POTATO PIE
I've collected a large variety of recipes using our farm's crop of potatoes. This is a favorite. It has a wonderful pastry crust and is chock-full of sliced potatoes with onion, parsley and seasoning.-Patricia Wells, Riverhead, New York

Steps:
- Combine flour, sugar and salt in a bowl; cut in the shortening and butter until crumbly. Add water and mix lightly with a fork. Shape dough into a ball; divide in half. On a lightly floured surface, roll out one half to fit a 9-in. pie plate. For filling, combine potatoes, onion, salt, pepper and parsley. Spoon into crust; dot with butter. Roll out remaining dough to fit top of pie; place over filling. Seal and flute edges; make several slits in top crust. Bake at 375° for 1 hour. Pour cream into slits in crust; return to oven for 25 minutes or until potatoes are tender. Let stand 5 minutes before cutting.

Steps:
- Boil potatoes in salted water until tender, then drain and mash.
- Stir in butter, sour cream, chives, seasoned salt and pepper.
- Butter and lightly flour a 9" deep pie plate.
- Spread in mashed potatoes.
- Arrange 6 oz mozzarella cheese on top of potatoes.
- Top with tomatoes and sprinkle with basil and oregano.
- Top with remaining mozzarella, Parmesan cheese and drizzle with melted butter.
- Bake at 425° for 25 to 30 minutes.
- Cool slightly before cutting.

Steps:
- Preheat oven to 350 degrees F.
- Partially thaw chicken breast strips if necessary and slice into ½ inch chunks.
- Place chicken chunks and frozen vegetables in a large bowl; add pesto and toss all until pesto is distributed over chicken and vegetables.
- Spray an 11 X 7 inch casserole dish with non-stick cooking spray.
- Add vegetables and chicken to casserole dish.
- Combine mashed potatoes with the tomatoes and their flavorful oil. Spread potato/tomato mixture over chicken and vegetables, being careful to cover completely all the way to edges of dish.
- Cover and bake at 350 degrees F for 25 minutes.
- Remove cover and bake an additional 10 minutes.

ITALIAN COTTAGE PIE
Add a little 'mamma mia' to a beef stew with pancetta and oregano, and a crunchy topping of Parmesan-coated potatoes

Steps:
- First make the Beef with red wine & carrots (see 'Goes well with'). You will need half the finished stew for this recipe.
- Heat oven to 220C/200C fan/gas 7. Cook the potatoes in boiling, salted water for 10 mins until almost done. Drain well, then mix with the butter and half the Parmesan.
- In a large saucepan, fry the pancetta or bacon until golden. Stir in the fresh oregano leaves or dried oregano, then add the beef stew and heat through. Tip into an ovenproof dish and top with the cheesy potatoes, overlapping. Sprinkle with the remaining Parmesan and bake for 20 mins until golden and crisp on top. Serve with a green salad.

- Brown ground beef in skillet. Drain off excess fat.
- Place ground beef, seasoned with salt and pepper if desired, in bottom of shallow baking dish.
- Cook 2 cup mashed potatoes according to box directions.
- Layer mashed potatoes over ground beef.
- Drain juice from diced tomatoes and cover mashed potatoes with diced tomatoes and onions.
- Sprinkle parmesan cheese and parsley over tomatoes and onions.
- Cook in a 350°F oven for 30 minutes.
