CHANA MASALA (SAVORY INDIAN CHICK PEAS)

Chana Masala (Savory Indian Chick Peas) image

Indian food is not just curried sauces. It's not too exotic either. Unless 'exotic' is code for 'yummy and full of flavor.' This dish features a healthy mixture of chickpeas, tomatoes, onion, and spices. Both carnivores and vegetarians will enjoy this meal. My kids love it. Leave out the green chile if the kiddies will be eating. Serve over basmati or jasmine rice and enjoy. Namaste y'all!

CHICKPEA CURRY RECIPE

Chickpea Curry Recipe image

A fast recipe to make delicious and flavorsome Coconut Chickpea Curry. Serve it over steamed rice, quinoa, brown rice or with any flatbreads like Naan, roti or paratha.

Provided by Swasthi

Categories     Main

Time 35m

Number Of Ingredients 17

2 tablespoons oil ((or ghee for flavor))
3 cups canned chickpeas ((or precooked , 2 - 15 Oz cans, 1 cup dry chickpeas, refer notes))
1½ cup onions (( fine chopped, 1 large or 2 medium onions))
1 tablespoon ginger ((1 inch fresh root, peeled & fine chopped))
1 tablespoon garlic ((4 to 5 garlic cloves, peeled & fine chopped))
1½ cups fresh tomato puree ((or 1 cup canned/bottled tomato puree))
1½ teaspoon salt
½ to 2 teaspoons red chili powder ((adjust to taste, or mild smoked paprika))
¼ teaspoon turmeric
1 teaspoon cumin powder
1¼ tablespoon coriander powder
1 tablespoon curry powder ((or pav bhaji masala or 1 teaspoon garam masala))
½ to 1 teaspoon garam masala ((start with ½ teaspoon))
1 teaspoon sugar
1¼ cups water or stock ( (refer notes))
1¼ cups coconut milk ( (canned or first pressed, refer notes))
¼ cup coriander leaves ( (chopped cilantro))

Steps:

  • Pour oil to a large pot & heat on a medium flame. Add chopped onions and cook until golden, stirring every 2 mins.
  • Add ginger and garlic. Saute for 1 to 2 mins until the aroma of ginger garlic comes out.
  • Lower the heat completely. Add salt, red chilli powder, turmeric, cumin powder, coriander powder and curry powder.
  • Give a quick stir, taking care not to burn them. When you smell the spices aromatic, stir in the tomato puree. If using fresh tomato puree (not bottled), cook for about 4 to 5 mins, on a medium heat until the tomatoes cook down and loose the raw flavor.
  • Add chickpeas (Preboiled or canned), 1 ¼ cup water (or stock) and coconut milk. Mix well. If using canned chickpeas, make sure they are tender and not hard. Drain the liquid away in your sink from the can and rinse them well before adding to the coconut curry.
  • Cover and simmer on a low heat for 15 mins, stirring every 5 mins so the curry doesn't burn at the bottom. When done the chickpeas should have a soft and melt-in-the- mouth texture with all of the flavors absorbed. If they taste bland cook them a little longer.
  • Stir in the garam masala and sugar. Taste test and add more salt & garam masala if required.
  • Turn off the heat. Keep the coconut chickpeas curry covered until served, this helps to retain the flavors of the garam masala.
  • When the temperature comes down a bit, garnish with chopped coriander leaves. Squeeze in some lemon juice and serve over steamed rice, quinoa & millets or with roti, naan or any flatbreads.

Braised Indian Chickpea Stew image

This Indian-inspired chickpea stew features lots of warming spices, chickpeas, cabbage, and carrots. Everything gets braised in the oven and the result is a rich and hearty yet wholesome stew that will satisfy the heartiest of appetites.

