This recipe I created one morning when I was in a hurry to get out the door to church and hadn't done grocery shopping for the week. It's quick and easy, a one pan meal that can be eaten on the go and was loved by my fiancé and daughter.

1 (20 ounce) bag Simply Potatoes® Shredded Hash Browns
1 chorizo sausage (any brand)
4 -6 eggs
1/2 cup shredded cheddar cheese
4 -6 small flour tortillas
2 tablespoons olive oil
1/8 teaspoon salt and pepper
1 tablespoon sour cream
1 tablespoon salsa

Steps:

  • Heat oven to 350 degrees.
  • Spread tortillas onto a greased baking sheet and set aside until oven is heated.
  • Mix together hash browns and chorizo in a bowl and set aside. Whisk eggs together in another bowl then combine with hash browns and chorizo. Mix in cheddar cheese.
  • Heat oil in skillet using medium heat; I prefer to use my iron skillet.
  • Spread chorizo and hash brown mixture into heated skillet until the mixture covers the pan. Sprinkle with salt and pepper; Cook until crispy brown on bottom, then turn to cook other side.
  • While cooking Chorizo mixture, place tortillas in heated oven; heat 2mins on each side until warm do not over heat or tortillas will become hard and you will not be able to roll them.
  • Divide cooked chorizo mixture into heated tortillas; sour cream and salsa may be added as a topping. Roll tortillas, burrito style, and serve.

Addictive Sweet Potato Burritos image

Once you've had one, you'll want another. The recipe is a little different from most burrito recipes, but I've had many, many requests for it. Serve these with sour cream, chopped green onions, and salsa.

1 tablespoon vegetable oil
1 onion, chopped
4 cloves garlic, minced
6 cups canned kidney beans, drained
2 cups water
3 tablespoons chili powder
4 teaspoons prepared mustard
2 teaspoons ground cumin
1 pinch cayenne pepper, or to taste
3 tablespoons soy sauce
4 cups mashed cooked sweet potatoes
12 (10 inch) flour tortillas, warmed
8 ounces shredded Cheddar cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Heat oil in a medium skillet and saute onion and garlic until soft. Mash beans into the onion mixture. Gradually stir in water; heat until warm, 2 to 3 minutes. Remove from heat and stir in the soy sauce, chili powder, mustard, cumin, and cayenne pepper.
  • Divide bean mixture and mashed sweet potatoes evenly between the tortillas; top with cheese. Fold tortillas burrito-style around the fillings and place on a baking sheet.
  • Bake in the preheated oven until warmed through, about 12 minutes.

Easy Potato, Egg, & Cheese Breakfast Burrito image

I had a ton of cooked leftover steak fries (the frozen kind) and came up with this yummy and easy breakfast using them. It's so easy, and oh so good!

2 eggs
1 tablespoon light sour cream
1/2 cup steak-style French fries, cooked and chopped
1/2 cup light cheddar cheese, shredded
2 large tortillas, I use the fat free kind
ketchup

Steps:

  • In a bowl, mix eggs with sour cream well. Pour into a hot pan sprayed with cooking spray and scramble until firm.
  • Add cooked fries, and continue scrambling eggs. If you like, add spices. (I add salt, pepper, paprika, and tabasco sauce.).
  • Add shredded cheese and mix until melted.
  • Heat tortillas 20 seconds in the microwave. Put half of egg mixture on each one, roll up, top with ketchup if desired, and enjoy!
