Steps:
- Bring a 6- to 8-quart pot of salted water to a boil.
- Meanwhile, heat oil in a 12-inch heavy skillet over moderately high heat until hot but not smoking, then sauté shrimp, turning over once, until just cooked through, about 2 minutes, and transfer with a slotted spoon to a large bowl.
- Add garlic to oil remaining in skillet along with red pepper flakes, wine, salt, and pepper and cook over high heat, stirring occasionally, 1 minute. Add butter to skillet, stirring until melted, and stir in shrimp. Remove skillet from heat.
- Cook pasta in boiling water until just tender, about 3 minutes.
- Reserve 1 cup pasta-cooking water, then drain pasta in a colander.
- Toss pasta well with shrimp mixture and parsley in large bowl, adding some of reserved cooking water if necessary to keep moist.

- Make the breadcrumbs: In a large stainless-steel skillet, heat the butter over medium heat until melted and slightly browned but not burned. Add the breadcrumbs. Using a wooden spoon, stir the breadcrumbs to coat with the brown butter and toast until golden brown, 2 to 3 minutes. Remove from the heat. Stir in the chopped chives and oregano and the lemon zest. Season with salt and pepper to taste, pour into a small bowl and set aside.
- Make the pasta: Bring a large pot of generously salted water to a boil. Wipe out the skillet, add the olive oil and heat over high heat until shimmering. Season the shrimp all over with salt and pepper. Working in two batches, add the shrimp to the pan in one layer and cook for 1 minute. Turn and cook 1 more minute. Using a slotted spoon, transfer the shrimp to a large bowl.
- Add the garlic and shallot to the pan and cook for 1 minute. Add a touch more oil if the pan is dry. Add the wine, lemon juice, red pepper flakes and dried oregano and simmer for 3 minutes. Whisk in the butter piece by piece, thoroughly incorporating each piece before adding the next. Taste and season with additional salt and pepper as needed. Add the shrimp back to the pan and simmer until completely cooked through, about 2 minutes. Stir in the parsley. Remove the skillet from the heat.
- Meanwhile, add the pasta to the boiling water and cook until just tender, about 10 minutes. Reserve 1 cup of the cooking water and drain the pasta in a colander. Add to the skillet with the shrimp, add the parsley and toss, adding some of the cooking water if necessary to keep it moist. Transfer to bowls and top with some of the herbed breadcrumbs.

- Bring a large pot of lightly salted water to a boil. Cook angel hair pasta in the boiling water, stirring occasionally, until tender yet firm to the bite, 4 to 5 minutes. Drain and set aside.
- Set an oven rack about 6 inches from the heat source and preheat the oven's broiler.
- Heat 1/4 cup butter over medium heat in a large, deep skillet. Add garlic; cook and stir until fragrant. Add shrimp, white wine, and lemon juice; continue to cook and stir until shrimp is bright pink on the outside and the meat is opaque, about 5 minutes. Stir in red pepper flakes until well combined. Remove from heat and set aside.
- Place remaining 1/4 cup butter, bread crumbs, 1/2 the Parmesan cheese, and parsley in a bowl. Stir until well combined. Set aside.

- Bring a large pot of salted water to a boil; cook linguine in boiling water until nearly tender, 6 to 8 minutes. Drain.
- Melt 2 tablespoons butter with 2 tablespoons olive oil in a large skillet over medium heat. Cook and stir shallots, garlic, and red pepper flakes in the hot butter and oil until shallots are translucent, 3 to 4 minutes. I love shrimp scampi, but I wanted a quick way to make it last night. I figured instead of standing over the stove, I would just put all the ingredients into a baking dish and then serve it over pasta. Everyone was very happy!

- 1. Heat oven to 350. Cook pasta as directed and drain. Place in lg bowl, add a little olive oil, salt and pepper, if you wish.
- 2. In a 2-quart baking dish, add butter, broth or wine, lemon juice, garlic, parsley, salt and pepper. Place baking dish in oven until butter is melted. Make sure the tails are off the shrimp and if they're not deveined, do so.
- 3. Place shrimp in baking dish and spoon the butter mix over shrimp. Sprinkle bread crumbs evenly over shrimp to cover. Bake 15 mins to give shrimp time to fully cook. Serve over pasta. And of course, spoon all the extra "juice" from the baking dish over the shrimp and pasta. Sprinkle w/ chopped parsley. Goes great w/ some garlic bread to sop up any left over liquid!

This recipe was obtained from shrimp.com. My son wanted *something different* for new years eve dinner, and I yelled downstairs to him to find something with shrimp, as I had a bunch of shrimp leftover in the freezer from Christmas. The aroma of all that garlic while cooking made our mouths water! Very tasty meal and not a complicated recipe. Our guests raved about it. We doubled the recipe and served 4, however the portions were very generous, I'm sure I could have served 6 on the doubled recipe.

- Melt butter with the olive oil in a sauté pan.
- When the mixture is hot, add the garlic, white pepper, red pepper flakes, oregano, and cayenne pepper, making sure to stir well.
- When garlic looks cooked but not brown (about 3 minutes), add the Shrimp.
- Toss the Shrimp about in the pan, coating them with the spiced oil.
- Add the lemon juice and keep tossing over the heat.
- Quickly add the parsley, bread crumbs, and Parmesan.
- Toss to coat completely.
- The Shrimp should now be bright pink and cooked through.
- Place the pan under the broiler until cheese looks melted (1- 2 minutes).
- Taste and adjust seasoning if necessary.
