This is my mom's recipe for Rice Pudding. It's the best I've ever tasted and it gets rave reviews from everyone I serve it to. Sprinkle with nutmeg or cinnamon, if desired. For creamier pudding, use short or medium grain rice.

¾ cup uncooked white rice
2 cups milk, divided
⅓ cup white sugar
¼ teaspoon salt
1 egg, beaten
⅔ cup golden raisins
1 tablespoon butter
½ teaspoon vanilla extract

Steps:

  • Bring 1 1/2 cups water to a boil in a saucepan; stir rice into boiling water. Reduce heat to low, cover, and simmer for 20 minutes.
  • In a clean saucepan, combine 1 1/2 cups cooked rice, 1 1/2 cups milk, sugar and salt. Cook over medium heat until thick and creamy, 15 to 20 minutes. Stir in remaining 1/2 cup milk, beaten egg, and raisins; cook 2 minutes more, stirring constantly. Remove from heat and stir in butter and vanilla.

3-1/2 cups 2% milk
1/2 cup uncooked long grain rice
1/3 cup sugar
1/2 teaspoon salt
1/2 cup raisins
1 teaspoon vanilla extract
Ground cinnamon, optional

Steps:

  • Preheat oven to 325°. Place first four ingredients in a large saucepan; bring to a boil over medium heat, stirring constantly. Transfer to a greased 1-1/2-qt. baking dish. , Bake, covered, 45 minutes, stirring every 15 minutes. Stir in raisins and vanilla; bake, covered, until rice is tender, about 15 minutes. If desired, sprinkle with cinnamon. Serve warm or refrigerate and serve cold.

⅓ cup uncooked white rice
⅓ cup white sugar
1 pinch salt
1 quart whole milk
2 tablespoons vanilla extract
½ teaspoon ground cinnamon

Steps:

  • Preheat oven to 300 degrees F (150 degrees C). Coat a 2 quart casserole dish with nonstick cooking spray.
  • In the casserole dish, mix together rice, sugar and salt. Stir in milk and vanilla.
  • Bake, uncovered, in preheated oven for 1 1/2 to 2 hours, stirring every 20 minutes. Let stand for 30 minutes. Sprinkle top with cinnamon.

Simply Amazing Rice Pudding image

I got this recipe from a blogspot called "Mysterious Bolivia". I have no idea whether Bolivia is any more mysterious than the rest of the planet, but judging by this recipe, they sure can cook there! I used the whole can of coconut milk, on the theory that there's no such thing as too much coconut. I use basmati rice. Be forewarned: this is rich, rich, rich!

1 lb rice
4 cups water
1 stick cinnamon
1 (15 ounce) can evaporated milk
1 (12 ounce) sweetened condensed milk
1 cup whole milk
0.5 (15 ounce) can coconut milk
1/2 cup raisins
1/2 cup sliced almonds
1/2 cup walnuts (pieces)
3 tablespoons flaked coconut
5 whole cloves
1 stick cinnamon
1 pinch salt
ground cinnamon, and whipped cream for garnishing (optional)

Steps:

  • Put the 4 cups of cold water and the rice in a pot to soak for 10 minutes.
  • At high heat add to the pot the cinnamon stick, cloves, salt, coconut milk and wait 5 minutes after it starts boiling.
  • Turn the burner to low and stir with a wooden spoon being careful not to let any thing stick to the bottom of the pot.Add the condensed and evaporated milk, coconut milk, let boil for about 10minutes more until it thickens, stirring time to time.
  • Add raisins, Almonds, Walnuts and regular milk, stir with a wooden spoon.
  • Wait 5 more minutes and remove the mixture from the heat and put in a deep baking dish.
  • Carefully remove the cinnamon stick.
  • Sprinkle the top with ground cinnamon and coconut flake, cover the dish with foilpaper, set in the oven, and bake for 20 minutes at 325°F.
  • Serve in individual cups , use ground cinnamon and whipped cream for garnishing serve with wafers.

1 cup uncooked short-grain or long-grain white rice, or 3 cups cooked rice
3 to 4 cups dairy or unsweetened non-dairy milk
1/3 cup granulated sugar, plus more as needed
1/4 teaspoon kosher salt
1/2 vanilla bean, or 1 1/2 teaspoons vanilla bean paste or vanilla extract
1 tablespoon unsalted butter (optional)
Add-in options: 1/2 cup raisins, 1/4 teaspoon ground cinnamon

Steps:

  • Measure out the rice and milk. Place 1 cup uncooked short-grain or long-grain white rice, or 3 cups cooked rice in a large saucepan. Add 4 cups milk for uncooked rice, 3 cups milk for cooked rice.
  • Add the flavorings. Add 1/3 cup granulated sugar and 1/4 teaspoon kosher salt. If using vanilla bean, scrape the seeds from 1/2 vanilla bean and add the seeds and the pod into the saucepan. If using vanilla bean paste, add 1 1/2 teaspoons. Add any desired add-ins.
  • Bring to a simmer. Bring the mixture to a vigorous simmer over medium-high heat, stirring frequently and scraping the bottom of the pan with a wooden spoon or rubber spatula so that the rice does not stick.
  • Simmer until the rice is tender. Reduce the heat to maintain a bare simmer and cook uncovered, stirring occasionally, until the rice is very tender and the mixture starts to thicken, 20 to 22 minutes for uncooked rice, 10 to 12 minutes for cooked rice.
  • Add the butter and vanilla extract. Remove from the heat and stir in 1 1/2 teaspoons vanilla extract if using and 1 tablespoon unsalted butter if desired until melted. Remove the vanilla bean pod if needed. Taste and add more sugar as desired.
  • Serve the rice pudding. The rice pudding will continue to thicken as it cools. Thin out with more milk if desired, and serve warm or cold.

3/4 cup long grain rice
1 1/2 cups water
1/4 teaspoon salt
4 cups milk
1 cup sugar
1 teaspoon vanilla

Steps:

  • Boil rice, water, and salt over medium high heat, simmer covered until water is absorbed.
  • Stir in milk and sugar, uncovered over medium heat until it reaches porridge like consistency stirring frequently, especially near the end.
  • Do not over cook.
  • Remove from heat, add vanilla , stir, cool covered.
