MY SISTER-IN-LAW shared this recipe years ago and it became our family's favorite meat loaf. The addition of ham and mozzarella is a colorful surprise and adds terrific flavor. 3/4 cup soft bread crumbs
2 large eggs
1/2 cup tomato juice
2 tablespoons minced fresh parsley
2 garlic cloves, minced
3/4 teaspoon dried oregano
1/4 teaspoon salt
1/4 teaspoon pepper
2 pounds ground beef
8 thin slices fully cooked ham
1-1/2 cups shredded part-skim mozzarella cheese
3 thin slices part-skim mozzarella cheese

Steps:

  • In a large bowl, combine the bread crumbs, eggs, tomato juice, parsley, garlic, oregano, salt and pepper. Crumble beef over the mixture and mix well. , On a pieces of heavy-duty foil, pat meat mixture into a 12x10-in. rectangle. Place the ham and shredded cheese on loaf to within 1/2 in. of edges. Roll up, jelly-roll style, beginning with the short end and peeling foil away while rolling. , Place on a greased baking pan with seam side down; seal ends. Bake, uncovered, at 350° for 1 hour and 10 minutes or until meat is no longer pink and a thermometer reaches 160°. Top with sliced cheese; bake 5 minutes longer or until cheese is melted.

2 eggs, beaten
½ cup tomato juice
¾ cup soft bread crumbs
2 tablespoons snipped fresh parsley
½ teaspoon dried oregano, crushed
¼ teaspoon sea salt
¼ teaspoon ground black pepper
1 clove garlic, minced
2 pounds lean ground beef
1 (6 ounce) package thinly sliced ham
1 (6 ounce) package sliced mozzarella cheese

Steps:

  • In a large bowl, combine eggs and tomato juice. Stir in the bread crumbs, parsley, oregano, salt, pepper, garlic and ground beef. Mix thoroughly. Preheat oven to 350 degrees F (175 degrees C).
  • On a piece of foil or waxed paper, pat and shape meat into a 10x8 inch rectangle. Arrange ham slices on top of meat, leaving a small margin around edges. Tear up the cheese slices, reserving 1 slice whole, and sprinkle over the ham.
  • Starting from the short end, carefully roll up meat, using the foil or waxed paper to lift. Seal the edges and ends of the meat. Place roll, seam side down, in a 9x13 inch baking dish.
  • Bake in a preheated oven for about 75 minutes. Cut the reserved slice of cheese into 4 triangles. Overlap the triangles on top of loaf. Bake for another 2 minutes or until cheese melts.

Seasoned meatloaf stuffed with ham and cheese. This is based on a recipe from Better Homes and Gardens All-Time Favorite Recipes. Our version uses Canadian bacon instead of the ham, and changes a few other things around to suit our taste.

1 egg, lightly beaten
3/4 cup saltine crumbs
2 tablespoons fresh basil, chopped
1/2 teaspoon dried oregano, crushed
1/2 teaspoon dried rosemary (optional)
1/4 teaspoon salt (to taste)
1/4 teaspoon pepper (to taste)
2 lbs ground beef
6 ounces thinly sliced Canadian bacon
8 ounces sliced mozzarella cheese

Steps:

  • Preheat oven to 350°F.
  • Combine egg, crumbs, herbs, salt and pepper in a large bowl.
  • Add beef and mix well.
  • Place mixture on a large piece of foil or waxed paper and pat into a 10"x8" rectangle.
  • Arrange Canadian bacon slices over beef mixture, leaving a small margin at edges.
  • Set aside 2 slices of cheese.
  • Tear remaining cheese into smaller pieces and sprinkle over Canadian bacon.
  • Starting from short end, roll up meat, using the foil to lift it.
  • Press edges and ends to seal.
  • Place in a 13"x9" baking pan, seam side down.
  • Bake until cooked through, about 1 1/4 hours.
  • Cut remaining cheese slices in half.
  • Place cheese on top of meat.
  • Return to oven until cheese melts.

6 slices fully cooked deli ham, thin
1 3/4 cups shredded mozzarella cheese

Steps:

  • Preheat oven to 350 degrees.
  • In a large bowl combine eggs, bread crumbs, tomato juice, parsley, oregano, salt, pepper, and garlic.
  • Stir in ground beef, mixing well.
  • On foil, pat meat mixture into a 12x10 inch rectangle.
  • Arrange ham slices on top of meat, leaving a 3/4 inch border around all edges.
  • Sprinkle 1 1/2 cups cheese over ham.
  • Starting from a short end, carefully roll up meat, using foil to lift and guide; seal edges and ends.
  • Place roll, seam side down, in a 13x9x2 pan sprayed with Pam.
  • Bake for 1 hour and 15 minutes or until it reaches 170 degrees and juices run clear.
  • (Center of meat roll will be pink because of the ham.) Sprinkle remaining cheese over top of roll; return to oven for 5 minutes or until cheese melts.
  • Remove to a platter to serve.

