- Preheat the oven to 400 degrees F. In a small bowl, mix the butter and tarragon until combined; set aside.
- Lay out 4 large pieces of foil. Layer the vegetables in the center of each piece of foil, starting with the mushrooms, then the celery and scallions. Dot the vegetables with some of the herb butter (use about half) and season each portion with 1/4 teaspoon salt, and pepper to taste. Lay the tilapia fillets over the vegetables; dot with the remaining herb butter. Sprinkle each fillet with 1/4 teaspoon salt, and pepper to taste.
- Bring the foil ends together, fold over and crimp closed on all sides to make sealed packets. Place the packets on a baking sheet and bake until the fish is cooked through but still moist, 18 to 22 minutes. Remove the packets from the oven and let sit 2 minutes before opening. Transfer the fish and vegetables to plates and drizzle with the cooking juices.

- Set oven rack about 6 inches from the heat source and preheat the oven's broiler. Brush a broiler pan with olive oil.
- Stir butter and garlic paste together in a bowl. Divide garlic mixture evenly between two bowls, reserving one bowl for serving.
- Stir garlic powder, oregano, Italian seasoning, parsley, and salt together in a bowl.
- Place tilapia fillets on prepared broiler pan; brush each fillet with garlic butter and sprinkle each with Italian seasoning mixture, reserving 1/2 the garlic butter in the bowl and 1/2 the Italian seasoning mixture.
- Broil fillets in the preheated oven for 2 minutes, brush again with garlic butter, and broil for 2 more minutes. Turn fillets over. Brush with garlic butter and sprinkle with remaining Italian seasoning mixture. Broil until tilapia fillets flake easily with a fork, 3 to 5 minutes. Serve with reserved garlic butter and lemon juice.

HERB-COATED TILAPIA WITH LEMON

- Finely grate the zest from the lemon, then cut the lemon in quarters and set aside.
- Mix the herbs and lemon zest on a plate. Sprinkle the fillets with 3/4 teaspoon salt and 1/4 teaspoon pepper and coat both sides of each fillet with herbs, pressing them on so they adhere.
- In a large (12-inch) nonstick skillet, heat the oil over medium heat until hot. Cook the tilapia until the flesh is opaque and just cooked through, about 2 minutes on each side (cut into the thick part of a fillet to check). Serve the tilapia with the lemon quarters, for squeezing at the table. (Note: If you're serving this dish to company, you might want to cut wedges from a lemon that hasn't been zested.)

- Mix butter with parsley, garlic, shallots, Dijon mustard, prosciutto, and lemon juice. Add a pinch of salt and pepper then stir until evenly mixed. Set aside.
- Heat oil in a large non-stick skillet over medium-high heat. Season the tilapia fillets with salt and pepper. When oil is shimmering, add fish fillets top side down and until fish is almost cooked through and the underside is deep golden brown, about 4 minutes. Turn fillets over.

- Preheat the oven to 350 degrees F (175 degrees C). Spray a shallow baking dish with cooking spray. Pat fish fillets dry.
- Mix bread crumbs, seasoning, salt, and cayenne pepper together in a zip-top bag. Seal the bag and toss ingredients together in the sealed bag until thoroughly mixed.

- Preheat oven to 425 degrees F. Place cooking rack in the center of the oven. Get two pie plates or shallow casserole dishes or bowls and place them next to each other Line a baking sheet with parchment paper or foil - keep this near the pie plates Place lemon juice in one pie plate In the other pie plate, add the salt, pepper, Italian and Panko bread crumbs, Italian seasoning, onion powder, garlic powder and Parmesan cheese. Mix thoroughly. Place one piece of tilapia into the lemon juice and coat each side Move it to the bread crumb mixture and pat the bread crumbs onto each side of the fish, until it's well coated. Move the tilapia to the baking sheet. Repeat with the other fillet. Bake the tilapia for about 18-20 minutes or brown and crispy on top. I put mine under the broiler for about 1 minute after baking, just to get them a little extra crispy. Be careful though, because they can go from brown to burnt in a few seconds under the broiler. Fish is cooked through when internal temperature is 140 degrees F. Serve with some extra lemon juice squeezed over top and a few grates of lemon zest. Delicious accompanied by my Lemon Garlic Aioli Recipe. I added a little horseradish to the aioli to bump up the flavor, but that's optional.
