1/2 cup (1 stick) salted butter
4 cloves garlic, finely chopped
4 ears corn, husked and cleaned
2 cups arugula, chopped
1/2 cup lightly chopped fresh cilantro
1/2 cup olive oil
1/2 cup lightly chopped fresh parsley
2 tablespoons chopped fresh tarragon
1 avocado, pitted and diced
One 14-ounce can black-eyed peas, drained and rinsed
1 jalapeno, diced
1 lime, juiced
1/2 red onion, diced
1 pound large shrimp, peeled and deveined, tails left on (about 16 shrimp)
1 pound large shrimp, peeled and deveined, tails left on (about 16 shrimp)
1 teaspoon paprika
Kosher salt and freshly ground black pepper

Steps:

  • Preheat a grill or grill pan to medium-high heat. In a small saucepan set over medium heat, melt the butter and garlic together. Brush the corn with the butter mixture and reserve the remaining butter for a later use. Grill the corn until slightly charred and cooked through, about 3 minutes per side. Remove from the heat, then cut the kernels from the cobs and place in a large bowl. Stir in the arugula, cilantro, oil, parsley, tarragon, avocados, black-eyed peas, jalapenos, lime juice and onions.
  • Thread the shrimp onto the skewers, 4 per skewer, and brush with the reserved garlic butter. Sprinkle the shrimp with the paprika and some salt and pepper and then grill until pink and cooked through, about 3 minutes per side.
  • Season the salad with salt and pepper, then transfer to a serving plate and place the shrimp skewers on top of the salad to serve.

0.5 teaspoon kosher salt
0.25 teaspoon cayenne pepper
2 tablespoon plus 1 teaspoon olive oil
1 pound uncooked large shrimp in shells, peeled and deveined
2 avocados, halved, seeded, peeled, and sliced
1 large tomato, cut into chunks
0.5 sweet onion (Walla Wall or Vidalia), thinly sliced (1 cup)
0.5 cup packed fresh cilantro

Steps:

  • For Lime Dressing, remove 1 tsp. zest from lime; juice to get 3 tablespoons In a small bowl combine zest, juice, cayenne, and 1/4 teaspoon of the kosher salt. Slowly whisk in 2 tablespoons of the olive oil until combined.
  • In a medium bowl toss shrimp with the remaining 1 teaspoon oil and the remaining 1/4 teaspoon kosher salt. Thread shrimp onto skewers. Grill shrimp on the greased rack of a covered grill directly over medium heat 3 to 4 minutes or until opaque, turning once halfway through grilling.
  • On a large platter arrange shrimp, avocados, tomato, and onion. Drizzle with dressing and top with cilantro.

1/3 cup KRAFT Light Mayo Reduced Fat Mayonnaise
2 Tbsp. finely chopped cilantro
1 tsp. each: grated lime zest and lime juice
1/4 tsp. garlic powder
1 lb. medium shrimp, cleaned, cooked and cut in half lengthwise
1 medium seedless orange, peeled, sectioned and chopped
1 bag (5 oz.) baby spinach leaves (about 5 cups)
20 unsalted tops saltine crackers

5 tablespoons rice vinegar, divided
2 tablespoons chili-garlic sauce

1 tablespoon lime peel, grated
1/4 cup lime juice, freshly squeezed
1/2 teaspoon paprika
1/2 teaspoon ground cumin
2 garlic cloves, minced
1 dash salt
8 cups fresh spinach leaves
1 cup mango, chopped and peeled
1 cup radish, julienne cut
1/4 cup avocado, peeled and diced
1/2 cup green onion, thinly sliced
2 tablespoons sunflower seeds

Steps:

  • Combine shrimp, 2 T rice vinegar, and chili garlic sauce in a large bowl; toss well. Cover and chill 1 hour.
  • Combine remaining rice vinegar, oil, and next 6 ingredients (through salt)in a small bowl, stirring with whisk.

2 -3 teaspoons cajun seasoning
2 tablespoons olive oil
1 teaspoon minced garlic
1/4 teaspoon crushed red pepper flakes or 1/8 teaspoon cayenne pepper
kernels from 6 ear of corn (about 3 cups)
1/2 pint cherry tomatoes, halved
1 roasted red pepper, cored and diced (optional)

Steps:
