SIMPLE MAPLE SYRUP
After learning that the inexpensive maple syrup you buy in the store is extremely bad for you, I decided I needed to find a way to make my own. After searching through dozens of recipes and some trial and error, this is what I came up with. You can find maple extract in the grocery store near the vanilla extract. One batch of this recipe costs almost nothing.

Steps:
- combine sugars in a medium sized pot and add one cup of water.
- bring to a boil on medium heat stirring constantly.
- let boil for three minutes.
- remove from heat and add 1/2- 1 tsp maple extract (to taste).
- serve warm.

MAPLE SALMON
This is the best and most delicious salmon recipe, and very easy to prepare. I love maple in everything and put this together one night. My husband totally loved it; he did not like salmon that much until he had this.

- In a small bowl, mix the maple syrup, soy sauce, garlic, garlic salt, and pepper.
- Place salmon in a shallow glass baking dish, and coat with the maple syrup mixture. Cover the dish, and marinate salmon in the refrigerator 30 minutes, turning once.
- Preheat oven to 400 degrees F (200 degrees C).
- Place the baking dish in the preheated oven, and bake salmon uncovered 20 minutes, or until easily flaked with a fork.

- Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets.
- In a large bowl, cream the butter and brown sugar. Add the egg, syrup and vanilla. Mix until well blended. Sift together the flour, salt and baking soda. Stir into mixture until well blended. Shape into 1 inch balls and roll in sugar. Place on cookie sheets about 2 inches apart and flatten slightly.

Maple syrup candy is so good, and so easy I was surprised nobody had submitted a recipe for it. This is just a quick one from a store cook book, but it is very good.

- Cook syrup in a saucepan over medium heat until it reaches 240 degrees on a candy thermometer.
- Remove from heat and allow to cool to 200 degrees.
- Stir constantly until syrup becomes sugary.
- Pour into molds (something about the size of a caramel candy).
- When candy is cool, you can remove from molds.

- Bring to boil.
- Boil just for a couple of minutes, so that all sugar is dissolved and syrup is clear.
- Add Mapleine (extract) to taste (as dark as you want it).

- This recipe can be adapted to make any amount of syrup- Just always double your sugar to water, ie 2 cups sugar, 1 cup water.
