- Preheat oven to 375°. Unroll pie crust into a 9-in. pie plate; flute edge. In a large bowl, combine peaches, strawberries and lemon juice. In a small bowl, mix sugar, cornstarch and basil. Add to fruit and toss gently to coat. Transfer to crust., In a small bowl, mix flour and brown sugar; cut in butter until crumbly. Sprinkle over filling. Place pie on a foil-lined baking pan., Bake on a lower oven rack until topping is golden brown and filling is bubbly, 45-55 minutes. Cool on a wire rack.

- 1. Thaw the fruit until most of the has disappeared.
- 2. Drain off the juices and measure, then stir into mixture of sugar, tapioca, and cornstarch in saucepan. Heat rapidly until thickening is complete, Boiling is not necessary.Set aside to cool.
- 3. Add fruit and lemon juice to cooled, thickened juice.
- 4. Pour filling into pastry lined 9" pie pan. Cuts vents in top crust, cover pie seal and flute edge.
- 5. Bake in 425 degree oven for 30 to 35 minutes, or until nicely browned. Makes 1 9" pie
STRAWBERRY PEACH EASY PIES
Cute as a button, these mini peach pies are tasty too. We love peach pie but this recipe takes them to another level. Mascarpone cheese, strawberry jam, and peaches are combined and create the yummiest filling. Since they use crescent dough for the crust, this is perfect for the next time you're wanting a pretty dish in a snap....

- 1. Preheat oven to 350 F. Spray a six muffin pan with non-stick spray.
- 2. Open the crescent rolls.
- 3. Separate the individual rolls.
- 4. Cut to cover the bottom of each muffin holder; doing your best to come up the sides a bit (use 3/4 of the dough for this).
- 5. Add 1 tablespoon of mascarpone cheese to each tin.
- 6. Add 1 tablespoon of strawberry jam to each tin (if you don't have strawberry jam, use whatever kind of jam you have!).
- 7. Chop up the peach (I used a grilled peach because it was leftover from last night's dinner! But a canned peach would be just as good...or substitute with whatever fruit you have on hand).
- 8. Place into the muffin tin.
- 9. Use the remaining 1/4 of the dough to crisscross the top of each pie.
- 10. Put 1/2 tablespoon butter on the top of each pie.
- 11. Sprinkle with some brown sugar.
- 12. Bake for 10 minutes or until golden on top.
- 13. Let cool five minutes because the fruit is really hot! Serve with ice cream or whipped cream! Enjoy!
STRAWBERRY GLAZE PIE

"This pie was a family favorite while I was growing up, and it has become the same with my own family, which is nearly all grown. "Strawberries are one of my favorite fruits, and when they're in season, you can bet this is a treat we have often!"

- On a lightly floured surface, roll dough to a 1/8-in.-thick circle; transfer to a 9-in. pie plate. Trim to 1/2 in. beyond rim of plate; flute edge. Refrigerate 30 minutes. Preheat oven to 425°. , Line crust with a double thickness of foil. Fill with pie weights, dried beans or uncooked rice. Bake on a lower oven rack until edge is golden brown, 20-25 minutes. Remove foil and weights; bake until bottom is golden brown, 3-6 minutes longer. Cool on a wire rack. , Mash 1 cup strawberries; set aside. In a saucepan, combine sugar and cornstarch; stir in water and mashed berries. Bring to a boil, stirring constantly. If desired, stir in food coloring. Cook and stir 3 minutes more. Cool for 10 minutes. , Spread about 1/3 cup glaze over bottom and sides of crust. Halve remaining strawberries; arrange in crust. Spoon remaining glaze over berries. Chill for 1-2 hours. Just before serving, garnish with whipped cream.

SIMPLE STRAWBERRY OR PEACH PIE
This is another recipe that comes from my best friend -- who also put it in our church cookbook. It's the only way I ever make strawberry or peach/nectarine pie, because it's about as simple as it gets, especially if you have pre-made crusts on hand. I find if I use bought crusts, I can't quite get two pies out of this recipe, but I usually have leftover sauce. I use baby food jars and put some berries or peaches/nectarines on the bottom topped with the remaining sauce as a treat for my little girls. I sometimes add a layer of cream cheese to the pie, under the berries or peaches, for that little something extra -- and of course, don't skimp on the sweetened whipped cream on top! (According to my dad, whipping cream's not a garnish, it's just as important as the dessert itself!!) Cooking time is refrigeration time.

STRAWBERRY PEACH PIE
I love this pie! There is nothing tastier in the summer! I've never bought the store bought strawberry glaze. I followed the recipe from Joy of Cooking that calls for 3 c hulled and crushed strawberries. Strain and then add 1/3 c sugar, 1 tbsp lemon juice, 1 tbsp cornstarch (red food coloring if desired--I leave it out, but it does mean the pie is pink without it). Cook all ingredients over low heat until thick/transparent and cool. For the crust, I'll use a storebought one or make my own. This recipe is from Better Homes and Gardens.

- Preheat oven to 450°. Unroll crust into a 9-in. pie plate. Trim edge. Line unpricked crust with a double thickness of heavy-duty foil or parchment. Bake 8 minutes. - Set aside four whole berries for garnish. Slice remaining strawberries and set aside. In a large saucepan, combine cornstarch and water until smooth. Bring to a boil; cook and stir for 2 minutes or until thickened.

- Preheat oven to 425 degrees F.
- Stir together flour, 1 cup sugar, and cinnamon and set aside.
- Wash, peel, and slice fresh peaches.
- Mix together peaches with the combined dry ingredients.
- Turn into pastry-lined pie pan and dot with butter.
- Cover with top crust, cut slits in it, seal the edges.
- Sprinkle top with 2 tablespoons of sugar.
- Cover the edges with foil to prevent over browning; remove foil for the last 15 minutes of baking.
