SPICY BREAKFAST HOME FRIES
This is something I just kind of cooked up one day. This is a great side dish to a hearty breakfast and the leftovers in the pan are great to cook your eggs in. The amount of spices you put in really are to taste, but I can give the approximate amounts that I use. NOTE: Instead of cooking this in olive oil, bacon drippings can be used.

Steps:
- Chop onions into small pieces and cube potatoes into small cubes.
- Add cubed potatoes to the zip lock bag along with 0.5 tablespoon olive oil, marjoram, oregano, black pepper, curry powder, table salt and cayenne pepper. Mix this mixture around in the bag until the potatoes are well coated with everything.
- Coat medium-sized frying pan with 2 tablespoons olive oil. Set heat to medium.
- Add the chopped onion and minced garlic to oil and saute for no more than 2 minutes.
- Add contents of ziplock bag to the pan with the onions and garlic.
- Mix the ingredients in the pan and cook for 10 minutes with the cover on to soften the potatoes, stirring occasionally to prevent the potatoes from sticking.
- After 10 minutes, remove the cover and cook for another 10 minutes to crisp the potatoes.
- When 10 minutes is up, add the ketchup on the top of the layer of potatoes and mix well. Cover and cook for another minute. Serve.

- Place the potatoes in a large saucepan, cover with cold water and add 1 tablespoon salt. Bring to a boil and cook until the potatoes fall apart when a fork is inserted, 20 to 25 minutes. Drain well.
- Heat the canola oil and butter in a large skillet over medium heat. Add the onion and jalapeno and cook until soft, about 5 minutes. Add the garlic and cook 30 seconds. Stir in the chile powder.
- Add the potatoes to the skillet, season with salt and pepper and toss, slightly smashing the potatoes with a metal spatula. Press the potato mixture into one even layer and cook until golden brown on the bottom, about 5 minutes. Flip the potatoes and gently smash again into an even layer; cook until the bottom is golden brown, about 5 more minutes. Stir in the cilantro and lime zest.

- Heat the butter over medium heat in a large saute pan. Add the onion and jalapeno and cook until soft. Add the garlic and cook for 30 seconds. Stir in the ancho chile powder and stir until combined. Add the potatoes, salt and pepper and toss the mixture, slightly mashing the potatoes with a metal spatula. Press the potato mixture into one even layer and cook until golden brown on the bottom. Turn over and gently mash again into an even layer and cook until the bottom is golden brown. Stir in the cilantro and lime zest and transfer to a bowl.

- peel all 3 potatoes and onion.
- slice the 3 potatoes by cutting long way in half then cut the halves the same way.
- slice quarters into chips 1/8 of inch thick.
- in a pot add cold water and potatoes and boil for 20 minute.
- dice red onion.
- cut hot pepper long ways and take the seeds out.
- slice the two halves very thin then give them a fine dice.
- in a large skillet melt butter and add olive oil.
- add onions and diced pepper let sweat for 5 minute.
- in a colander drain the potatoes well, add in skillet.
- on a high flame cook for 10 min stir (or give it a couple of flips like i like to do).
- add salt and pepper to taste.
- serve.
- and enjoy.

KITTENCAL'S EASY SEASONED HOME FRIES
This is easy but the potatoes will need a few hours or overnight soaked in cold water, the garlic powder and seasoned salt may be adjusted to taste, I have left the cayenne as optional I like to add it in for a little heat, if you are not a garlic-lover then omit the garlic powder --- throw in some chopped green onions the last few minutes of cooking if desired :)

- Cube the potatoes in about 3/4-inch squares.
- Place into a large bowl then cover with cold water, rinse then cover once again with water.
- Refrigerate for at least 3 hours or up to 48 hours (the longer soaking time the better!).
- Drain very well in a colander (I like to pat the potatoes dry using paper towels).
- Melt the butter in a large skillet over medium heat, then add in garlic powder, seasoned salt and cayenne pepper (if using).
- Place the potatoes in the skillet and stir to coat with the butter.
- Cover with a lid and cook for 8-10 minutes.
- Remove the lid and cook for another 10 minutes, turning frequently with a spatula for even browning and crisping.
- Season with more seasoned salt to taste and black pepper.
- Delicious!

- Cut potatoes into wedges or slices and lightly spray a baking sheet with fat-free oil.
- Place potato wedges or slices in a plastic bag with spices and half of the oil, then toss to cover all.

VERY CRISPY HOME FRIES
This recipe is a little time consuming and has frying and re-frying involved, but in my opinion, it is worth every minute it takes to do it.

