BAKED RICE WITH CHICKEN & CHORIZO

Quick to prepare, this is a brilliant recipe to whack in the oven while you get on with other things.

1 onion
2 cloves of garlic
1 red or yellow pepper
3 sprigs of fresh flat-leaf parsley
50 g quality chorizo
olive oil
1 tablespoon sweet smoked paprika
250 g wholemeal basmati rice
8 free-range chicken thighs, skin off, bone out
500 ml passata
300 ml organic chicken stock
2 lemons

Steps:

  • Preheat the oven to 180ºC/350ºF/gas 4.
  • Peel and finely chop the onion, peel and finely grate the garlic and deseed and roughly chop the pepper. Pick the parsley leaves and put aside, then finely chop the stalks. Roughly chop the chorizo.
  • Heat 1 tablespoon of oil in an ovenproof casserole pan on a medium heat. Once hot, add the onion, garlic, pepper, parsley stalks, chorizo and paprika. Cook for around 5 minutes, or until starting to soften, stirring regularly.
  • Add the rice, then stir everything around until the rice is coated in all the lovely flavoured oil. Pour in the passata and stock, then add the zest and juice of 1 lemon.
  • Submerge the chicken in the sauce, bring to the boil, then reduce to a simmer. Scrunch up a wet piece of greaseproof paper, then open it out and place on top of the bubbling dish. Put a tight fitting lid on top, then place in the oven to cook for 45 minutes to 1 hour, or until the rice is tender and the chicken is cooked through. Loosen with a splash of boiling water, if needed.
  • Finely chop the parsley leaves, then sprinkle over the top. Cut the remaining lemon into wedges for squeezing over. Delicious served with a crisp green salad.

3 slices smoked bacon, finely sliced
500 g chorizo sausage, fresh
1 cup red wine
1 cup chicken stock
8 chicken thighs, boneless and skinless
2 onions, big chunks
2 carrots, big chunks
250 g baby onions
2 tablespoons tomato puree
400 g chopped tomatoes
1 tablespoon italian mixed herbs
1 teaspoon smoked paprika

Steps:

  • Fry garlic with bacon and chicken on a high heat so that chicken is browned on both sides. No need to cook the meat completely.Place into slow cooker or oven proof casserole dish.
  • Fry chorizo in same frying pan on high heat so the meat becomes slightly crispy. Place into slow cooker or oven proof casserole dish. Try to retain juices.
  • In the original pan and juices, fry the carrot and onion on a high heat for a few minutes until starting to soften. Don't cook the vegetables completely.
  • Add red wine OR chicken stock and boil, stirring vigoursly for a few minutes.
  • Place into slow cooker or oven proof casserole dish with chicken/chorizo and the rest of ingredients and cook on low for 4-6 hours. this will depend on your slow cooker. If using the oven, use gas mark 2 for 4-6 hours.
  • Take out and leave to stand for a couple of hours to allow the flavours and consistency to settle. re-heat and serve with mash. any leftover sauce can be scooped up with fresh buttered bread, especially when you've run out of mash.

16 oz Hash Browns
12 Eggs
3/4 cup Milk
3 links Chorizo
1 cup Cheddar Cheese, shredded
6 oz Manchego Cheese, shredded
3 Scallions
2 tsp Salt
2 tsp Ground Black Pepper

Steps:

  • Prep the chorizo by removing the outer casing.
  • Then rough chop the chorizo up into small pieces, somewhere between the size of a pea and a grape. Store sealed in the fridge until ready to cook.
  • Slice the scallions. Shred the cheeses.
  • Crack 12 eggs into a large bowl. Add most of the scallions, saving some of the greens for garnish. Add salt and pepper, then add 1 cup of milk and beat until mixed.
  • To the slow cooker pot, add the frozen hash browns, salt, pepper, and the chorizo. Mix together.
  • Add the shredded cheeses and mix together. Then pour over the egg mixture and lightly stir, just so the eggs seep into all the potatoes.
  • Set the Slow Cooker to 6 hours, low. Do this right before the last person turns into bed for the night, so that you wake up to this wonderful breakfast. After 6 hours, the slow cooker will go to warm mode so that it won't overcook, but stay warm until you are ready to eat!
  • The easiest way to slice and serve is to remove the slow cooker pot and place a plate/platter over top. Then invert the pot so the casserole slides right out onto the plate. You can flip it over if you like so the 'pretty' side is up or just cut and serve. Garnish with the remaining scallion slices and Enjoy!

3 skinless boneless chicken breasts
3 peppers (any kind .. green, red, yellow, orange) (diced)
3 large jalapenos (ribs and seeds removed, diced)
1 small onion (diced)
6 cloves garlic (diced)
6 ounces tomato paste
28 ounces fire roasted tomatoes
15 ounce can of whole kernel corn
4 ounces green chilies in a can
2 15 ounce cans of kidney beans (red or white)
1 cup beef broth
1 teaspoon cinnamon
2 tablespoons chili powder
2 teaspoons cumin
1 teaspoon cayenne powder
1 teaspoon smoked paprika
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon salt

Steps:

  • To make this Easy Slow Cooker Mexican Chorizo Chili, start by removing your chorizo from it's link casings and browning the meat over medium high heat in a large sauce pan. Be sure to break up the meat as you cook it so that it cooks through. The reason you are cooking the meat first is that it can be extremely greasy so you want to remove as much of that as you can before adding it to the slow cooker. Once your chorizo has cooked, remove the meat from the pan with a slotted spoon and add to your slow cooker.
  • Add your peppers, jalapenos, garlic cloves and onion to a small food processor and pulse until your items are lightly chopped. Add this to the slow cooker followed by the tomato paste, tomatoes, beans, chilies, broth, corn and spices. Give it a quick stir and then add your chicken breasts on top, cover with the lid and cook on High for one hour.
  • Once the hour has passed, reduce the heat to Low for the next 5 - 6 hours. When the time is up, lightly shred your chicken and serve your Easy Slow Cooker Mexican Chorizo Chili over rice or cheesy polenta. Garnish with more diced pepper, cheese, sour cream, cilantro and maybe even a squeeze of lime.

Thumbs up & awesome is how my husband described this stew. I served with steamed brown rice, but tortillas or tortilla chips would be good as well. You can vary the amount of spiciness by adjusting the amount of chipotle chile you add. Put the chicken broth and can of tomatoes in the fridge overnight to prevent the chicken from overcooking and getting dry (or reduce cook time). 3 medium onions, minced
8 garlic cloves, minced
1/4 teaspoon salt
3 1/4 lbs boneless skinless chicken thighs, trimmed of excess fat

12 ounces chorizo sausage, cut in 1/2-inch slices

Steps:

  • Heat the oil in a nonstick skillet over medium heat until the oil is shimmering. Ad the onion, garlic, 1/4 tsp salt and cook until the onions are soft & slightly browned.
  • Pour the onion mixture in the slow cooker and stir in the chicken, broth, tomatoes, chorizo, tapioca, chipotles, and sugar to combine.
  • Cover and cook on low until the chicken is tender, 7-9 hours (or high for 4-5 hours).
  • Tilt the cooker insert slightly and skim excess fat from the surface with a large flat spoon.
  • Stir in the corn & black beans. Let stand about 15 minutes until they are heated through.
  • Season with salt & pepper to taste. Serve.

  • Chicken: Generously season both sides of the chicken with salt and pepper. Add a drizzle of oil to a pan over high heat and add chicken. Fry both sides until nice and golden then place into the slow cooker. No need to cook them right through, this step is just to render down the fat and build extra flavour in the crust.
