Steps:
- You will need some cooking oil (2-3 TBS Any type); Salt & Pepper to taste; and a deep skillet.
- 1. In deep skillet, sauté green pepper and onion in oil until onion is just beginning to turn translucent (Do not overcook as the mixture will continue to cook with the other ingredients.).
- 2. Drain off the excess oil retaining a coating in the bottom of the pan. Save the excess oil in case you find you need to add some back in during the next phase of cooking.
- 3. Add in the shredded sweet potato, Kielbasa, and Simply Potatoes and cook as directed on the package. Add salt and pepper to your taste. While cooking, you may find that you need to add some of the oil that you retained in step 1.

- Heat oven to 400ºF.
- Drain 1 can tomatoes; discard liquid. Heat oil in large ovenproof skillet on medium heat. Add onions and garlic; cook and stir 3 to 5 min. or until onions are crisp-tender. Stir in tomatoes and red pepper; bring to boil, stirring occasionally.
- Top with eggs, spacing evenly over tomato mixture. Sprinkle with cheese.
- Bake 16 to 18 min. or until eggs are done.

- Lightly cover the bottom of a 12-inch non-stick skillet with vegetable oil. Heat vegetable oil over medium heat until hot.
- Take Simply Potatoes DICED POTATOES Cook for 8 to 12 minutes. Skillet should remain covered while cooking. Add meat.
- In a medium size bowl Mix Eggs, 1/4°C cheese and Scallions together.
- Then seperating potato and meat mixture to one side of the pan pour in egg mixture keeping separate. Scramble eggs mixture and mix into potato and meat mixture. Season with salt and pepper. Top with remaining 1/4c. cheese. Cover for 1 minute and serve.

- Preheat the oven to 375 degrees. Begin browning the meat in a large saute pan on med-high heat. Add diced peppers after meat has been cooking for several minutes. Cook until there is no more pink in the meat. Turn heat to low and add can of sloppy joe sauce. Mix thoroughly and let it heat through. Add 1/2 cup of water and mix well. Take off heat and pour into a large (3qt) casserole dish. (could be a shallow (9x13) or deep - depends if you want thick layer of potatoes).
- Bake for 30 minutes and cool slightly before serving.

Here is a "Simply" wonderful way to still experience the Holiday without the hassle. It makes a terrific brunch item. It is so quick and easy, and the best part is that you can make it for breakfast, lunch or dinner. I've made this dish for all 3 meals (but not in the same day, of course). *NOTE: You could also throw in some beaten eggs and shredded cheese for a super simple breakfast omelet, frittata or quiche (see photos) that the whole family would love. And if you did happen to make a full-blown corned beef and cabbage dinner, use the leftovers (following steps #4, #5 and #7) for a simple and quick meal. Endless possibilities with this recipe.

Steps:
- Pour the potatoes into a dutch oven or (large sauce pan) and fill with just enough cold water to cover the potatoes by 2". Add the salt to the water and stir.
- Bring to a boil over medium high heat. When water begins to boil, turn the heat down and simmer the potatoes (covered, stirring occasionally) for approx 5-6 minutes.
- Now add the shredded coleslaw mix to the pot, return to a simmer, and continue (covered, stirring occasionally) for another 6-8 minutes.
- Meanwhile, dice up the can(s) of corned beef, (roughly the same size as the potatoes).
- Place the vegetable oil in a large skillet.
- Drain potato and coleslaw when they are cooked thru.
- Heat oil in skillet over medium heat and add in the diced corned beef. Fry for approx 3 minutes, then toss in your potato and slaw mixture. Fry for approx 5 minutes (stirring occasionally) until meat and veggies are crisped to your liking. Season to taste. It's as simple as that. You have your meal without the time and work. You may also choose to add some beaten eggs and shredded cheese to this recipe and make it into a breakfast omelet, frittata or quiche (see photos). The possibilities are endless. Enjoy!
