When chilly days arrive and we retire the grill to the garage, I bake a batch of chickpea veggie burgers. Even die-hard meat eaters can't resist them. -Lily Julow, Lawrenceville, Georgia

1 large red onion, thinly sliced
1/4 cup fat-free red wine vinaigrette
2 cans (15 ounces each) chickpeas or garbanzo beans, rinsed and drained
1/3 cup chopped walnuts
1/4 cup toasted wheat germ or dry bread crumbs
1/4 cup packed fresh parsley sprigs
2 large eggs
1 teaspoon curry powder
1/2 teaspoon pepper
1/3 cup fat-free mayonnaise
2 teaspoons Dijon mustard
6 sesame seed hamburger buns, split and toasted
6 lettuce leaves
3 tablespoons thinly sliced fresh basil leaves

Steps:

  • Preheat oven to 375°. In a small bowl, mix onion and vinaigrette. Place chickpeas, walnuts, wheat germ and parsley in a food processor; pulse until blended. Add eggs, curry and pepper; process until smooth., Shape into 6 patties. Place on a baking sheet coated with cooking spray. Bake until a thermometer reads 160°, 10-15 minutes., In a small bowl, mix mayonnaise and mustard; spread over cut sides of buns. Serve patties on buns with lettuce, basil and onion mixture.

This burger is so delicious, you will not miss the meat, promise! Here's a tip: If you don't want this patties to fall apart, you absolutely need to make a rough chop while processing, also try making thinner patties.

1 carrot (medium size grated)
1 garlic clove
1 (19 ounce) can chickpeas
1 1/2 teaspoons ground cumin
1 1/2 teaspoons ground coriander
salt & pepper
1 large egg
2 tablespoons plain flour
oil (for frying)
2 slices whole wheat bread (cut in round shapes)
1 tomatoes
1 red onion

Steps:

  • Peel the carrots, grate them coarsely and set them aside.
  • Peel and roughly chop the garlic.
  • Drain and rinse the chickpeas and put them into a food processor with the garlic, ground spices, salt and pepper. Slightly process to obtain a rough paste then add the carrot, egg, and flour and process briefly until evenly mixed but slightly rugged.
  • Heat the oil in a frying pan and divide the mixture into 8. Fry in batches for 2-3 minutes on each side, until golden, then drain on kitchen paper.
  • Keep opened chickpea can to cut round shapes in bread slices. Toast each slice in toaster or in frying pan.
  • Serve with slices of tomato and red onions and mayonnaise.

  • Combine onion and vinaigrette in small bowl and set aside. In food processor, combine chickpeas, walnuts, wheat germ and parsley; cover and pulse til blended. Add eggs, curry, pepper; cover and process til smooth.
  • Shape into 6 patties. Spray baking sheet with Pam. Bake at 375 for 10-15 minutes until firm.
  • Combine mayo and mustard, spread over buns. Serve patties on buns, top with lettuce, basil and onion mixture.
