1/3 cup fresh mint leaves, finely sliced, more for garnish
1 1/2 teaspoons kosher salt

Steps:

  • Cut off top and bottom of lemon, and slice off skin and pith. Cut lemon flesh into rounds 1/4-inch thick, then slice each round into eighths.
  • In a salad bowl, combine lemon, mint, and salt. Season with pepper to taste. Add spinach and oil, and toss well. Garnish with additional mint, and serve.

3 tablespoons apple cider vinegar
2 tablespoons honey
1/2 teaspoon dry mustard
1 garlic clove (pressed)
1/4 teaspoon salt

Steps:

  • In a salad bowl, combine greens, fruit, nuts, and cheese.
  • In a separate bowl (or blender) combine all the salad dressing ingredients (olive oil, vinegar, honey, dry mustard, garlic and salt) and whisk to combine.
  • Pour dressing over salad and serve.

SALAD
1 soft round lettuce
1 little gem lettuce
1 small radicchio (or an extra little gem)
a few sprigs of soft mixed fresh herbs, such as basil, flat-leaf parsley, mint
LEMON DRESSING
1 lemon
6 tablespoons extra virgin olive oil

Steps:

  • To make the dressing, halve the lemon, then squeeze the juice into an empty jam jar, using your fingers to catch any pips.
  • Add the oil and a pinch of sea salt and black pepper to the jar.
  • Put the lid securely on the jar and shake well.
  • Have a taste and see whether you think it needs a bit more lemon juice or oil - you want it to be slightly too acidic, so that it's still nice and zingy once you've dressed your salad leaves.
  • Use a knife to trim the roots away from all the lettuces. Separate out the leaves, throwing any tatty ones away.
  • Pop them in a colander and give them a good wash under cold running water over the sink.
  • Spin them dry in a salad spinner, or wrap in a clean tea towel and shake dry, then pile the leaves into a large salad bowl.
  • Pick and add the herbs to the bowl, discarding the stalks.
  • From a height, drizzle 3 tablespoons of the dressing over the leaves and gently toss together with the tips of your fingers until every leaf is coated - try not to be heavy-handed and don't be tempted to overdress or the leaves will go limp.
  • Have a taste and add a splash more dressing, if needed - remember you can always add more but you can't take it away, so be cautious. Pop the lid securely on the jam jar and keep the leftover dressing in the fridge for another day. Serve the salad straightaway.

1 thinly sliced onion
1 bag washed and drained spinach leaves
2 shredded carrots

10 oz cut in half sweet cherry tomatoes
12 oz in oil, chopped drained and reserve oil roasted red peppers
1 bulb roasted and cooled garlic
¼ cup chopped roasted red pepper
2 fresh lemon juice
⅔ cup balsamic vinegar
¼ cup chopped fresh basil leaves
1 tsp fresh ground sea salt
1 tsp fresh ground cracked pepper
½ tsp red pepper flakes
2 tbsp honey
1 tsp Dijon mustard
½ cup olive oil
¼ cup roasted red pepper oil

Steps:

  • Wash spinach and set aside to drain well (tear apart large leaves and remove thick stems).
  • Roast 1 bulb of garlic in a 400 degrees F oven.
  • Peel away the outer layers of the garlic bulb skin, leaving the skins of the individual cloves intact.
  • Using a knife, cut off ¼ to a ½ inch of the top of cloves, exposing the individual cloves of garlic.
  • Place the bulb cut side up on a piece of heavy-duty aluminum foil, drizzle with about 2 tbsp of olive oil making sure to cover each clove and then bring the sides of the foil up and seal all around.
  • Bake for about 30-35 minutes or until cloves are soft and caramel colored.
  • Let cool until you can touch it with your hand and squeeze out each clove into a cup or dish...let cool while you make the salad.
  • Make pasta according to box, cook to "al dente" about 12 minutes.
  • Drain the pasta and rinse with cold water to completely cool the pasta and stop the cooking process.
  • Turn out into a large bowl, add cucumber, tomatoes, onions, shredded carrots and roasted red peppers, add the spinach and the fresh mozzarella and toss lightly.
  • Mix all of the dressing ingredients together in a blender except the two oils, combine the two oils together and then slowly drizzle in the oil mixture while the blender is running and blend completely.
  • Pour dressing over pasta salad and toss well to coat.
  • Chill overnight to serve the next day this will allow the flavors to blend and will slightly wilt the spinach.
  • Serve along side grilled chicken, fish or as a light lunch with fresh crusty bread.

1/2 lb whole wheat orzo pasta **
1 cup red bell pepper, diced
½ small red onion, diced
1 English cucumber diced
3 cups baby spinach, washed and dried
3 oz of Feta Cheese
Lemon-Mint vinaigrette
3 tablespoons fresh lemon juice
1 teaspoon lemon zest
1 tablespoon honey
½ teaspoon Salt and ¼ tsp pepper to taste
1/3 cup olive oil
1 tablespoon chopped fresh mint

Steps:

  • Cook orzo based on the package direction, while pasta is cooking make vinaigrette.
  • For the vinaigrette
  • Add lemon, zest, honey and salt and pepper and whisk well, drizzle in olive oil and add chopped mint last. Set aside.
  • To Assemble
  • Place spinach at the bottom of colander and drain hot pasta over spinach to lightly wilt.
  • In a large mixing bowl add pasta mixture, bell pepper, onion and cucumber and combine.
  • Stir in vinaigrette and combine to coat with dressing.
  • Last add the feta cheese and mix one last time.

2 tablespoons olive oil
1 tablespoon cider vinegar
1 teaspoon Dijon mustard
Salt and freshly ground pepper
5 ounces baby spinach leaves (about 5 cups lightly packed)
1 Granny Smith apple
1/3 cup walnut pieces, toasted in a dry skillet over a medium-high flame until fragrant, about 2 minutes

Steps:

  • In a small bowl whisk together the oil, vinegar and mustard. Season with salt and pepper to taste.
  • Toss the spinach with the dressing until evenly coated then divide the spinach among 4 serving plates.
  • Core the apple and slice it into matchsticks. Sprinkle a quarter of the apple pieces on top of each salad. Follow with the walnut pieces. Serve immediately.
