Time 45m

Yield 2

Number Of Ingredients 12

2 (8 ounce) beef sirloin steaks
1 tablespoon butter
¼ cup brandy
1 onion, minced
1 clove garlic, minced
½ cup red wine
2 tablespoons steak sauce
1 dash Worcestershire sauce
salt and pepper to taste
½ (4 ounce) package button mushrooms, sliced
½ cup Dijon mustard, divided
1 cup heavy cream

Steps:

  • Place the steaks between two sheets of plastic wrap; pound with a kitchen mallet to tenderize.
  • Melt the butter in a skillet over medium-high heat, and heat until it begins to smoke. Cook the steaks for 1 to 2 minutes on each side until they have browned. Pour brandy over steaks and carefully ignite. Once the flames burn off, remove steaks from the pan and set aside.
  • Cook the onion and garlic in the same skillet over medium heat until they soften. Stir in the red wine, steak sauce, Worcestershire sauce, salt, and pepper; mix well. Mix in the mushrooms, stir, and cook for about 5 minutes.
  • Meanwhile, coat one side of each of the steaks with 2 tablespoons of the Dijon mustard. Gently lay them on top of the sauce in the skillet, mustard-side down. Spread 2 tablespoons on top of the steaks. Cook 2 to 3 minutes per side. Remove the steaks from the sauce, and keep warm.
  • Stir the cream in to the mushroom sauce and bring to a gentle simmer. Reduce heat to medium-low, return the steaks to the sauce, and simmer for 1 minute more before serving.

STEAK WITH CREAMY PEPPERCORN SAUCE

Steak with Creamy Peppercorn Sauce image

Recipe video above. One of the best steak sauces in this world! It's super simple because it's made using the steak drippings and either brandy or cognac. The alcoholic taste is cooked out and you're left with an amazing sweet/savoury/creamy sauce with great depth of flavour and beautiful pops of heat from the peppercorns. Use crushed black peppercorns for spicier or canned green peppercorns for more mild heat.

SUPER DELUXE STEAK NACHOS

Super Deluxe Steak Nachos image

This is one of my all-time favorite party foods. For big games or special events, these nachos should get serious consideration for formulating your snack line-up. I recommend serving this with hot sauce on the side, and lots of beer.

Categories     Appetizers and Snacks     Cheese     Nachos Recipes

Time 1h55m

Yield 16

Number Of Ingredients 20

1 tablespoon vegetable oil
1 (1 1/2-pound) skirt steak or flap steak
1 teaspoon salt
1 teaspoon freshly ground black pepper
½ teaspoon ground dried chipotle pepper
2 tablespoons bacon fat
1 yellow onion, diced
1 teaspoon salt, divided
½ teaspoon dried oregano
2 (15 ounce) cans pinto beans, rinsed and drained
1 ½ cups water or chicken broth, plus more as needed
1 (14 ounce) bag corn tortilla chips
12 ounces shredded Cheddar cheese
12 ounces shredded Monterey Jack cheese
1 avocado - peeled, pitted and diced
½ cup chopped white onion, or to taste
2 ripe tomato, chopped, or more to taste
1 jalapeno pepper, seeded and minced
½ cup sour cream, for topping
½ cup chopped fresh cilantro

Steps:

  • Season both sides of steak with salt and pepper. Heat oil in a skillet over medium-high heat. Cook steak, turning occasionally, to medium doneness, about 6 minutes per side. An instant-read thermometer inserted into the center should read 135 to 140 degrees F (60 degrees C). Transfer meat to a bowl to let it rest.
  • Pour a splash of water into the skillet; stir to scrape up browned bits and deglaze the pan. Pour this liquid over meat. Allow meat to cool completely.
  • When meat is completely cool slice thickly (about 1/2 inch) with the grain, then cut into thinner strips. Dice by cutting into pieces against the grain. Transfer chopped steak back to the bowl; toss with the pan drippings.
  • Melt bacon fat over medium heat in a pot. Add onions and a pinch of the salt; cook and stir until softened, 5 or 6 minutes. Stir in oregano. Add pinto beans and water. Bring back to a simmer and cook until onions are soft and sweet, about 5 minutes. Reduce heat to low.
  • Mash the beans with a potato masher to your desired consistency. Add additional liquid, if necessary, to achieve your preferred texture. Add the remaining salt to taste. Remove from heat.
  • Preheat oven to 450 degrees F (230 degrees C).
  • Place tortilla chips about 2 or 3 deep in a heat proof pan. (You may need more than one pan.) Top chips with spoonfuls of beans and a generous handful of steak pieces. Sprinkle with grated cheese.
  • Bake in preheated oven until cheese is melted and edges start to brown, about 10 minutes.
  • Scatter diced ripe avocado, diced onions, diced tomatoes, and diced jalapenos over the top. Drizzle nachos with sour cream and garnish with chopped cilantro.

FILLET STEAK WITH THYME & GARLIC CRUST

Fillet Steak With Thyme & Garlic Crust image

This works best with filet steak, however I have also made it with thick cut sirloin & it was yummy. It's nice as a special treat or dinner. I think this is an Annabel Langbein (NZ Chef) recipe but with a definite French influence.

