Official Contest Entry: Simply Potatoes 5Fix. My husband Michael is Irish and I'm always looking for and trying to find creative ways to honor his heritage. This recipe is a creation I came up with myself using ingredients that make this possible.

- For one package of simply mashed potatoes (I use either the garlic or mashed with skins) spray an 8 x8 glass casserole/pan. In a large skillet cook cabbage & onion in olive oil over medium heat just until tender, seasoning with salt and pepper to taste. In casserole dish spread out one layer of potatoes about 1/2 package, then 1/3 of the cheese, then cabbage and onion. Top with remaining potato and cheese. Bake in a preheated 350 degree oven for 30 minutes or cheese is lightly golden brown.

Steps:
- First microwave Simply Potatoes Traditional Mashed Potatoes on high for 3 minutes with plastic film peeled on the corner for ventilation.
- Then peel off plastic film entirely and stir Simply Potatoes Traditional Mashed Potatoes thoroughly, then place back in microwave for 1 minute.
- Take Simply Potatoes Traditional Mashed Potatoes and pour into a mixing bowl.
- Add 1 2/3 cups of mayonnaise, 1 1/2 cups of finely chopped peaches, 1 1/2 cups of finely chopped ham and 2 tbsp of white cheddar cheese to mixing bowl. Stir until all ingredients are thoroughly mixed, then serve!

It is a great, hearty meal that all members of your family will enjoy. This meal can be thrown together quickly, or left for hours to simmer on the stove so all of the delicious flavors stew together.

- The first step to making this delicious stew is to chop the carrots into bite-sized pieces. The next step is browning the bit-sized cubed beef until cooked all the way through in a skillet on medium heat; don't drain any of the grease, you will use this to brown the Simply Potatoes. After the meat is brown, you will then place it in a container to the side, then put the Simply Potatoes Diced with onions in the skillet and cook until brown, on medium heat. Then you will put the Potatoes into another container to the side (or if you read ahead and got a big enough container, they can both go in).
- The next step is place your soup pot on the stove and turn the heat on high and add the beef broth and tomato paste to your pot (you can add more tomato paste if you like your base to be thicker), and heat until boiling. Once your mixture is boiling, turn down to simmer and add the carrots, beef, and potatoes and onions. The final step is to heat on simmer until carrots are cooked all the way through (approximately four hours), or for quicker meals, heat on medium (approximately one hour).

Steps:
- Preheat oven to 425 degrees. Drizzle the potatoes with 2 tablespoons melted butter and toss to coat. Arrange in single layer on baking sheet. Place in preheated oven and roast for 25 to 30 minutes or until lightly browned.
- Transfer potatoes to large bowl, sprinkle in paprika, parsley and drizzle with remaining butter. Season to taste with ground black pepper and toss to combine.

- Brown thin strips of bacon in large skillet til golden & crispy. Remove bacon to paper towel lined plate.
- In the same skillet saute the onion until it begins to soften and then add the cabbage & cook until the cabbage is tender but not mushy.
- Stir cabbage & onion, corned beef & bacon into Simply Potatoes shredded hash brown potatoes & place all in a 9 x 13 casserole dish. Top with the shredded cheese & bake in 350 degree over for 30-45 minutes until cheese is melted & bubbly and everything is hot.

- Begin by placing pepper jack cheese in small flat circles on a non stick baking sheet. Also, sprinkle Parmesan cheese on the same baking sheet. Bake at 400 degrees for approximately 5 minutes. Once the pepper jack cheese has baked, remove from oven and allow to cool completely. Meanwhile, prepare Simply Mashed Potatoes according to manufactures directions.
