour or until vegetables are tender.

Steps:
- Partially cook sausage and drain off fat.
- Place sausage in 2 quart casserole and cover with layers of rice, potatoes, onions and carrots. Add tomatoes with juice. Add tomato juice until it comes up about half-way on the layers. Combine salt, pepper and sugar and sprinkle over top.
- COVER casserole and bake at 350 degrees for 1 1/2 to 2 hours.
- Add some water or tomato juice while cooking if casserole seems too dry.

- In a buttered casserole dish, place ingredients in alternate layers, starting with the hamburger and ending with the tomatoes.

- Sprinkle each layer with salt and pepper before adding the next layer. Place potatoes in the bottom of the casserole. Add the layer of celery. Add the layer of hamburger. Add the layer of onions. Add the green pepper.

SIX-LAYER DINNER
This is one of my more obscure comfort foods. It's a recipe that's no longer included in Betty Crocker cookbooks. The original called for a greased casserole (I don't find that necessary, because of the hamburger), 2 cups of celery (sorry, my first job was in a Chinese Restaurant - took me years to be able to eat cooked celery again at all), a measured total of salt (2 tsp.) and pepper (1/4 tsp.), and a garnish of green pepper on top. But this is how *I* make it:

SOUPER SIX LAYER CASSEROLE
This recipe is the perfect way to use up leftovers- and the taste is so good, there won't be any others to speak of!

Steps:
- Grate or finely chop the carrot, celery, onion and garlic and saute in olive oil until tender. (I like them grately finely so they are "hidden" in this dish!).
- Mix the cooked veggies with your chicken and layer on the bottom of a greased casserole dish.
- Next, sprinkle in the ham and on top of the ham spread out the cheese slices.
- Combine soup and milk and pour over the top.
- Spread the stuffing on top of this, cover and place in a 350 degree oven for 20 minutes.
- Add mashed potatoes to the top in dollops, top with salt, pepper and paprika and bake uncovered an additional 10 minutes.
- Let rest 10 minutes before serving.