This is a lightened version of a meatloaf called a Sicilian Meat Roll. It is topped with cheese instead of sauce, but is very well seasoned. My family loves this version but I misplaced my recipe so we haven't had it for awhile. Thought I better post it on here for safe keeping!

1/4 cup egg substitute
2 tablespoons ketchup
1/2 teaspoon italian seasoning
1 garlic clove, minced
1/2 teaspoon seasoning salt
1/2 teaspoon parsley
1 slice light bread
1 lb ground sirloin
4 slices lean ham
1 1/2 cups lowfat mozzarella cheese, shredded

Steps:

  • In a large bowl, combine the egg substitute, ketchup, Italian seasoning, garlic, seasoned salt, and parsley, mixing well.
  • Process bread into crumbs; add to mixture.
  • Crumble sirloin over mixture; combine completely.
  • On a piece of heavy duty aluminum foil, press meat into a rectangle.
  • Evenly place ham over meat to within 1 inch of edge.
  • Sprinkle 3/4 cup mozzarella over ham.
  • Roll jellyroll style, removing foil as you roll.
  • Seal all edges completely.
  • Bake, uncovered, seam side down at 350°F for 1 hour.
  • Sprinkle with remaining 3/4 cup mozzarella.
  • Bake 5-10 minutes longer or until cheese is melted.

1 1/2 pounds ground beef, pork and veal mix from the butcher's counter (meatloaf mix)
Salt and pepper
1/2 cup Italian bread crumbs
1 egg
2 cloves garlic, minced
1/4 small white onion, grated
2 tablespoons golden or dark raisins, chopped
3 tablespoons pine nuts, chopped
3 tablespoons grated cheese, Parmigiano or Romano
2 tablespoons chopped flat-leaf parsley
1 cup arugula leaves or baby spinach
6 slices prosciutto di Parma
6 slices deli sliced provolone
Extra-virgin olive oil, for drizzling
1/2 pound cavatappi (corkscrew shaped hollow pasta) or rigatoni
1 pound broccolini, trimmed into florets
2 tablespoons butter
1 cup ricotta cheese
2 teaspoons lemon zest
2 tablespoons chopped fresh thyme leaves
12 grape or small vine tomatoes, halved

Steps:

  • Preheat oven to 450 degrees F.
  • Put water on to boil for your pasta.
  • Mix meat and next 10 ingredients as if you were making meatloaf. Flatten meat out on a waxed paper lined cookie sheet into a thin layer: 1/2-inch thick, 12 inches long by 6 to 8 inches wide. Cover meat with arugula or spinach, prosciutto and cheese then roll the meat, using the waxed paper to help roll up into a large log, working across the 6 to 8-inch side, resulting in a 12-inch long log. Drizzle the log with extra-virgin olive oil to coat lightly.
  • Roast meatroll 20 minutes. Cut into 1-inch slices, 3 pieces per portion, and serve. Make pasta while meat is in the oven.
  • Salt water and cook off pasta, about 7 to 8 minutes to al dente, with a bite to it. Drain and return pasta to hot pot.
  • While pasta cooks, place broccolini in 1-inch of water in a sauce pot and bring up to a boil. Add salt to the water and add the trimmed broccolini. Cover and cook 5 minutes, drain and reserve.
  • To hot, cooked pasta add a drizzle of extra-virgin olive oil, butter, ricotta, lemon zest, thyme, broccolini and season with salt and pepper. Toss pasta to coat it in the cheese and butter. Season it with salt, to your taste. Portion pasta onto dinner plates alongside meat roll slices and top pasta with tomatoes and freshly ground pepper.

Unlike regular meatloaf, this one stays juicy and tender with excellent flavor. Serve with garlic mashed potatoes and steamed carrots for an old fashioned comfort food dinner.

1 ½ pounds lean ground beef
½ cup dry bread crumbs
1 (1 ounce) package dry onion soup mix
¼ cup barbecue sauce
1 clove garlic, minced
1 egg
1 tablespoon all-purpose flour
ground black pepper to taste
8 thin slices deli ham, or as needed
1 cup shredded Swiss cheese, or as needed
¼ cup ketchup
1 teaspoon mustard
1 tablespoon brown sugar
1 dash soy sauce

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lay a 24-inch long sheet of parchment paper down on a work surface.
  • Mix together the ground beef, bread crumbs, onion soup mix, barbecue sauce, garlic, egg, flour, and black pepper in a bowl until well combined. Place the meat mixture down on the piece of parchment paper, and pat it into a rectangle shape about 10x16 inches. Lay deli ham slices down on the meat, keeping a 1-inch margin around all sides of the rectangle. Sprinkle Swiss cheese over the ham. Carefully lift up the short edge of the meat square with the parchment paper, and gently nudge and roll up the meat. Seal the edges and ends well. Place the meat roll into a 9x13-inch baking dish.
  • Bake in the preheated oven for 45 minutes.
  • While the roll is cooking, mix together ketchup, mustard, brown sugar, and soy sauce, stirring until sugar has dissolved. Remove the roll from the oven, and spread the ketchup mixture over the roll. Return to the oven for 15 more minutes.
