PAN GRILLED SHRIMP WITH SUMAC SAUCE

Pan Grilled Shrimp with Sumac Sauce image

Provided by Damaris Phillips

Categories     main-dish

Time 20m

Yield 4 to 6 servings

Number Of Ingredients 8

1 1/2 pounds shrimp (size 16 to 20), peeled and deveined
Salt and pepper
2 tablespoons coconut oil, plus more
3 stalks spring onions or scallions, green tops thinly sliced and bottom white half sliced in half lengthwise
4 ounces chicken or seafood stock
4 tablespoons (1/2 stick) cold unsalted butter
2 teaspoons sumac
1/8 teaspoon red pepper flakes

Steps:

  • Sprinkle the shrimp with salt and pepper. Place a grill pan over medium heat and heat the oil. When the oil is hot, par cook the shrimp by placing them in a single layer across the grill slats and cook for 1 1/2 minutes. Flip and cook for 30 to 45 seconds. The shrimp will start to turn pinkish white. Take them out of the pan before the tails curls. Place them aside and cook the rest. Add more coconut oil as needed.
  • In the same pan, add a little more coconut oil and grill the whites of the spring onions until golden brown on both sides, 1 to 2 minutes total. Remove from the pan and allow to cool prior to cutting into bite-size pieces. Deglaze the pan by adding the stock and stirring to pick up any browned bits in the pan. Whisk in the butter. Once completely melted, add the sumac and red pepper flakes, and simmer until it reduces by a third, about 3 minutes. Add the shrimp back into the pan along with the sliced spring onion greens and the grilled spring onion pieces. Toss to coat and allow the shrimp to warm through, but do not overcook!

Cook for 1 minute and add wine to pan. Simmer another 30 seconds and, using a slotted spoon, remove the shrimp from the pan and put on a plate. When the shrimp are cool enough to handle remove the heads and peel off the shells.
  • Add the crushed tomato and the olive paste to the pan and let it simmer for a few minutes. Return the shrimp to the pan, being careful not to overcook and toss in the sauce. Finally sprinkle the crumbled feta over the contents of the pan and melt it into the sauce by pushing it down with the back of a spoon.

BACON WRAPPED WATER CHESTNUTS (RUMAKI)

Bacon Wrapped Water Chestnuts (Rumaki) image

This recipe is slightly different from the ones already posted here on 'Zaar. It was given to me by a very dear friend who is no longer with us. Everytime I make it, I think of her. Thanks, Diane. NOTE: The size can for the water chestnuts is estimated (I don't have any in my cupboard today).

Provided by Sweet PQ

Categories     < 60 Mins

Time 1h

Yield 30-40 pieces

Number Of Ingredients 5

1 (5 ounce) can water chestnuts, drained (estimated can size)
1 lb lean bacon, cut in half (for easier wrapping)
1 cup brown sugar
1/2 cup ketchup
1/8 cup soy sauce

Steps:

  • Preheat oven to 350 degrees Fahrenheit.
  • If desired, cut larger water chestnuts in half for easier eating and more pieces.
  • Soak water chestnuts in soy sauce for 15 minutes, stirring a few times to make sure they are fully coated.
  • Remove water chestnuts from soy sauce.
  • Wrap 1/2 strip of bacon around each; secure with toothpicks.
  • Reserve soy sauce.
  • Place toothpick side "up" in a 9" x 13" glass baking dish.
  • Bake at 350 degrees Fahrenheit for 20 to 30 minutes or until crispy.
  • Remove from oven; drain bacon fat.
  • Meanwhile, mix reserved soy sauce, ketchup and brown sugar in a bowl.
  • Pour the mixture over the chestnuts to coat them evenly.
  • Bake an additional 20 to 30 minutes (again checking for crispness of bacon).
  • Serve hot, with or without seafood sauce.

  • Hikari Shrimp Cuisine. Hikari is a long-lived company known for its excellent, delicious fish foods in the aquarium hobby, and their Shrimp Cuisine is no different.
  • Xtreme Shrimpee Sinking Sticks. While most shrimp foods dissolve quickly into tiny particles to make sure the babies can get a bite, all the excess nutrients floating around in the aquarium can lead to cloudiness and dangerous water quality issues if you’re not careful.
  • Sera Shrimp Natural Sinking Granules. In the aquarium hobby, we often try to simulate an aquatic animal’s original environment and diet as closely as possible.
  • Fluval Bug Bites Shrimp Formula. The proteins in shrimp and fish food usually come from fish and crustaceans, but don’t forget that insects are also a naturally occurring part of a shrimp’s diet.
  • Repashy Gel Food. As tiny scavengers with tiny stomachs, shrimp prefer to constantly graze all throughout the day. That’s why Repashy gel food makes it onto our list.
  • Zoo Med Nano Banquet Food Blocks. Vacation food blocks are usually thought of as a specialty fish food you only feed if you’re going out of town for a while and don’t want to hire a pet sitter.
  • Vegetables. Canned or blanched vegetables are a readily available food that helps increase the plant content in your shrimp’s diet. One of their favorites is canned green beans because of the nutritious content, soft texture, and ability to sink immediately.
