Steps:
- For the cornichon dressing: In a medium bowl, mix together the mayonnaise, cornichons, Dijon mustard, mustard powder, tarragon and lemon juice. Season with salt and pepper.
- For the shrimp fritters: Heat about 1 1/2 inches vegetable oil in a heavy-bottomed pot until a deep-fry thermometer inserted in the oil registers 350 degrees F.
- In a small mixing bowl, whip the egg whites to medium peaks; set aside. In a separate bowl, combine the shrimp, scallions, zucchini, garlic and jalapenos and set aside.
- Whisk together the flour, baking powder and paprika in a medium bowl. Whisk in the egg yolks and enough of the buttermilk so the mixture is thick and not runny (adjust the amount accordingly). Season with salt and pepper. Fold the shrimp mixture into the batter, followed by the egg whites just to incorporate.
- Drop the fritters into the oil in batches using a small scoop or spoon, about 1 tablespoon each. Cook until golden brown, about 5 minutes, then drain on paper towels. Immediately season with salt. Serve with the cornichon dressing.
CORN AND SHRIMP FRITTERS
These are wonderful little tid-bits! Great without the sauce, but the sauce definitely adds something extra. I like the sauce with other things too....chicken fingers, fried shrimp, grilled chicken....try it out on whatever you think might suit you! Steps:
- Preheat the oven to broil and line a rimmed baking sheet with aluminum foil.
- Toss the corn, fennel, olive oil, 1/2 teaspoon salt and 1/4 teaspoon of the red pepper flakes on the prepared baking sheet until evenly coated and combined. Spread into an even layer. Broil until crisp-tender and starting to brown in spots, tossing halfway through, about 8 minutes. Remove from the oven.
- Meanwhile, stir the melted butter, garlic, lemon zest, 1/4 teaspoon salt and remaining 1/4 teaspoon red pepper flakes together in a medium bowl until combined. Add the shrimp and tomatoes and toss to combine. Spread the shrimp mixture on top of the corn and fennel, then broil until the shrimp are opaque throughout and the tomatoes start to burst, about 6 minutes.

CORN AND SHRIMP BEIGNETS
A light batter coats plump pieces of shrimp and sweet corn kernels, delivering a savory bite perfect for picnics, a finger-food weeknight meal or casual entertaining. Lemon zest and ground cayenne pepper provide an essential zing that brightens these easy-to-devour morsels. Although these crisp fritters are wonderful fresh out of the pan, they can also be cooled, stored frozen in an airtight container and popped in a hot oven to warm and refresh.

Steps:
- Line a sheet pan with a layer of paper towels or fit with a wire rack. Fill a deep, medium saucepan with oil to a depth of 2 inches. Heat over medium-high to 350 degrees.
- While the oil heats, whisk the flour, ground cayenne, baking powder, baking soda and salt in a medium bowl. Zest the lemon right into the bowl; slice the lemon into wedges and set aside for serving. To the bowl, add the chives, corn and shrimp. Stir to combine. Pour in the seltzer and stir until just combined. Fold in the sour cream until just incorporated.
- Once a deep-fry or candy thermometer reads 350 degrees, the oil is ready. If you don't have a deep-fry thermometer, you also can see if the oil is hot enough by dropping a tiny dollop of the batter into the pot: Bubbles should form around the batter immediately and the dollop should float to the surface. Working in batches to avoid crowding the pan, carefully drop tablespoons of the batter into the hot oil and fry, turning frequently, until golden brown, about 5 minutes. Maintain the temperature of the oil while frying by raising or lowering the heat as needed.
- Transfer the beignets to the paper towels or rack using a slotted spoon or tongs. Repeat the frying process with the remaining batter.
- Serve the beignets warm, with lemon wedges for squeezing and with sweet chile sauce for dipping, if using. Sprinkle the beignets with a little salt, if you like.

SHRIMP AND SWEET POTATO FRITTERS
Golden orange and crispy, this Hanoi specialty blends the fragrance and crunch of sweet potatoes with the brininess of shrimp. The fritters, which look like roughly formed nests on which whole shrimp rest, are cut into bite-sized pieces and bundled in lettuce with fresh herbs and cucumber. My mother taught me to soak the potatoes with a bit of slaked lime (calcium hydroxide), which Southeast Asian and Indian cooks use to crisp ingredients for frying and pickling. It is basically moistened food-grade slaked lime powder, the same compound used to treat corn for making Mexican masa. The Vietnamese call it voi and it is sold in small, round plastic containers in Chinese, Thai, and Viet markets, usually stocked in the flour aisle. Two varieties are available, red and white. I prefer the white one, though the red one, which has been colored by the heartwood of the cutch tree and is traditionally chewed with betel leaf, may also be used. A small container of slaked lime lasts for a long time because only a little is needed.
Yield Makes 12 fritters, to serve 2 or 3 as a one-dish meal, or 4 as a light main course
Number Of Ingredients 12
Steps:
- Peel the sweet potato and cut it into flat, skinny sticks about 2 inches long, 1/4 inch wide, and 1/8 inch thick. (Think of them as short lengths of very thick fettuccine.) It is okay if the sticks are not all the same length, or if they come out a little rough looking.
- In a large bowl, dissolve the slaked lime paste in the water. Add the sweet potato sticks and set aside to soak for 4 hours.
- Pour oil to a depth of 1 1/2 inches into a wok or a 5-quart Dutch oven and heat over medium-high heat to 350°F on a deep-frying thermometer. (If you don't have a thermometer, stand a dry bamboo chopstick in the oil; if small bubbles immediately gather on the surface around the chopstick, the oil is ready.) Put a wire rack on a baking sheet and place the baking sheet next to the stove.
- While the oil is heating, make the batter. In a bowl, stir together the all-purpose flour, rice flour, salt, and turmeric. Use a rubber spatula to gradually stir in the water to make a smooth, thick batter. Drain the sweet potato and add to the batter, mixing to coat well. The batter will seem gluey.
- Fry the fritters in batches to avoid crowding them in the pan. Using 2 large metal spoons, scoop up about 1/4 cup of the batter into 1 spoon and flatten it with the back of the second spoon. Arrange 3 shrimp on top, pressing them gently into the batter to ensure they stick. Lower the spoon just to touch the oil, and then use the second spoon to slide the fritter gently into the hot oil. Fry the fritters, turning once, for 5 to 6 minutes, or until they are crisp and golden orange and the potatoes are cooked through. Use a skimmer or slotted spoon to transfer the fritters to the rack to drain.
- Before serving, use kitchen scissors to cut the fritters into quarters, making sure that each piece gets some shrimp. Serve with the vegetable garnish plate and dipping sauce. To eat, tear a piece of lettuce roughly the size of your palm, top with a piece of fritter, add cucumber slices and a few herb leaves, shape into a bundle, and dunk into the dipping sauce.
- Vietnamese cooks often use shell-on small shrimp in foods because the shells contribute fragrance and crunch. Small white shrimp (61 to 70 shrimp per pound), which have very thin shells, are ideal. You will find them at Asian and Latin markets. For the crepe recipes on pages 274 and 277, you may peel the shrimp first if you don't like the idea of chewing on the shells. Be sure to leave the shells on when making these sweet potato fritters, however, or they will dry out. For details on trimming the feet and tail, see page 115.
SHRIMP AND SWEET CORN MAQUE CHOUX
A spicy Southern dish, Shrimp & Sweet Corn Maque Choux is satisfying and ready in under 30 minutes. This is my recreation of the Emeril Lagasse dish we had his restaurant, NOLA, in New Orleans. Fresh vegetables are the key to this recipe, which cook quickly and retain their bright, crisp flavors.
