4 cups seitan (double the Seitan recipe below)
1 1/2 tablespoons olive oil, for pan-frying
4 cups sweet pineapple chunks (fresh if possible)
1 -2 red pepper, cubed
bamboo skewer
1 cup tomato sauce or 1 cup puree
1/2 cup low sodium soy sauce
3/4 cup brown sugar
1 cup pineapple juice

Steps:

  • Prepare the seitan as directed below, making a double batch of it. Drain well, cool, and cut into 1-inch chunks. Gently squeeze any excess water out if possible.
  • Heat the oil in a large nonstick skillet on medium-high heat. Add the seitan and pan-fry until golden brown but still soft. Avoid letting the seitan become dry and hard. Set aside.
  • Mix the marinade ingredients together in a medium saucepan. Add the seitan and place on medium heat. Bring the sauce to a boil. Turn the heat to low and gently simmer for about 1 hour covered.
  • Stir often to ensure that the seitan doesn't stick. Cook the sauce until it's quite thick. (Add a little water if it becomes too thick and pastelike.) Remove from the heat and cool enough to handle.
  • To assemble the kebabs, alternate pieces of seitan, pineapple, and bell pepper on the skewers, leaving space at the base for holding the skewer. You should be able to fill 12 sticks with 2 pieces each of pineapple and bell pepper and 3-4 pieces of seitan.
  • If barbecuing, place the skewers on a barbecue grill and cook until lightly browned, basting with the leftover sauce. If broiling, place the kebabs on a baking tray and baste each kebab with the remaining sauce. Broil until browned on the edges, turning to cook evenly.

These yummy little potatoes can be made ahead. Just cover and refrigerate the mixture in the bowl until grilling time. You can use either white or red potatoes or mix the two for a more colorful presentation.

4 lbs tiny new potatoes
salt
1/3 cup olive oil
2 teaspoons minced garlic
1/2 teaspoon dried thyme
1/2 teaspoon black pepper

Steps:

  • Place potatoes in salted water to cover in large sauce pot.
  • Boil until potatoes are tender, about 10 to 12 minutes.
  • Drain and transfer potatoes to large bowl.
  • Toss with oil, garlic, thyme and pepper.
  • Preheat grill.
  • Thread potatoes evenly on 6 metal skewers.
  • Grill for about 9 minutes, turning every 3 minutes and brushing with oil mixture until evenly browned.

Perfect at any backyard barbecue, served with a pilaf and garlic bread. For best results, vegetables should marinate for more than 2 hours, or even overnight. The marinating time in NOT included in the prep or cooking time.

1 small eggplant, about 3/4 lb cut into 2-inch cubes
3 medium carrots, cut into 1/2-inch slices
8 small red potatoes, about 2-3-inch in diameter
3 medium zucchini, sliced lengthwise, then into 1-inch slices
1 large red bell pepper, seeded and cut into 1-inch squares
2 medium onions, cut in wedges (separate wedges into 2-3 layers each)
16 whole mushrooms
3/4 cup olive oil
1/4 cup white vinegar or 1/4 cup lemon juice
2 garlic cloves, minced
1 teaspoon Dijon mustard
1/2 teaspoon oregano
1/2 teaspoon marjoram
1/2 teaspoon rosemary
1/4 teaspoon ground pepper

Steps:

  • Combine all ingedients for the Herb Marinade -- and set aside.
  • Cook eggplant in 1" boiling water for 3 minutes and drain.
  • Cook carrots in 1" boiling water until just tender crisp and drain.
  • Cook unpeeled potatoes in 1" boiling water for approximately 15-20 minutes. Drain and cut in half.
  • Place eggplant, carrots, potatoes, zucchini, peppers, onions and mushrooms in a large plastic bag. Add marinade, seal bag well.
  • Refigerate for 2 hours or overnight.
  • Drain veggies and reserve marinade.
  • Using 8 metal skewers, thread veggies, alternating varieties.
  • Place on lightly greased grill, over low heat.
  • Cook, turning often, basting with the reserved marinade for 10-15 minutes, or until veggies are tender.
  • Sprinkle lightly with salt before serving.
  • Remaining marinade can be used again. It can be refrigerated for up to 2 weeks.
  • Makes 8 skewers; 2 skewers per person.
  • NOTE: If wooden skewers are used, soak them in water for 15-20 minutes before using. This prevents the wood from burning.

1 medium sweet orange pepper, cut into 1-inch pieces

1 cup pineapple chunks

Steps:

  • Sprinkle beef with 1 teaspoon steak seasoning and garlic. Place cola in a large bowl. Add beef; toss to coat. Set aside., Place potatoes and water in a microwave-safe bowl. Microwave, covered, on high just until tender, 4-5 minutes; drain. Return to bowl. Add tomatoes, pepper, oil and remaining steak seasoning; gently toss to coat., Drain beef, discarding marinade. On 8 metal or soaked wooden skewers, alternately thread beef, vegetables and pineapple. Grill, covered, over medium heat or broil 4 in. from heat until beef reaches desired doneness and pepper is crisp-tender, 6-8 minutes, turning occasionally.

500 g beef rump, trimmed and cut into 2 . 5 cm (1 inch cubes)
8 teaspoons olive oil (2 tablespoons)
1/4 cup red wine
1 tablespoon lemon juice (4 teaspoons)
1 lemon, zest of one lemon
1 small onion, finely chopped
2 garlic cloves, crushed
1 tablespoon dried oregano (4 teaspoons)
2 bay leaves
1 red onion, cut into six wedges and separated
1 red capsicum, cut into 2 . 5cm (bell pepper)
1 green capsicum, cut into 2 . 5 cm pieces
16 button mushrooms, halved if large

Steps:

  • soak 8 bamboo skewers in water for 30 minutes, or alternatively you can use metal skewers.
  • Combine all of the marinade ingredients in a ceramic or stainless steel bowl.
  • Marinate the meat for 1 to 2 hours.
  • Preheat the barbeque grill plate to medium high (or you can use a grill pan indoors or large banquet sized skillet).
  • Thread marinated meat , alternating with the onion, capsicums and mushrooms onto the skewers.
  • xrizzle some extra olive oil over the kebabs and barbecue for 2-3 minutes each side, or done to your liking.
