Simple Spicy Korean Hot Red Pepper Paste Dip for Cucumbers image

This is a simple spicy dip that we throw together to dip cucumbers in. We also use it as a condiment on lettuce wraps. It is very spicy but very good. The red pepper paste (gochujang) can be found in most asian groceries. We always have it on hand to use in our korean dishes. Awesome flavor, but careful, it's addicting!

1 tablespoon sesame oil
1/2 teaspoon sesame seeds

Steps:

  • Combine red pepper paste, sesame oil and sesame seeds.
  • Enjoy with fresh cucumbers or other vegetables.

Steps:

  • Chop 1 English cucumber. Sprinkle with 1 teaspoon kosher salt; let sit 10 minutes. Whisk 1 tablespoon rice vinegar, 2 teaspoons each sugar and soy sauce, 1/2 teaspoon sesame oil, 2 sliced scallions, 1 minced garlic clove and a pinch of red pepper flakes in a large bowl. Drain the cucumber and toss with the dressing; season with salt. Top with chopped cilantro.

1 1/2 ounces champignon mushrooms
4 shiitake mushrooms
1/2 onion
3 boneless chicken breasts
2 -3 ounces linguine
1 pinch garlic and herb seasoning
3 ounces pre-shredded mozzarella cheese
1 tablespoon sake
1 tablespoon minced garlic clove
1/2 jalapeno
2 tablespoons korean red pepper paste
1 tablespoon sugar water
1/2 tablespoon water
1 tablespoon ketchup
1 teaspoon lemon juice
1 tablespoon soy sauce

Steps:

  • Cut chicken breast into small cubes and place into a bowl. Add sake 1T and a pinch of garlic and herb seasoning over the chicken. Hand rub chicken and leave it for 30 minutes.
  • Boil water with a pinch of salt and cook pasta until it's chewy.
  • Clean mushrooms. Slice shiitake and onion.Mince jalapeno.
  • Heat canola oil in a pan over medium-high heat. Stir fry minced garlic 1T and onion. When the onion turns clear, add mushroom and jalapeno. Continue to stir fry quickly until the vegetables become tender. Place the vegetables on a dish.
  • Pour the sauce over the chicken in the pan and cook. When the chicken is done, add the vegetables and mix everything together thoroughly. Add mozzarella cheese.

1 teaspoon soy sauce
2 cloves garlic, crushed
1/4 teaspoon salt
1 teaspoon toasted sesame seeds
1 teaspoon sesame oil

1 teaspoon sugar
1 teaspoon red pepper paste (kochujang)

Steps:

  • Clean cucumbers and slice 1/4" thick (unpeeled).
  • Sprinkle over with salt, stir and let sit for 10 minutes.
  • Combine ingredients, toss and serve.

1/4 teaspoon nutmeg
1/8 teaspoon clove
1/8 teaspoon cinnamon
1/8 teaspoon allspice
1 small onion, minced
2 garlic cloves, minced about 2 teaspoons
2 tablespoons salt
1/4 cup dry red wine
2 cups sweet paprika
1/4 cup hot paprika
1 tablespoon ground red pepper
1/2 teaspoon black pepper
1 1/2 cups water
2 tablespoons vegetable oil

Steps:

  • Toast ginger, cardamom, coriander, fenugreek, nutmeg, cloves, cinnamon and allspice in a heavy skillet for one to two minutes, stirring constantly. Remove from heat and let spices cool.
  • Combine toasted spices, onion, garlic, 1 tablespoon of salt and the wine in a food processor or blender and process until mixture is a smooth paste. You can also pound mixture together in a large mortar & pestle.
  • Combine paprika`s, red pepper, black pepper and the other tablespoon of salt in the heavy skillet. Toast over low heat one minute, stirring constantly.
  • Stir water into skillet slowly. Add the spice paste. Cook, stirring vigorously, over low heat for about 10 minutes.
  • Store berberé in a jar or crock. After it has cooled to room temperature, cover with a thin layer of oil. This layer should be replenished after each use to help preserve the spice mixture. Store in refrigerator.
