- Cut beef Top Sirloin Steak lengthwise in half, then crosswise into 1/8 to 1/4-inch thick strips. Combine beef, pepper and 1/2 teaspoon seasoning from 1 ramen noodle package. Reserve remaining seasoning from packet for broth; discard second seasoning packet.
- Heat 1 teaspoon oil in large nonstick skillet over medium-high heat until hot. Stir-fry half of beef 1 to 2 minutes or until outside surface of beef is no longer pink. Remove from skillet. Repeat with remaining 1 teaspoon oil and beef. Remove from skillet; keep warm.
- Combine water, onion, garlic, ginger and reserved seasoning from packet in same skillet. Bring to a boil; reduce heat and simmer 2 minutes. Add noodles. Bring liquid to a boil; reduce heat and cook according to package directions or until noodles are al dente, about 3 minutes. Stir in beef; add miso, toppings and garnishes, as desired.

- Set aside seasoning packets from noodles. Cook noodles according to package directions., Meanwhile, in a small bowl, combine cornstarch and 1/4 cup broth until smooth; set aside. In a large skillet or wok, stir-fry beef in oil until no longer pink. Add soy sauce; cook until liquid has evaporated, 3-4 minutes. Remove beef and keep warm., Add the corn, broccoli, red pepper, carrots, onions and remaining broth to the pan. Sprinkle with contents of seasoning packets. Stir-fry until vegetables are crisp-tender, 5-7 minutes., Stir the cornstarch mixture and add to skillet. Bring to a boil; cook and stir until thickened, about 2 minutes. Drain noodles. Add beef and noodles to pan; heat through. Garnish with peanuts.

- Cook ramen noodles in boiling water according to the package directions. Drain and set aside.
- Heat coconut oil in a pan to medium high heat. Add mushrooms and cook for 1-2 minutes with a sprinkle of salt until the mushrooms start getting limp and cooked through.
- Add the garlic and beef. Cook for another 1-2 minutes until the meat and mushrooms are cooked through.
- Add the drained ramen noodles, oyster sauce, sweet soy sauce, and green onion. Gently stir over medium heat until the color from the sauce has distributed evently.
- Serve hot.

- Add the steak to a zippered gallon freezer bag with 3/4 cup of the marinade and let sit for at least 15 minutes up to overnight in the fridge. Heat a grill pan or large skillet over medium high heat with 1 tablespoon of the oil until shimmering. Take the steak from the bag and pour off the marinade then add the steak to the pan and cook, turning once, until browned on both sides and cooked to medium rare, about 8-12 minutes. Transfer the steak to a cutting board to rest and wipe out any burned bits from the pan, then reserve.
- Meanwhile, cook the ramen noodles (minus the seasoning packet) according to the package directions, drain and set aside.
- In the reserved skillet (or if you used a grill pan, use a new skillet) warm the remaining tablespoon of oil over medium high heat and add the mushrooms, then stir and cook for 3-4 minutes until they begin to soften.
