I grew up with this gravy! Everyone has heard of sausage gravy. Well, it don't compare to this! After frying your bacon for breakfast, use the bacon dripping to make true Kentucky biscuit gravy. Fattening? Oh yeah, you better believe it! Worth it? Yes! Pour over biscuits and serve with crispy bacon and eggs in any style.

¼ cup bacon drippings
¼ cup all-purpose flour
1 teaspoon salt, or to taste
1 teaspoon ground black pepper, or to taste
4 cups milk, divided

Steps:

  • Heat bacon drippings in a skillet over medium heat; whisk flour into drippings until smooth. Reduce heat to low and cook the flour mixture until it turns a caramel brown color, stirring constantly, about 15 minutes. Be careful, the roux burns easily. Stir in salt and black pepper.
  • Whisk 1/2 cup milk into the roux until thoroughly blended. Continue whisking milk into the gravy, 1/2 cup at a time, whisking in each amount of milk completely before adding more. Bring gravy to a simmer and whisk constantly until thick, smooth, and bubbling.

2 cups milk
2 Tablespoons flour
1/2 teaspoon ground black pepper
3/4 teaspoon salt
6 pieces bacon (, cooked until crisp (RESERVE 2 Tablespoons bacon grease in skillet))
1-2 Tablespoons cold butter
8 warm biscuits ((pre-cooked, or bake them while cooking bacon))

Steps:

  • Cook bacon in large skillet until crispy. Remove cooked bacon to paper towels to absorb grease. When cool, crumble bacon into small pieces. Set aside.
  • Do NOT clean skillet. Leave 2 Tablespoons bacon grease in skillet. Discard the rest.
  • In separate bowl or container, whisk together milk, flour, salt and pepper, until lump-free. Pour the milk/flour mixture into skillet with remaining bacon grease. Add crumbled bacon pieces. Heat mixture on medium (whisking/stirring constantly) until it comes to a boil; reduce heat a bit, and continue cooking and stirring, until gravy has thickened (5-6 minutes). Give it a taste test.
  • Add additional salt and pepper, to taste (I ALWAYS add more). Once gravy has thickened, add 1-2 Tablespoons cold butter. Stir until butter is melted, incorporated into gravy, and mixture is heated through.
  • Slice warm biscuits in half horizontally. Place biscuit halves onto serving plate. Spoon hot gravy over each half. Serve and enjoy!

2 tablespoons bacon grease
2 tablespoons flour
2 cups milk
salt and pepper

Steps:

  • Preheat a large skillet to medium-hi. Place 6 slices of bacon in the skillet and cook until just under crispy.
  • Remove bacon from skillet and drain; set aside. Discard all but 2 tablespoons of the bacon grease.
  • Add flour to grease, and whisk together. Cook for about a minute without burning the flour.
  • Add milk; whisk together.
  • Heat until bubbling. Simmer for 5-10 minutes, until sauce starts to thicken.
  • Meanwhile, crumble bacon. Add salt and pepper (to taste), and bacon to gravy. Allow to simmer until desired consistency.

Steps:

  • Place diced bacon into a large sauté pan, then turn the stove to medium/medium-high heat.
  • Cook until crispy, then remove and set aside onto a paper towel lined plate.
  • Remove grease, but reserve 1/4 cup.
  • Carefully pour reserved bacon grease back into the hot sauté pan.

My family enjoys sausage gravy over biscuits from time to time, but not too long ago I decided to try it with bacon and it was a hit! I serve mine over toasted low carb bread or over cooked, semi-mashed cauliflower and either way, it's very good! For my non-low carb eaters, I serve it over biscuits and there are never any leftovers!

12 ounces bacon (usually 12 slices)
1/4 cup bacon grease
1/4 cup flour
1 1/4 cups heavy whipping cream
3/4 cup water

Steps:

  • In a heavy fry pan cook the bacon over med-high heat until done. Remove the bacon to a plate to cool and carefully (it's hot!) remove all, but 1/4 cup of the bacon grease from the pan (reserve the extra for another use). Dice up bacon.
  • Turn the heat under the pan to med-high and whisk the flour into the bacon grease that is in the pan. Continue to stir, allowing the roux to turn light golden brown and to froth.
  • Turn the heat down to medium and add the cream and water to the pan while continuing to stir. The gravy will thicken as it continues to cook. Once it is as thick as you would like, return the cooked, diced bacon to the pan, stirring to incorporate in the gravy. Salt and pepper to taste. Remove from the heat and serve.

1 packages bacon
0.5 cups flour
56 cups milk
1 units salt
1 units butter biscuits
3 cups flour
1 cups milk
1 teaspoons salt
1.5 teaspoons baking powder
1 sticks butter

Steps:

  • Preheat oven to 350. Using a regular sized skillet, first fry bacon in skillet. Crumble bacon in bowl and set aside, but do not drain the grease - keep grease on low heat while making biscuits.
  • Mix all ingredients for biscuits in bowl until mostly dense dough forms and slightly wet. If dough is dry, add milk sparingly.
  • Grease baking sheet or I like to use a baking stone. Pull apart small balls of dough and drop on sheet - makes 9 biscuits. Bake until tops are slightly brown and middles are done.
  • Depending on how much grease is in skillet you can pour some out. Using a whisk or wooden spoon, I like to have about 3-4 Tbsp. of grease in skillet, sprinkle flour in slowly and keep stirring until medium consistency mixture forms.
  • It's important to keep stirring so no lumps form. You want this mixture to be smooth. While still stirring, I take a gallon of milk and pour until my skillet is 3/4 the way full (approx. 5-7 cups).
  • Add crumbled bacon, salt & pepper, and bring to slow boil - constantly stirring. When gravy thickens to your likeness, reduce heat and break open a biscuit and serve.