Provided by Nisha Vora

Categories     Dinner

Time 1h50m

Number Of Ingredients 30

3 tablespoons grapeseed oil
1 large yellow onion, (chopped)
4 medium carrots, (sliced on the bias*)
½ of a medium cabbage, (roughly chopped (16-18 ounces or 450-510g))
4 garlic cloves, (thinly sliced)
2- inch (5 cm) piece of fresh ginger, (grated or minced )
Kosher salt & freshly cracked black pepper
3 tablespoons tomato paste
1 - 1 1/2 teaspoons Indian red chili powder**
1 teaspoon ground turmeric
1/4 teaspoon ground nutmeg
¾ cup (180 mL) dry white wine***
1 1/2 cups (360 mL) vegetable broth ((plus a little more as needed))
2 (15-ounce/425g) cans chickpeas, ( drained and rinsed)
2 bay leaves
1/3 cup (55g) golden raisins (sultanas)
1 (14.5-ounce/410g) can diced tomatoes
1 cup (240 mL) full-fat canned coconut milk, (stirred well)
6 whole green cardamom pods
4 whole cloves
1 teaspoon cumin seeds
1 teaspoon coriander seeds
1 teaspoon fennel seeds
2 cinnamon sticks ((2-3 inches long))
1 teaspoon garam masala
¾ cup (9g) cilantro leaves (chopped, plus more for garnish)
Lemon juice ((a few squeezes) )
1-2 teaspoons organic cane sugar, (as needed)
Coconut yogurt or other vegan yogurt
White rice, brown rice, or Indian flatbread such as naan or roti

Steps:

  • Roughly grind the whole spices. Add the cardamom pods, cloves, cumin seeds, coriander seeds, and fennel seeds (not the cinnamon sticks) to a spice grinder or mortar or pestle. Coarsely grind (just a few pulses with an electric grinder) - you want some texture to remain. Remove the empty cardamom pod shells. Note: If you don't have either of these tools, see the blog post section "Frequently Asked Questions"
  • Preheat the oven to 350°F/175°C.
  • Heat a Dutch oven or stove-to-oven braising pan over medium heat with 1 tablespoon of the oil. Once the oil is shimmering, add the roughly ground spices *and* the cinnamon sticks. Sauté for 60 seconds or until very fragrant, tossing frequently to prevent burning.
  • Add the remaining 2 tablespoons of oil to the pan. Next, add the onions, carrots, and cabbage. Season with ½ teaspoon kosher salt. Cook until the vegetables start to soften, 6 to 8 minutes. Add the garlic and ginger, and cook for another 2 minutes.
  • Add the tomato paste and stir frequently for 2 minutes to coat everything. If things start to dry out or seem like they might burn, add a splash or two of water and scrape up the browned bits. Add in the Indian red chili powder, turmeric, and nutmeg, and stir frequently for 1 minute.
  • Deglaze the pan with the white wine, scraping up the browned bits and fond from the bottom of the pan. Cook until the wine is mostly evaporated and the smell of alcohol has dissipated, about 2 minutes.
  • Pour in the vegetable broth, chickpeas, bay leaves, raisins, tomatoes, and 1 ½ teaspoons of kosher salt and black pepper to taste. Stir well to combine and bring to a simmer. Allow to simmer for 2-3 minutes, stir again, and then turn off the heat.
  • Put the lid on the pan, or if it doesn't have a lid, cover tightly with foil. Transfer the pan to the preheated oven and braise for 1 hour, until the chickpeas and vegetables are soft.At the halfway mark, check to see if the liquid has evaporated somewhat. If so, add additional vegetable broth or water (about 1/4 cup).
  • Pour in the coconut milk and return the pan to the oven to braise for another 10 minutes. Take out of the oven and discard the bay leaves and cinnamon sticks.
  • Stir in the garam masala, cilantro, and a squeeze of lemon juice. Taste for seasonings, adding more salt or pepper as needed. If it's slightly too acidic, stir in a teaspoon or two of sugar.
  • Serve warm with Indian flatbread or over a bed of rice. Dollop on some vegan yogurt before serving or serve on the side.

INDIAN BUTTER CHICKPEAS

Indian Butter Chickpeas image

A vegetarian riff on Indian butter chicken, this fragrant stew is spiced with cinnamon, garam masala and fresh ginger, and is rich and creamy from the coconut milk. You could add cubed tofu here for a soft textural contrast, or cubed seitan for a chewy one. Or serve it as it is, over rice to catch every last drop of the glorious sauce. You won't want to leave any behind.

