HOMEMADE TERIYAKI SHRIMP

Homemade Teriyaki Shrimp image

If you want to serve this dish on rice, you need to start the rice first, because it comes together quickly! I used coconut aminos, a sub for soy sauce, that is a bit thinner in consistency and sweeter in taste than soy sauce. Sweet and full of umami, this recipe works as a light lunch, or as a main, with some steamed broccoli or a salad as a side.

Categories     Seafood     Shellfish     Shrimp

Time 20m

Yield 4

Number Of Ingredients 12

1 pound frozen raw shrimp, peeled and deveined
½ cup coconut aminos
1 teaspoon grated fresh ginger
1 teaspoon minced fresh garlic
1 teaspoon brown sugar, or to taste
1 tablespoon rice wine vinegar
1 teaspoon sesame oil
2 teaspoons cornstarch
2 teaspoons water
2 cups steamed white rice
1 tablespoon sliced green onions
1 teaspoon sesame seeds

Steps:

  • Place frozen shrimp in a single layer on a metal pan and set aside.
  • Combine coconut aminos, ginger, garlic, brown sugar, rice wine vinegar, and sesame oil in a large skillet. Bring to a boil over medium heat, 3 to 4 minutes.
  • Add shrimp to the boiling sauce in a single layer and cook for 2 to 3 minutes. Turn and cook until shrimp curls into a "C" shape and changes color from white and pink, 2 to 3 minutes.
  • Combine cornstarch and water in a small bowl, stirring to remove lumps. Add slurry to the skillet and cook, stirring briskly, until sauce is slightly thickened, about 1 minute. Remove from heat. Serve over hot cooked rice and garnish with green onions and sesame seeds.

GARLIC GINGER TERIYAKI SHRIMP

Garlic Ginger Teriyaki Shrimp image

Provided by Food Network

Categories     main-dish

Time 1h15m

Yield 4 to 6 servings

Number Of Ingredients 7

2 pounds shrimp, 16 to 20 count
1/2 cup teriyaki sauce
1/2 cup soy sauce
1/4 cup sesame oil
12 cloves garlic, minced
1/2 cup peeled ginger, minced
2 teaspoons red pepper sauce

Steps:

  • Preheat oven to 400 degrees.
  • Peel shrimp leaving the final tail section intact. Devein and partially butterfly shrimp (only butterfly the area furthest from the tail, so the shrimp will stand properly in a casserole dish). Set shrimp aside.
  • Place all remaining ingredients together in a large mixing bowl. Add shrimp to bowl and marinate for about 1/2 an hour, any longer may toughen the shrimp. Remove shrimp from marinade and stand each one individually in casserole dish, one behind the other, with each tail resting on the shrimp in front of it. Pour marinade into casserole dish covering shrimp approximately 1/2 way. Place shrimp in oven for 12 to 15 minutes.

  • If your shrimp is frozen, thaw it first by placing in a colander and running cool water over it until thawed (this only takes a few minutes).
  • Finely dice the onion and place it in the bottom of the rice cooker along with the frozen peas (I did not thaw my peas). Add the uncooked rice, minced garlic, and grated ginger. Stir these ingredients together.
  • Add the shrimp to the top of the rice mixture, then pour in 2 cups water. Close the lid and set the cooker to the "white rice" setting. The rice cooker will begin to heat and once the contents inside reach the appropriate temperature, it will begin to count down the cooking time (12 minutes for my model).
  • Once the rice cooker finishes its cooking cycle, let it rest for an additional 5-10 minutes on the keep warm cycle before opening the lid. While waiting, stir together the soy sauce and brown sugar.
