1/2 lb lean pork boneless loin, cut into 1/2-inch cubes
3/4 cup orange juice
1 tablespoon packed brown sugar
1/2 teaspoon grated orange peel
1 1/2 cups sliced fresh mushrooms (4 oz)
3/4 cup uncooked couscous or rice
1 medium orange, peeled, sectioned

Steps:

  • In plastic food-storage bag, mix ginger, garlic powder and pepper. Add pork to bag; shake bag to coat pork with seasonings.
  • Heat 10-inch nonstick skillet over medium-high heat. Cook pork in skillet 2 to 3 minutes, stirring frequently, until brown. Stir in orange juice, brown sugar, orange peel and mushrooms. Reduce heat to low. Cover and cook about 15 minutes or until pork is tender.
  • Meanwhile, cook couscous as directed on package. Stir orange sections into pork mixture. Serve over couscous.

1-2 tablespoons olive oil
10-12 chicken drumsticks, bone-in and skin-on
salt and pepper
1 cup orange juice (freshly squeezed, or whatever you have)
3 tablespoons liquid honey
a squirt of sriracha (according to your tastes)
2 tablespoons hoisin sauce
2 tablespoons rice vinegar
4 tablespoons soy sauce
2 tablespoons cornstarch
2 teaspoons sesame oil
1 1/2 teaspoons freshly grated ginger
3 cloves garlic, finely minced
orange slices, sesame seeds, and fresh parsley for garnish (optional)

Steps:

  • Preheat your oven to 375 degrees Fahrenheit.
  • Heat a large oven-safe skillet over medium-high heat and add the olive oil.
  • Pat the chicken drumsticks dry with paper towels and season with salt and pepper.
  • Place the chicken drumsticks in the oiled pan and cook on all sides until golden brown. No need to worry about cooking the chicken through at this point - just get a good golden crust on it!
  • In a medium bowl, whisk together the orange juice, honey, sriracha, hoisin sauce, rice vinegar, soy sauce, cornstarch, sesame oil, ginger and garlic until well blended.
  • When the chicken has browned on all sides, pour the sauce over the chicken evenly to coat and turn off the heat under the pan.
  • Place the pan in the pre-heated oven and bake for about 25 minutes or until the sauce has reduced and thickened and the chicken is cooked through.
  • Baste the chicken with the sauce once during the baking process, if desired.
  • Serve with orange slices, a sprinkling of sesame seeds, and fresh parsley, if desired.

1 large orange-freshly squeezed to make 1/2 Cup of juice
1/2 inch piece of ginger-minced
1 large or several small cloves of garlic-minced
1 Tablespoon tamari (or soy) sauce
2 Tablespoons honey
2 Tablespoons rice vinegar
1/2 tsp. sesame oil
2 tsp. cornstarch
1/2 Cup water

Steps:

  • Put all ingredients into a non stick frying pan and boil for a few minutes.
  • Whisk until the sauce reduces enough to begin thickening.
  • Mix the cornstarch and water together and pour half of it into the boiling sauce, whisking until the sauce thickens to your desired consistency.(a syrup consistency works well).
  • Use the remaining cornstarch as necessary.
  • Remove from heat and cool to desired temperature.
  • Store in the fridge covered for up to a week. If it gets too thick warm it a bit and whisk in a little water.

1 cup orange juice
1/4 cup cider vinegar
1 tablespoon finely grated fresh ginger
2 tablespoons grated orange zest
3 pork tenderloin (about 3 pounds total)
1 cup orange marmalade
1 tablespoon finely grated fresh ginger
2 tablespoons light soy sauce
2 tablespoons cider vinegar
1 tablespoon Dijon mustard
salt & freshly ground black pepper

Steps:

  • To make the marinade: Combine the orange juice, vinegar, ginger, and orange zest in a small bowl.
  • Put the pork tenderloins in a shallow pan and pour the marinade over them. Refrigerate for 4 to 6 hours.
  • To make the Orange-Ginger Sauce: Melt the marmalade in a small pan. Add the ginger, soy sauce, cider vinegar, and mustard, stirring to combine; keep warm.
  • Prepare the grill with a medium-hot fire.To gauge the heat, hold your hand palm down about 4 inches above the grill. If you can hold it there for only 5-6 seconds it means you have a medium hot fire.
  • Remove the meat from the marinade and season it with salt and pepper. Grill, turning at least once, until an instant-read thermometer inserted in the center of the meat reads 150F, 15 to 20 minutes. Brush with some of the Orange-Ginger Sauce during the last 5 minutes of cooking. Allow the meat to rest on a cutting board tented with aluminum foil for a few minutes before slicing. Slice the meat 1/2 inch thick on the diagonal. Pass the remaining sauce at the table.

