These yummy little potatoes can be made ahead. Just cover and refrigerate the mixture in the bowl until grilling time. You can use either white or red potatoes or mix the two for a more colorful presentation.

4 lbs tiny new potatoes
salt
1/3 cup olive oil
2 teaspoons minced garlic
1/2 teaspoon dried thyme
1/2 teaspoon black pepper

Steps:

  • Place potatoes in salted water to cover in large sauce pot.
  • Boil until potatoes are tender, about 10 to 12 minutes.
  • Drain and transfer potatoes to large bowl.
  • Toss with oil, garlic, thyme and pepper.
  • Preheat grill.
  • Thread potatoes evenly on 6 metal skewers.
  • Grill for about 9 minutes, turning every 3 minutes and brushing with oil mixture until evenly browned.

¾ cup olive oil
2 lemons, zest and juice
1 tsp dried oregano
2 tsp Dijon mustard
1 clove garlic, finely chopped
1 tsp sugar
Salt and pepper, to taste
1 Tbsp mayonnaise
2 cups Blushing Belle Little Potatoes, halved
6 boneless, skinless chicken thighs, cubed into 1-inch pieces
8 wooden skewers, dipped in water
2 cups cherry tomatoes, halved
4 Lebanese cucumbers, sliced
¼ cup red onion, finely sliced
1 cup Feta cheese
1 cup pitted Kalamata olives

Steps:

  • Preheat the grill to medium.
  • In a measuring cup, mix all the ingredients of the marinade except the mayonnaise. Add a generous pinch of salt and pepper. Remove 1/3 cup of the marinade and pour into a large bowl. Add the potatoes and chicken pieces. Mix well to coat and marinate for 30 minutes or overnight in the refrigerator.
  • Skewer the bells and chicken cubes alternately on the wooden skewers. Grill over medium heat for about 6to 8 minutes on both sides. During this time, finish the vinaigrette. Add the remaining mayonnaise to the marinade.
  • In a large serving dish, put the tomatoes, cucumber, onion rings, feta and olives. Place the kebabs on top and drizzle with the vinaigrette. Serve with grilled pita bread.

1 1/2 lbs small potatoes, such as purple Dutch yellow, fingerlings, new reds
2 tablespoons butter or 2 tablespoons margarine, melted
2 tablespoons olive oil
2 tablespoons snipped fresh thyme
1/2 teaspoon salt
1/4 teaspoon fresh ground black pepper

Steps:

  • Soak four 8-inch wooden skewers in water for 30 minutes.
  • Scrub potatoes.
  • Cut any large potatoes in half.
  • In a large saucepan cook potatoes, uncovered, in boiling salted water to cover for 5 to 10 minutes or until almost tender. Drain.
  • Or place potatoes in a microwave-safe bow with 2 tablespoons water, cook covered, on 100 percent power (high) for 5 to 7 minutes or until almost tender.
  • Preheat oven to 475 degree F.
  • Thread potatoes on the 4 soaked wooden skewers.
  • Place kabobs on a baking sheet.
  • In a small bowl combine melted butter and olive oil.
  • Brush potatoes with butter mixture.
  • Sprinkle with thyme, salt, and pepper. Roast, uncovered, for 20 to 25 minutes or until golden brown.

1 pound beef top sirloin steak, cut into 1-inch cubes
1-1/2 teaspoons steak seasoning, divided
1 garlic clove, minced
1 cup cola
3 small red potatoes (about 8 ounces), cubed
1 tablespoon water
1 cup cherry tomatoes
1 medium sweet orange pepper, cut into 1-inch pieces
1 teaspoon canola oil
1 cup pineapple chunks

Steps:

  • Sprinkle beef with 1 teaspoon steak seasoning and garlic. Place cola in a large bowl. Add beef; toss to coat. Set aside., Place potatoes and water in a microwave-safe bowl. Microwave, covered, on high just until tender, 4-5 minutes; drain. Return to bowl. Add tomatoes, pepper, oil and remaining steak seasoning; gently toss to coat., Drain beef, discarding marinade. On 8 metal or soaked wooden skewers, alternately thread beef, vegetables and pineapple. This recipe is from Rob Rainford's "Licence to Grill" (Food Network Canada). Great with just about any red meat, poultry or seafood! I just looove baby potatoes!

Number Of Ingredients 9

3 lbs baby potatoes, scrubbed and cut in half (red or white)
1/4 cup extra virgin olive oil
1/2 lemon, juice of
5 garlic cloves, coarsely chopped
2 teaspoons dried oregano
2 teaspoons dried thyme
2 bay leaves
2 tablespoons butter
salt and pepper

Steps:

  • Using a fork, poke a few holes in each potato half.
  • Place in a large sealable plastic bag and add oil, lemon juice, garlic, oregano, thyme, bay leaves and salt and pepper to taste. Marinate for 20 minutes in fridge.
  • Thread on thin metal or bamboo skewers (soak bamboo skewers in water for 30 minutes first) with the flat sides of the potatoes all facing the same way.
  • Preheat greased grill to medium. Place potato skewers flat side down on grill. Leaving lid up to watch for flareups, cook for 20 -25 minutes or till golden brown and cooked through.
  • Brush with butter and season to taste before serving.