Provided by LilKiwiChicken

Categories     Steak

Time 30m

Yield 2 serving(s)

Number Of Ingredients 8

2 tablespoons salted butter, melted
2 garlic cloves, crushed
2 tablespoons fresh thyme, chopped
2 slices white bread, fresh (I use the equivalent by chopping up a french stick)
1 tablespoon olive oil
2 (200 -250 g) beef steak fillets
fresh ground black pepper
Dijon mustard

Steps:

  • Heat the oven to 220 degrees Celsius.
  • Pulse the bread in a food processor until the crumbs are coarse (you don't want them really fine).
  • Put the melted butter into a small bowl, and add the garlic, thyme and fresh breadcrumbs. Stir until well combined.
  • Heat a frypan onto high heat & add the olive oil. The pan should be smoking.
  • While the pan is heating, trim any excess fat and silverskin from the steaks, and grind black pepper to taste over the steaks.
  • Using tongs (and watch for spatters) put the steaks into the pan and quickly sear on all sides.
  • Remove to an oven tray and spread with Dijon Mustard to taste.
  • Pile the crumb mixture on top in an even layer, and put into the oven until cooked to your liking (I like this rare, so about 15 minutes or so at most for me is fine). Ensure that the crumb doesn't burn (but it should be golden).
  • Rest for 5-10 minutes in a warm place.
  • Serve with fresh greens & potatoes.

Insanely tender, juicy and flavorful smokey bourbon sirloin steak smothered in a restaurant quality steakhouse sauce made with bourbon, beef broth, cream and freshly ground peppercorn. Super easy to make and absolutely delicious!! You'll be coming back to this recipe again and again.

Provided by Rachel Riesgraf

Categories     Dinner

Time 55m

Number Of Ingredients 16

2 pounds Yukon Gold potatoes, peeled and cut into even cubes
1/2 tablespoon + 1/2 teaspoon salt
4 tablespoons salted butter
1/2 cup heavy whipping cream
1-2 tablespoons olive oil
4 AdapTable Meals® Smokey Bourbon Beef Sirloin Steaks ((or 1-inch thick 6-ounce steaks))
1 tablespoon salted butter
2 garlic cloves, minced
1 tablespoon all-purpose flour
1/2 cup bourbon
1/2 cup beef broth
3/4 cup heavy whipping cream
1 teaspoon freshly cracked peppercorns
1/2 teaspoon salt
1/2 tablespoon dijon or whole grain mustard
Optional garnish: fresh chopped parsley, fresh cracked peppercorn and flakey sea salt

Steps:

  • Add the potatoes and 1/2 tablespoon salt to a large pot and cover with water. Boil until fork tender, about 20 minutes. Drain the potatoes and transfer to a large bowl. Add the remaining 1/2 teaspoon salt, butter and heavy cream, then mash until smooth. Cover and set aside.
  • Heat a skillet over medium-high heat with 1 tablespoon of olive oil, adding more as needed. Once hot, add the steaks to the pan. Sear undisturbed about 4-5 minutes until nicely browned. Flip the steaks and sear the other side 4-5 minutes, or until a meat thermometer reads about 140°F for medium doneness, or adjust the cook time to achieve desired internal temperature (see notes). Keep in mind that the internal temperature of the steaks will continue to rise another 5-10 degrees after removed from the heat.
  • Transfer the steaks to a plate and loosely cover with tinfoil. Let rest while you prepare the cream sauce.
  • Using the same skillet, melt the butter over medium-high heat. Add the garlic and whisk in the flour.
  • While whisking, pour in the bourbon and let simmer about 30-60 seconds, or until reduced by half. Then pour in the beef broth. Simmer until thickened, about 1 minute. Reduce heat to medium and whisk in the heavy cream, pepper, salt and dijon mustard. Continue simmering, about 1-2 minutes, or until thickened (do not let it boil rapidly).
  • Serve steaks over mashed potatoes and drizzled with bourbon peppercorn cream sauce. If desired, garnish with fresh parsley, fresh cracked peppercorns and flakey sea salt.

  • Chimichurri. 10 mins. Chimichurri is a South American steak sauce similar to salsa verde – but with a little kick. It's the perfect balance for a rich steak.
  • Béarnaise sauce. 20 mins. If you like thick, creamy, mayonnaise-like sauces, opt for a tarragon-tinged Béarnaise. Put 2 egg yolks in a mini food processor and season with salt, pepper and a pinch of cayenne, then add 1 tsp tarragon vinegar.
  • Black bean & sesame sauce. 25 mins. Team the umami flavour of steak with a deeply savoury Asian-style sauce, thickened with hardy black beans.
  • Salsa verde. 10 mins. This piquant Italian green sauce doesn’t require any cooking. Chop a bunch of tarragon and 2 packs of parsley into small pieces and mix in a bowl with 1 tsp sea salt, 40g small capers, 3 tsp Dijon mustard and 2 crushed garlic cloves.
  • Quick red wine sauce. 20 mins. Opt for a bistro classic by making a rich, boozy jus. Put 250ml beef stock into a saucepan and reduce by half. Add 125ml red wine, 2 tsp dark brown sugar and 1 tsp balsamic vinegar.
  • Teriyaki sauce. 15 mins. This Japanese sauce has the sweet/savoury balance honed to a tee. Pour 350ml water into a small saucepan with 85g light brown sugar, 70ml light soy sauce, 1 large crushed garlic clove, and a 4cm piece of finely grated ginger.
  • Super-swift mustard sauce. 10 minutes. It doesn't get much simpler than a two-component sauce. Mix 2 tbsp Dijon mustard with 100g crème frâiche in a saucepan and heat gently until simmering.
  • Blue cheese sauce. 5 mins. Steak and blue cheese is a match made in heaven. The addition of stilton in this speedy recipe really packs a punch.
  • Mushroom sauce. 15 mins. We’d never turn our noses up at retro-style grilled mushrooms, but this creamy sauce is a little more refined. Pour 1 tbsp olive oil into a saucepan over a high heat and add 6 sliced chestnut mushrooms.