2 tablespoons pure maple syrup
2 tablespoons rice vinegar
1/4 cup soy sauce
2 cloves minced garlic
1 teaspoon fresh minced ginger
1 teaspoon olive oil or other neutral oil
2 tablespoons cornstarch
1/4 cup water

Steps:

  • Heat 1 teaspoon of olive oil or other neutral flavored oil in a sauce pan
  • Add the minced garlic and minced ginger and cook for 2 - 3 minutes, until fragrant. Stir often to avoid burning
  • Add 1/3 cup water, orange juice, brown sugar, maple syrup, rice vinegar, and soy sauce and heat for 3 minutes, stirring often
  • In a small bowl, whisk the 2 tablespoons of cornstarch and 1/4 cup of water to form the slurry

This recipe is super simple, tastes wonderful is a low carb meal and only takes 30 minutes to make. I love fish and salmon is no exception, it has been on special at the moment which makes it an even better buy when you want a fish dinner. I have included the ingredients below of the vegetables I served this with for two so either serve it this way or it is also good with rice or noodles if you want to add some more carbs. The sauce would be enough to drizzle over 4 average size salmon fillets, mine were large. If you wanted to have enough liquid for 4 to go with rice or noodles and wanted the extra liquid. I think the sauce ingredients would would work fine doubled, I would not add too much more ginger though and the chili amount is fine as is.

2 tablespoons peanut oil, divided use
1 garlic clove, crushed (up this to 2 if you do not accompany with the veg.)

2 red chilies, finely chopped (add as many or few seeds according to personal taste)

250 g asian mixed vegetables, fresh (My pack came with carrot, cabbage, snow peas and broccoli.)
60 g baby asparagus spears

Steps:

  • Add a little peanut oil to a pan, about 1/2 Tablespoon, add chili, ginger and garlic, cook for a minute, add marmalade, manis, vinegar and sugar, stir to heat through.
  • Add another half tablespoon oil to another pan, cook fish skin side down first, to crisp skin, turn and cook salmon until pink, and flakes easily and is cooked as desired.
  • Heat remaining tablespoon of peanut oil in a wok add pepper and garlic, stir fry 1 minute, turn heat down, add Asian veg pack, asparagus and bean sprouts, stir fry until veg are tender.
  • Note: If wok is too hot veg will burn, make sure it has cooled down a bit add a little soy and water if you need some liquid, but keep it very minimal.
  • To Serve: Place vegetables on a plate top with salmon and drizzle with sauce.

4 chicken breasts, skinless
3/4 cup orange juice
1/3 cup soy sauce
1 tablespoon brown sugar
1 tablespoon Splenda sugar substitute
1 tablespoon gingerroot, grated
1 1/2 tablespoons cornstarch
1 orange, sliced
2 tablespoons parsley, snipped

Steps:

  • Preheat oven to 350 degrees.
  • Arrange chicken breast in a single layer, top side up, in a baking dish.
  • In a small bowl combine orange juice, soy sauce, brown sugar and ginger.
  • Pour over the Chicken.

24 ounces white fish fillets (we use tilapia, could try mahi mahi, cod or even salmon)
1 tablespoon ground coriander
salt and black pepper
1 medium red onion, quartered and thinly sliced
2 garlic cloves
2 teaspoons ginger, grated
1 teaspoon red pepper flakes (optional)
1 orange, zest and juice
1 cup chicken stock
2 tablespoons butter

Steps:

  • Warm 2 T. olive oil in a large nonstick skillet over medium-high heat.
  • Rub the fish fillets with the coriander, salt and black pepper.
  • Cook fish in the hot skillet until just done, a few minutes on each side.
  • Remove the fillets and set aside.
  • Add 2 T. EVOO, onions, garlic, ginger, and red pepper flakes (if using).
  • Cook until onions are translucent, then add the stock, orange juice, and zest.
  • Let warm and add butter.
  • Simmer for a minute then add fish back to the pan to heat through.
  • Serve with warm crusty bread and some crisp asparagus or green beans.
