This is the simplest version of chocolate covered strawberries I know. Paraffin was originally used instead of shortening. Turn the strawberries upside down and insert by the toothpicks into a piece of styrofoam for easy cooling, or simply place them on a sheet of wax paper. White chocolate may be drizzled over the milk chocolate for a fancier look. They are perfect for weddings when decorated with frosting bow ties, bells, butterflies, roses, etc.

4 ounces semisweet chocolate, chopped
1 tablespoon plus 1/2 teaspoon shortening, divided

  • Wash strawberries and gently pat with paper towels until completely dry. In a microwave-safe bowl, melt semisweet chocolate and 1 tablespoon shortening at 50% power; stir until smooth. 1 cup white chocolate
1 cup milk chocolate, or dark
2 tablespoons coconut oil
1 ½ cups crushed peanut
1 ½ cups chocolate cookie crumb

Steps:

  • To make Striped Strawberries, melt 1 tablespoon of coconut oil with chocolate chips, repeat with the white chocolate chips.
  • Insert toothpick into the top of a strawberry.
  • Coat strawberry entirely in chocolate, alternating between white and dark.
  • Chill strawberries for about 15 minutes or until hardened.
  • For white chocolate strawberries drizzle dark chocolate over the top in a quick back and forth motion. For dark chocolate strawberries, do the same with white chocolate drizzle.
  • Chill once more for 15 minutes or until hardened.
  • To make Peanut Strawberries. Melt 1 tablespoon of coconut oil with the chocolate chips, repeat with the white chocolate chips. Insert toothpick into the top of a strawberry. Put peanuts in a bag and smash with rolling pin or cast-iron pan until they are crumbly.

  • Dip strawberry, while the chocolate is still warm, into a bowl of nuts.

6 ounces semisweet chocolate, chopped
3 ounces white chocolate, chopped
1 pound strawberries with stems (about 20), washed and dried very well

Steps:

  • Put the semisweet and white chocolates into 2 separate heatproof medium bowls. Fill 2 medium saucepans with a couple inches of water and bring to a simmer over medium heat. Turn off the heat; set the bowls of chocolate over the water to melt. Stir until smooth. (Alternatively, melt the chocolates in a microwave at half power, for 1 minute, stir and then heat for another minute or until melted.)
  • Once the chocolates are melted and smooth, remove from the heat. Line a sheet pan with parchment or waxed paper. Holding the strawberry by the stem, dip the fruit into the dark chocolate, lift and twist slightly, letting any excess chocolate fall back into the bowl. Set strawberries on the parchment paper. Repeat with the rest of the strawberries. Dip a fork in the white chocolate and drizzle the white chocolate over the dipped strawberries.
  • Set the strawberries aside until the chocolate sets, about 30 minutes.

1 lb fresh strawberries
1 (11 1/2 ounce) package ghiradelli bittersweet chocolate chips (60% Cacao)
1 (12 ounce) package nestle' toll house premier white chocolate chips

Steps:

  • Go through strawberries, and pick only the best looking strawberries. Set aside the remainder of berries for nibbling later. This recipe is enough for 16 -20 strawberries, depending on the size of the berries.
  • Leaving the leaves/stems on the strawberries, wash them and lay out on either paper towels or clean dish towels. Put another paper or dish towel over berries and dry gently.
  • Place berries on clean paper towels or wax paper, to dry. It is very important that the berries are totally dry, when being dipped in the melted chocolate, as the chocolate will not stick or will flake off later, if the berries are not dry. Depending on the humidity in the room, it will take at least 20 minutes for the berries to dry.
  • Place contents, of the package of dark chocolate baking bits, in a heat proof glass bowl + approximately 1/2 cup white chocolate baking bits. Melt the chocolate in your microwave, for 30-60 seconds, depending on your microwave. Watch the chocolate, stirring every 30 seconds, just until melted. You don't want to make it too hot, as it will then need to be cooled a bit, to dip the berries in it. It should have a glossy smooth appearance, when stirred.
  • Once the two chocolates are melted, place a sheet of wax paper on a baking/cookie sheet.
  • Taking the berries by the leaves (gently), dip them, one at a time, in the chocolate - to cover. Slowly lift the berry out of the chocolate, holding it over the chocolate, for a few seconds, until it stops dripping. Gently place the chocolate covered berry on the wax paper, keeping the leaves off the paper a bit. The chocolate will "puddle" under the strawberry - this is fine.
  • Repeat until all the berries are done. Set in cool area until the chocolate firms. This will take 20-30 minutes at least. You also could put the baking sheet in the refrigerator or freezer for 5-15 minutes.
  • While the strawberries are setting, Place the remaining white chocolate chips in a glass, heat proof bowl, and place in microwave. As before, heat on high heat for 30-60 seconds, stirring after 30 seconds, until just melted. It should be smooth and creamy, when ready.
  • Once the strawberries are set, place a dinner fork in the white chocolate, and slowly drizzle over the chocolate covered berries. You might want to practice doing this over some wax paper, before doing it on the berries, to get a feel for it.
  • Once again, set aside until the white chocolate sets up.
  • These are best served fresh, within a few hours. If you aren't able to serve right away, it is best to refrigerate. They are best if served within 24 hours, as humidity excelerates deterioration.