- Peel and cube or wedge the potatoes.
- Place cubes in ice water and add salt. Let sit in ice water about 10-15 minutes.
- Heat oil in skillet.
- Get flour ready in flat bottomed pan so you can dredge wet potato wedges when they are done soaking.
- While oil is heating, in a colander drain potatoes.
- Flip potato pieces into the flour in pan and dredge until all sides of potato are well coated.
- When oil is hot put potato cubes or wedges into oil and fry. Fry until beginning to be golden, then turn and brown on other sides the same way.
- **Note: As potatoes fry you can cover them temporarily to increase heat -the secret to crispiness is leave them long enough on each side to form a little crust before turning them. The other secret will be frying the potatoes twice over, letting them cool in between. I find it helps to use tongs and a fork and individually flip the potato cubes or wedges so they all get browned evenly, but that is up to you. I also flip them all with spatula from time to to time.
- When browned and lightly crisped remove from oil and drain on paper towel.
- While potatoes are cooling heat oil back up and fry bell pepper and onion in same oil medium high heat.
- Fry veggies until onion starts to turn brown and golden around edges but don't let them turn too dark.
- Remove fried veggies and drain on paper towel. Lower heat temporarily while you thoroughly remove all fried vegetable pieces from hot oil.
- Add a little more oil and turn heat back up to get it hot.
- (Watch and have lid ready to protect yourself in case of "spitting" oil from moisture in vegetables in oil, until it boils off. Can lower heat a touch if gets too bad).
- Now, to the hot oil add back the once-fried crisp coated potatoes -- and fry again same way until the potatoes have formed a nice, brown crust on all sides.
- When potatoes are medium dark golden and just right (crispy enough), add back the onion and bell pepper to the crispy potatoes.
- Fry together for a very short time then remove before they burn. Vegetables burn relatively quickly so don't fry them long, then quickly remove all from oil and let drain on paper towels. Re-season the potatoes with pepper and onion, checking for garlic powder and saltiness to be just right.
- You are ready to eat. I like to set the potatoes aside in warm place covered with paper towel and fry eggs to go over the top of the potatoes when served.
- When ready to serve, if potatoes have cooled off too much, gently reheat in microwave real quickly.
- Enjoy.
SHORT-ORDER HOME FRIES
Those lovely potatoes you can get at the diner but can't seem to make at home. So why are they called _home fries_ anyway? This recipe from Cook's Illustrated promises to produce a plateful of spuds that a short order cook would envy.

- Begin by precooking the potatoes. Arrange them in a microwave safe bowl, top with 1 tablespoon of butter and cover tightly with plastic wrap. Microwave on high until the edges of the potatoes begin to soften, 5-7 minutes, shaking the bowl (without removing plastic wrap) half-way through cooking.
- Meanwhile, melt 1 tablespoon butter in a large nonstick skillet over medium heat. Add the onion and cook until softened and golden brown, about 8 minutes. Transfer to a small bowl.
- In the same skillet, melt the remaining 2 tablespoons of butter over medium heat. Add the potatoes and pack them down with a spatula. Cook, without moving, until one side is brown, 5-7 minutes.
- Turn the potatoes, pack down again and continue to cook until well browned, another 5-7 minutes.
- Reduce heat to medium low and continue cooking the potatoes, stirring every few minutes, until crusty and brown, 9-12 minutes.
- Stir in the reserved onions, garlic salt and salt. Pepper to taste. Serve at once.
- NB - remember to turn down the heat for the last 9-12 minutes of cooking or the fries will burn.
- Cook's note - the best potatoes to use - medium starch or waxy varieties - Yukon Gold or Reds. High starch varieties such as russets and Idahos will break down leaving nothing but a greasy mash of spuds in your skillet.

- Microwave potatoes as you would for a baked potato, but cook until*slightly* underdone- 4 take 12-14 minutes on my microwave (or use leftover baked/cooked potatoes).
- When cool enough to handle, quarter potatoes and then cut into about 1 inch pieces (we leave the skins on).
- Heat 2 tbl of butter or oil in a large non-stick skillet (or if you just cooked bacon in the pan, you can reserve some of the bacon grease and use that to fry in).
- On medium heat, add onions and cook until 1 or 2 minutes before adding potatoes, salt and pepper, stirring to combine.
- Let cook for a few minutes, flipping or stirring gently, until onions are tender and potatoes are to desired crispness.
- If necessary, add additional butter or oil to prevent sticking.
- Remove home fries from pan and transfer into microwavable casserole dish.
- Sprinkle with one cup of cheese and fold in gently.
- Sprinkle remaining cup of cheese on top and microwave for 1 to 2 minutes until cheese is melted.
- Sprinkle a bit of parsley on top, if desired.

RUSTIC GRILLED HOME FRIES
This was created by my dad and I when we discovered fingerling potatoes in the grocery store. We cut them with a fancy cutter to make the ridged edges but you can just use a regular old knife. Very simple and easy and taste better than deep fried fatty french fries you get in the pub-without the guilt! excellent served alongside fish. You can add more spices if you like-but the basic salt and pepper allows the lovely flavour of the potatoes to shine through.

- Scrub potatoes and cut in half or into thirds lengthwise (depending on the size-try to make them all equal and fairly big so they'll hold up well).
