Steps:
- In a medium bowl, whisk together the egg yolk, lemon juice, garlic, Worcestershire, pepper flakes, mustard, and anchovies. Slowly whisk in the oils to emulsify. Season, to taste, with salt and pepper.
- Place the lettuce in a large bowl. Sprinkle with Parmesan and black pepper. Drizzle with desired amount of dressing and toss well. Sprinkle top with croutons.

Steps:
- Preheat broiler to 425 deg F.
- Place filet on non-stick foil in a shallow baking pan.
- Drizzle fillet with the oilve oil; use your fingers or a brush to spread until coated.
- Sprinkle with salt & freshly ground black pepper to taste.
- Broil on top rack for 5-10 minutes, to desired doneness.
- Meanwhile, chop leaf lettuce and soak together with spring mix in cold water in bowl; drain and spin dry.
- Toss lettuce with Caesar dressing.
- Divide lettuce between 2 serving plates.
- Remove salmon from oven when done and allow salmon to rest for 5-10 minutes, then cut in half lengthwise and carefully slice the halves into strips on a bias.
- Top lettuce on each plate with half of the sliced salmon and sprinkle with almonds, cheese and freshly ground black pepper to taste.

EASY CAESAR POTATO SALAD
Lemon, garlic and anchovies rule this creamy potato salad for a Caesar-inspired side dish.

- Put the potatoes in a saucepan with enough water to cover by 2 inches. Bring the water to a boil and cook the potatoes until tender, 15 to 20 minutes. Drain and let cool for 5 minutes. Peel the potatoes and cut them into chunks. Put in a medium bowl and sprinkle with the vinegar while still warm; season with 1/2 teaspoon salt.
- Whisk together the mayonnaise, lemon juice, mustard, sugar, anchovies, garlic and 1 teaspoon salt in a large bowl. Add the potatoes and toss to coat.
- Heat the oil in a skillet over medium heat. Add the panko and cook until brown, about 3 minutes. Stir in the parsley.
- Transfer the potatoes to a serving dish and sprinkle with the parsley breadcrumbs.

- In the bowl of a food processor, add the parsley leaves, anchovy fillets, Parmesan, lemon juice and zest, green onions, chives and garlic. Season with salt and pepper. Pulse the mixture and slowly drizzle in the olive oil.
- Remove the top from the food processor and unplug the machine. Replace the blade from the processor with the shredder blade and place the top back on the machine. Plug the machine back in and shred the lettuce leaves, 1 at a time, directly on top of the dressing.
- Pour the lettuce and dressing into a large bowl and toss to combine. Garnish with additional Parmesan.

This delicious chicken caesar salad can be thrown together easily on a work night. I took this to a carry in at my SIL's and was so embarrassed because everyone raved about the salad and kept going back for seconds (and thirds!) but said nothing about her main meal entry.

Steps:
- Wash and lay out lettuce leaves on paper towels and pat dry.
- Cut lettuce into 1 inch strips and place in a large mixing bowl.
- Add chicken, bacon bits, mozzarella cheese, green onions, and toss.
- Cover lettuce with a fairly generous amount of Parmesan cheese and salt and pepper and toss again.
- Mix in Caesar Ranch dressing until lettuce is nicely coated.
- Add croutons to individual salad bowls when serving so they won't get soggy.
