1 ½ cups milk
1 cup pumpkin puree
1 egg
2 tablespoons vegetable oil
2 tablespoons vinegar
2 cups all-purpose flour
3 tablespoons brown sugar
2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon ground allspice
1 teaspoon ground cinnamon
½ teaspoon ground ginger
½ teaspoon salt

Steps:

  • In a bowl, mix together the milk, pumpkin, egg, oil and vinegar. Combine the flour, brown sugar, baking powder, baking soda, allspice, cinnamon, ginger and salt in a separate bowl. Stir into the pumpkin mixture just enough to combine.
  • Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Brown on both sides and serve hot.

3 eggs
1/2 cup pumpkin puree
1/3 cup olive oil
1 tablespoon brown sugar
1 1/2 cups almond milk (regular milk is fine too)
5 ounces plain nonfat Greek yogurt
2 cups whole wheat flour
2 tablespoons baking powder (yes, tablespoons!)
1/2 teaspoon salt
1 heaping teaspoon cinnamon
a pinch of nutmeg, cloves, and/or all spice

Steps:

  • Whisk the eggs, pumpkin, olive oil, brown sugar, almond milk, and Greek yogurt together until smooth.
  • Add the whole wheat flour, baking powder, salt, and spices. Stir until just combined.
  • Preheat a skillet or griddle to medium high heat. Pour 1/3 cup batter onto the hot griddle and let cook for 3-5 minutes until bubbles rise to the top and the edges look dry. Flip the pancakes and let cook for another 2-3 minutes. Remove and keep warm until ready to serve. Top with butter and maple syrup (or other ideas in the notes section below!) Keep leftovers in the fridge for a few days or freeze them to enjoy later.

1 cup maple syrup
5 tablespoons pecans, chopped and toasted
1 cup buttermilk pancake mix
2/3 cup cold water
1/3 cup canned pumpkin
1/2 teaspoon ground cinnamon
1/8 teaspoon ground ginger

Steps:

  • For pecan syrup: Combine the maple syrup and pecans in a small microwave safe bowl.
  • Heat in microwave until hot, about 25 seconds.
  • Set the pecan syrup aside and keep warm.
  • For pancakes: Whisk pancake mix, water, pumpkin, cinnamon and ginger in a medium bowl until just blended (do not overmix, the mixture should be lumpy).
  • Spray a heavy griddle with nonstick spray and heat over medium heat.
  • Spoon 2 Tbsp of batter onto griddle to form each pancake.
  • Cook for 2 minutes or until bubbles appear, then turn pancakes over and cook 2 minutes longer.
  • Transfer pancakes to plate.
  • Top with butter and serve with warm pecan syrup.

1/2 teaspoon ground cinnamon, McCormick(R)
1/8 teaspoon ground ginger, McCormick(R)
Nonstick vegetable cooking spray, Pam(R)

Steps:

1 large tart apple, peeled and thinly sliced
2 tablespoons brown sugar
2 tablespoons maple syrup
1/2 teaspoon ground cinnamon
PANCAKES:
1 cup all-purpose flour
1 tablespoon sugar
1-1/2 teaspoons baking powder
1-1/2 teaspoons pumpkin pie spice
1/2 teaspoon salt
2 large eggs, room temperature
1 cup 2% milk
1/3 cup canned pumpkin
2 tablespoons canola oil
1/2 cup chopped walnuts, toasted

Steps:

  • In a skillet, heat butter over medium-high heat. Add apple; cook and stir 3-4 minutes or until tender. Stir in brown sugar, maple syrup and cinnamon; cook and stir 1 minute longer. Remove from heat; keep warm., For pancakes, in a large bowl, whisk flour, sugar, baking powder, pie spice and salt. In another bowl, whisk eggs, milk, pumpkin and oil until blended.