Categories     easy, weekday, beans, curries, main course

Time 1h10m

Yield 4 to 6 servings

Number Of Ingredients 15

4 tablespoons unsalted butter
1 large onion, minced
1 1/2 teaspoons kosher salt, plus more to taste
4 garlic cloves, finely grated or minced
1 tablespoon grated fresh ginger
2 teaspoons ground cumin
2 teaspoons sweet paprika
2 teaspoons garam masala
1 small cinnamon stick
1 (28-ounce) can whole peeled plum tomatoes
1 (15-ounce) can coconut milk
2 (15-ounce) cans chickpeas, drained
Ground cayenne (optional)
Cooked white rice, for serving
1/2 cup cilantro leaves and tender stems, for serving

Steps:

  • Melt butter in a large heavy-bottomed pot or Dutch oven over medium heat. Stir in onion and 1/2 teaspoon salt; cook until golden and browned around the edges, stirring occasionally, about 20 minutes. (Don't be tempted to turn the heat up to medium-high; keeping the heat on medium ensures even browning without burning the butter.)
  • Stir in garlic and ginger, and cook another 1 minute. Stir in cumin, paprika, garam masala and cinnamon stick, and cook another 30 seconds.
  • Add tomatoes with their juices. Using a large spoon or flat spatula, break up and smash the tomatoes in the pot (or you can use a pair of kitchen shears to cut the tomatoes while they are still in the can). Stir in coconut milk and the remaining 1 teaspoon salt. Bring to a simmer, and continue to cook for 10 minutes, stirring occasionally, and continuing to mash up the tomatoes if necessary to help them break down.
  • Stir in chickpeas and a pinch of cayenne if you like. Bring the pot back up to a simmer and cook, stirring occasionally, for another 10 minutes. Taste and add more salt if necessary.
  • Serve spooned over white rice, and topped with cilantro.

15 MINUTE VEGETARIAN INDIAN CHICKPEA STEW (CHANA MASALA)

15 MINUTE VEGETARIAN INDIAN CHICKPEA STEW (CHANA MASALA) image

Categories     Soup/Stew     Bean     Vegetarian     Quick & Easy     Boil

Yield 4 people

Number Of Ingredients 13

Servings: 3-4 people
Ingredients
Part I (5 minutes)
1 chopped white/yellow onion
1 Teaspoon turmeric
1/2 can diced tomatoes
Part II (5 minutes)
2 cans chickpeas (if they are very firm, microwave them first in a bowl to soften them up)
Part III (5 minutes)
2 Tablespoons Garam Masala
1 Tablespoons Cumin Powder (Roasted Cumin Powder preferred, but any is OK).
2 Tablespoons finely chopped fresh ginger
1/2 cup coarsley chopped fresh cilantro (optional)

Steps:

  • Part I (5minutes) 1. Set stove to high, and add in a small amount of olive oil, margarine or butter to a deep frying pan or pot. 2. Once oil is very hot, add in onions and stir. 3. Add turmeric and stir -- cook until onions are slightly caramelized. (Be careful as turmeric will stain your clothes and appliances.) 4. Add in tomato and bring to boil. Part II (5 minutes) 5. Add in chickpeas, stir and bring to boil (5 minutes). Then reduce to a low-medium heat. Part III (5minutes) I do this part while the chickpeas are cooking to save time. 6. Chop, then add in all of the ingredients listed in Part III above, stir and serve. It is important NOT to let either garam masala or ginger boil for a long time, or else it adds a bitter flavour -- hence these two ingredients are added last. If you prefer softer or more flavourful chickpeas, then simmer on a low heat for 1-2 hours or store in the fridge overnight. This dish stores well in the fridge and freezes well -- it always tastes even better the next day once the spices have soaked in. Serve with hot, steamed rice (Basmati or any long grain rice) or with Pita bread. If serving with rice, I get the rice cooking before I start this recipe, so that it cooks while I prep and cook the beans -- like I said, no more than 15 minutes, from start to finish, including all chopping.
